Put-An-Egg-In-It Ham and Cheese Corn Muffins image

Cooking spray, for greasing
9 large eggs
8 tablespoons unsalted butter, 2 tablespoons soft and 6 tablespoons melted
1/2 small onion, finely chopped
1/4 pound ham, finely chopped (about 2/3 cup)
Kosher salt
2 teaspoons fresh thyme leaves
2 1/4 cups all-purpose flour
3/4 cup cornmeal
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
Coarsely ground black pepper
1 1/2 cups milk
1/3 cup sour cream
1 1/2 cups shredded sharp Cheddar (about 3 ounces)
1/2 cup finely grated Parmesan

Steps:

  • Special Equipment: a jumbo 6-cup muffin tin and jumbo muffin liners
  • Adjust an oven rack to the middle position and preheat the oven to 350 degrees F. Line a jumbo 6-cup muffin tin with jumbo liners and generously grease with cooking spray.
  • Cook the eggs: Put 6 cold eggs in a medium saucepan. Add enough water to cover by about 1 inch. Bring to a boil, cover, remove from the heat and let sit for 4 minutes. Transfer the eggs to a bowl of ice water. Gently crack the eggs so that they fracture all over and let them sit in the water for at least 20 minutes.
  • Gently peel the eggs under cold running water. (Older eggs are easier to peel.)
  • Make the muffin batter: Melt the 2 tablespoons of soft butter in a medium skillet over medium-high heat. Once the butter starts to foam and cook, add the onions and cook, stirring frequently, until golden brown, about 4 minutes. Add the ham and 1/4 teaspoon salt and continue to stir until browned in spots, about 2 minutes. Remove from the heat and stir in the thyme. Cool in the skillet.
  • Combine the flour, cornmeal, sugar, baking powder, baking soda, 1 1/2 teaspoons salt and 1/4 teaspoon pepper in a large bowl.
  • Whisk together the milk, sour cream, 4 tablespoons of the melted butter and the 3 remaining eggs in a separate medium bowl. Fold the egg mixture, onion mixture, Cheddar and Parmesan into the dry ingredients until just combined (don't fret if there are lumps; it means your batter isn't over-mixed).
  • Divide half of the batter evenly among the prepared muffin cups. Stand one egg in each cup, nestling it slightly in the batter. Spoon the remaining batter on top of the eggs, using the back of your spoon to spread the batter to make sure each egg is completely covered.
  • Lightly brush the top of the batter in the cups with the remaining 2 tablespoons of melted butter. Sprinkle with a little salt and pepper. Bake until the muffin tops are golden, 35 to 40 minutes. Let the muffins rest in the hot muffin tin for at least 10 minutes. Remove, cut each muffin in half and serve warm, or transfer to a rack to cool to room temperature, cut and serve.

1 cup cooked and crumbled breakfast sausage
4 eggs
1 tablespoon butter
1 (8 1/2 ounce) package Jiffy corn muffin mix
1 additional egg
1/3 cup milk
1/2 cup shredded cheddar cheese
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 400 degrees and spray a muffin pan well with non-stick spray or line with paper liners.
  • In a bowl, whisk eggs well and season with salt and pepper.
  • In a skillet, melt butter and add eggs. Cook and stir over medium heat until eggs are thickened and no liquid egg remains. Be sure to break up the eggs so they will be distributed through all the muffins.
  • In a large bowl, prepare the corn muffin mix according to the package directions, using the additional egg and the 1/3 cup milk.
  • Gently stir the sausage, scrambled eggs, and cheese into the corn muffin batter.
  • Fill muffin cups 2/3 full.
  • Bake 15 minutes, or until a toothpick inserted in center comes out clean.
  • Let cool in pan 5 minutes before removing.

  • Preheat the oven to 350 degrees F.
  • Line 12 muffin cups with paper liners. In the bowl of an electric mixer fitted with a paddle attachment, mix the flour, sugar, cornmeal, baking powder, and salt. In a separate bowl, combine the milk, melted butter, and eggs. With the mixer on the lowest speed, pour the wet ingredients into the dry ones and stir until they are just blended. Spoon the batter into the paper liners, filling each one to the top. Bake for 30 minutes, until the tops are crisp and a toothpick comes out clean. Cool slightly and remove from the pan.

Steps:

  • Preheat oven to 375°. In a small bowl, combine muffin mix, buttermilk and sour cream just until moistened; fold in cheese and bacon. Spoon into 12 greased muffin cups. Crack an egg into each cup; sprinkle with salt and pepper., Bake until egg whites are completely set and yolks are still soft, 18-22 minutes. Cool 5 minutes before removing from pan., Meanwhile, in a small saucepan, melt butter over medium-low heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Remove from heat. Stir in 1 cup cheese, thyme and 1/8 teaspoon seasoned salt until cheese is melted., Serve muffins with sauce; sprinkle with the remaining cheese and seasoned salt. Serve immediately.

salt and pepper to taste
1 teaspoon minced fresh chives
1 teaspoon grated Parmesan cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Rub the inside of a 6 ounce ramekin with butter. Pour cream into the ramekin, then crack the eggs on top of the cream without breaking the yolks. Use a spoon to position the yolks towards the center of the ramekin, then sprinkle with salt, pepper, chives, and Parmesan cheese.
  • Bake in preheated oven until the whites of the eggs have set and the yolks are still soft, 12 to 15 minutes. Remove from oven, and allow to set for 2 to 3 minutes before serving.

Rich and Buttery Corn Muffins image

Made with plenty of melted butter and sour cream, these golden, lightly sweet corn muffins are moist, rich and delicately crumbly. If you can find coarsely ground cornmeal (as opposed the fine stuff that's on most supermarket shelves), you'll also get deep corn flavor and a pleasantly grainy texture. Serve these warm from the oven, slathered with even more butter, or halved and toasted under the broiler to crisp the surface. They'll even keep for a few days if you store them in the fridge, and freeze perfectly for up to a month.

1 cup/255 grams unsalted butter (2 sticks), melted and cooled, plus more for greasing the pan
2 cups/240 grams coarse or stone-ground cornmeal
1 1/2 cups/190 grams all-purpose flour
2/3 cup/165 grams granulated sugar
1 1/2 tablespoons baking powder
1 teaspoon fine sea salt
1/4 teaspoon baking soda
1 cup/240 milliliters sour cream or whole-milk Greek yogurt
1/2 cup/120 milliliters whole milk
2 large eggs, at room temperature
Demerara sugar, as needed
Softened butter, for serving

Steps:

  • Heat oven to 400 degrees, and generously butter the cups and tops of a muffin tin. (The muffins will overflow, and those crisp edges are delicious.)
  • In a large bowl, whisk together cornmeal, flour, granulated sugar, baking powder, salt and baking soda.
  • In a separate bowl, whisk together melted butter, sour cream, milk and eggs. Fold butter mixture into dry ingredients, then scoop batter into muffin tin (it will be very full). Sprinkle each muffin top with Demerara sugar.
  • Bake until golden on the edges, 18 to 22 minutes. Cool on a wire rack for 10 minutes, then remove from muffin tin and cool to room temperature. Serve with even more butter.

This is a really quick and easy recipe that I got from a Betty Crocker Recipe Card Library. I made it for my family while we were camping at our cabin and everyone loved it.

6 eggs
salt and pepper
1 (8 1/2 ounce) box Jiffy corn muffin mix (or other corn bread or muffin mix)
1 egg
1/3 cup milk

Steps:

  • Heat oven to 400 degrees.
  • Grease 12 muffin cups well and press about 2 tablespoons of hash in 6 muffin cups.
  • Make a deep indentation in center of hash.
  • Break an egg into eash hash cup and sprinkle with salt and pepper.
  • Prepare corn bread mix according to package directions using the egg and 1/3 cup of milk.
  • Fill remaining 6 muffins cups with batter; about 2/3 full.
  • Bake 15 to 20 minutes or until muffins are golden brown and eggs are desired doneness.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 18 muffin cups.
  • Mix flour, sugar, cornmeal, baking powder, and salt together in a large mixing bowl. Add cream-style corn, eggs, applesauce, and 1/2 cup milk to the flour mixture and beat with an electric hand mixer for 1 minute. Pour remaining milk into the batter and beat until just blended. Fill muffin tins 3/4 full of batter.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
