1 whole wheat English muffin (wholemeal specified)
2 teaspoons tomato paste (no added salt or tomato sauce salt-reduced)
2 pineapple (slices drained and patted dry)
1 slice cheddar cheese (30% fat-reduced cut into strips)

Steps:

  • Preheat grill/broiler to medium and put the muffin halves cut side down on grill tray and cook for 3 to 4 minutes or until lightly toasted and then remove from grill and turn over muffin halves and then spread with the tomato sauce.
  • Top muffin halves with pineapple slice and cheese and then return to grill/broiler and cook for 4-5 minutes or until the cheese has melted and serve.

5 large chicken breast halves
2 tablespoons butter
1 teaspoon salt
1 1/2 cups mayonnaise
1/2 cup sliced green onion
1 teaspoon dill weed
5 English muffins, split and toasted
1 1/2 cups cheddar cheese, shredded

Steps:

  • Drain pineapple.
  • pound chicken flat.
  • Saute chicken in butter until golden.
  • Season.
  • Combine mayo,onion and dill weed.
  • Spread 1/2 mixture over muffins.
  • Place one piece chicken on each half.
  • Top with pineapple.
  • Spread remaining mixture over top.
  • Sprinkle with cheese.
  • Broil about 4 inches from heat 3 to 4 minutes until bubbly and browned.

1/4 cup mayonnaise (just use enough to Hold clams together)
1 pinch garlic salt
10 ounces cracker barrel brick extra sharp white cheddar cheese
1 (9 1/2 ounce) box Triscuit crackers

Steps:

  • Drain minced clams, add mayo -- enough to just bind the clams together. Add a pinch of garlic salt and blend.
  • Spread mixture onto crackers.
  • Slice the cheese in semi thin slices (cracker barrel cheese is the perfect square size of triscuits).
  • Place cheese slice onto each.
  • Place under broiler for just a minute or two until cheese melts.

butter, for spreading on the bread
1 slice ham
1 pineapple ring, drained
1 slice cheese, that melts well
ground paprika (to garnish) (optional)

Steps:

  • You will need a frying pan with a lid.
  • Heat frying pan on medium heat, butter the bread on one side.
  • Put in the pan and butter the side that is up.
  • When browned turn over the slice and put on first: the ham, then pineapple and then the cheese on the toasted side.
  • Lower the heat, cover the pan with a lid and cook for a few minutes or until the cheese has melted.
  • Sprinkle with some paprika powder and serve.

When I got married, my mother-in-law gave me her recipe for pineapple muffins so I could make them for my husband, John. They're his favorites-and now they're mine, too! -Diane Turner, Brunswick, Ohio

1 can (20 ounces) crushed pineapple
3 ounces cream cheese, softened
1 cup sugar
1 large egg
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup sour cream
1/2 cup confectioners' sugar
1-1/2 teaspoons butter, softened

Steps:

  • Preheat oven to 350°. Drain pineapple, reserving 1-2 tablespoons syrup. , In a large bowl, beat cream cheese and sugar until blended. Add egg and vanilla; beat well. In another bowl, whisk flour, baking soda and salt. Add to cream cheese mixture alternately with sour cream, beating well after each addition. Fold in pineapple. , Fill greased or paper-lined muffin cups two-thirds full. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks., In a small bowl, mix confectioners' sugar, butter and enough reserved pineapple syrup to reach a drizzling consistency. Drizzle over warm muffins.

I really like these as a warm snack, or sliced up and served as a buffet or party appetizer. And they're very easy to make. It's such a veratile recipe, too, because you can experiment with a variety of spice and vegetable garnish combinations. The original recipe, as given to me by a friend, called for minced onion. But my husband and I like garlic, so I replaced the onion with minced garlic, which is how I always make these appetizers now.

6 English muffins, split
1 lb ground medium Italian sausage
1 -2 teaspoon minced onions or 1 -2 teaspoon minced garlic
2 teaspoons basil
5 ounces kraft old English cheese

Steps:

  • In a large skillet, cook the sausage thoroughly, until no pink remains. Add the minced onion (or minced garlic) and basil, and mix well. Set the sausage mixture aside.
  • Spread about 3/4 tablespoon of the Old English cheese across the top of each muffin half. Place the muffin halves on an ungreased baking sheet. Spread a large spoonful of the sausage mixture evenly across the top of the cheese layer of each muffin half.
  • Bake the appetizers in a 350 degree oven for about 10 to 15 minutes, or until the English muffins just begin to toast and are heated through.
  • These can be served as a warm snack right out of the oven, or after being cooled completely.
  • OPTIONAL STEP: For added flavor, you can sprinkle the tops of each baked appetizer with chopped green onion or minced olives, mushrooms, or pimiento. Or for a more zesty flavor top each appetizer with a thin red pepper strip.
  • FOR SERVING SIZES: If served whole, the recipe will yield 12 large appetizer snacks. Or you can cut each appetizer in half, which will yield 24 (half circle shape) appetizers. Or you can cut each half-circle piece in half again, which will yield 48 mini wedge-shaped appetizers.

These squares are so awesome! They are not too sweet, and at great cold out of the refrigerator. I wish my mother would have known how to make them when I was a child. LoL! Thank goodness I didn't go a lifetime without them.

1/2 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 egg yolk
1 2/3 cups canned crushed pineapple with juice
1 lb cottage cheese
1 egg yolk
2/3 cup milk
1 teaspoon sugar
1 (1/4 ounce) package dry active yeast
1/4 cup lukewarm water (105 degrees)
4 egg yolks
4 cups flour
1 cup cold butter, cut into small cubes

Steps:

  • Mix 1/2 cup sugar, cornstarch, and salt in a sauce pan.
  • Stir in 1 egg yolk and pineapple.
  • Cook over medium-medium-high heat until think.
  • Set aside to cool completely.
  • In a medium bowl, mix together cottage cheese and 1 egg yolk and set aside.
  • Scald milk
  • Add teaspoon of sugar to milk and set aside to cool to lukewarm.
  • Dissolve yeast in lukewarm water for 1-2 minutes.
  • Add yeast mixture to milk and set sit until lots of little bubbles form on surface.
  • In a large bowl cut together butter and flour until in resembles a course meal.
  • Stir yeast mixture into the flour mixture
  • On a floured surface, roll out 2/3's of the dough to fit the bottom of a 16-10" baking pan.
  • Spread cottage cheese mixture over dough followed by pineapple mixture.
  • Roll out remaining dough and cut into lattice strips.
  • Lay the strips in an over-under pattern across the top of the pineapple mixture to give the lattice effect.
  • Cover and let rise in a moist warm area for 1 hour.
  • Bake in a preheated oven for 35-40 minutes.
