Steps:
- Place racks in the upper and lower thirds of your oven and preheat your oven to 200 degrees F. Line two baking sheets with parchment paper or a silpat mat.
- Wash the apples. With an apple corer, very small cookie cutter, or the round side of a metal piping tip, core the apples (you can also skip this step if you don't mind a few seeds in the chips). With a mandolin (recommended) or a very sharp knife, slice the apples horizontally into 1/8 inch-thick rounds.
- Arrange the apples in a single layer on the prepared baking sheets. Sprinkle with cinnamon. Bake for 1 hour in the upper and lower thirds of the oven. Remove the baking sheets and switch the pans' position on the upper and lower racks. Continue baking for 1 to 1 1/2 additional hours, until a single apple chip removed from the oven is crisp when set out at room temperature for 2 to 3 minutes (to test the apple chips, remove a single apple slice but let the others continue baking). Once you are happy with the crispness (the total time will vary based on the thickness of your slice and the type of apple), turn off the oven and let the apples sit in the oven for 1 hour as it cools down to crisp further (unless you fear you overcooked them, in which case remove the pan immediately and let it sit at room temperature).

CINNAMON APPLE CHIPS
From Rachael Ray Magazine. It is apple season and what a way to save those last few apples for snacks, granola, or anything else you want to use these for. I plan to make a trail mix with them but for storage this will be great. Serving size is cookie tray, hard to figure this out.

OVEN-DRIED CINNAMON-SUGAR APPLE PEEL CHIPS
While making a large pot of applesauce, I chose not to discard the nutrient-rich peels but instead bake them into apple chips. It turned out to be an deliciously successful experiment. These apple chips are lightly sprinkled with cinnamon-sugar and oven-dried on parchment paper. To ensure even drying, it's important to make sure the peels are of equal/uniform thickness. Thicker peels will take longer to dry, and you need them to be completely dry for food safety reasons. For best results, use a counter-mounted spiral apple peeler; or just keep an even hand while peeling your apples. My family enjoyed these crispy treats, and I hope yours does too!

APPLE CHIPS
These yummy cinnamon apple chips will disappear almost as quickly as you make them! They're perfect for healthy snacks and easy to take on the road. The secret is baking at a very low temperature for a long time, which dehydrates the apples.

- Preheat oven to 200°F (93°C). Line two large baking sheets with silicone baking mats. Set aside.
- Wash and thinly slice the apples as shown in the photos above. Spread the apple slices onto the baking pans making 1 single layer. Sprinkle with cinnamon and sugar.
- Bake for 1 hour, flip the apples over, and bake for another 1-1.5 hours. Turn the oven off and keep the apples inside as the oven cools down for 1 hour. This will help them get crunchy. Some apples may just be chewy and only slightly crunchy after 3 hours in the oven. Store apple chips at room temperature in an airtight container for up to 1 week.

- Decide whether or not to core your apples, then slice them thinly with a mandolin slicer. Line two sheet pans with parchment paper, and place the apple slices side by side on the parchment, in a single layer. Make sure not to overlap the apple slices or place them on top of each other, otherwise they won’t crisp up. Sprinkle the apple slices with the cinnamon sugar, and note that if you sprinkle from high above, the cinnamon sugar will disperse more evenly.
- Bake the apple slices for 1 hour, then remove them from the oven and flip them over. The apples will be floppy, but they will crisp up later. Return the apple slices to the oven for another hour, then turn the oven off. Let the apple chips cool completely in the oven, this is when they will crisp up. Once they’ve cooled, enjoy!

- Core the apples if you have an apple corer. If not, go ahead and slice them into thin, even rounds using a sharp knife or mandolin slicer, removing any seeds as you go. If using a knife, try to get them as thin and even as possible. For best results, aim for consistent slices so they bake evenly.
- Place the slices in a bowl and sprinkle with cinnamon. Use 1/2-1 tsp to start, depending on how many apples you used, mix then add more if needed. Use your hands to mix so that each apple slice is coated. If you prefer, you can arrange them on the baking sheet and then sprinkle with cinnamon but I like mixing them in a bowl so they’re thoroughly and evenly coated on both sides. Optionally, you can skip this step and bake them without cinnamon. They’re delicious just like that too!
- Arrange the apple slices in a single layer on a silicone mat or parchment paper-lined baking sheet.
