PIMM'S CUP

Number Of Ingredients 10

1 1/2 cups strawberries, hulled and halved
1 cup thinly sliced Persian cucumbers (about 2 cucumbers)
1/2 cup fresh mint leaves
1 lemon, sliced into 1/4-inch rounds, plus 1/2 cup lemon juice
1 lime, sliced into 1/4-inch rounds
1 orange, sliced into 1/4-inch rounds
3 cups dry prosecco (about 1 bottle)
2 cups Pimm's
1 cup Simple Syrup, recipe follows
1 cup sugar

Steps:

  • To a large pitcher, add the strawberries, cucumbers, mint and lemon, lime and orange slices. Pour in the prosecco, Pimm's, Simple Syrup and lemon juice and stir to combine. Let stand at least 30 minutes for the fruit to impart its flavor to the drink.
  • Stir in some ice to chill down the cocktail, then serve in glasses over ice, adding some fruit and cucumber to each glass.
  • Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

mint sprigs, sliced cucumber, sliced orange and strawberries, to serve

Steps:

  • Fill a jug with ice and pour over the Pimm's and lemonade. Give it a good stir then add the mint, cucumber and fruit.

Pimm's Scones : Inspired by a favourite summer cocktail, these decadent scones up the ante of any afternoon tea.

For the filling
175 g strawberry jam
50 ml Pimm's
175 g strawberries, hulled and finely chopped
Small handful mint, leaves picked and finely chopped
For the scones
275 g self-raising flour, plus extra to dust
75 g butter, chilled and cubed
50 g caster sugar
Finely grated zest 1 orange
1 medium egg
100 ml milk, plus extra to brush
To serve
250 g clotted cream

Steps:

  • For the filling, in a small pan over low heat, stir the jam and Pimm's until melted and combined. Increase heat to medium-high and bubble for 5min, or until thick and gloopy. Scrape into a medium bowl and set aside.
  • Preheat oven to 220°C (200°C fan) mark 7 and line a large baking sheet with baking parchment. For the scones, sift the flour and a pinch of salt into a large bowl. Add the butter and rub in using your fingertips until the mixture resembles breadcrumbs. Stir through the sugar and orange zest.
  • In a small jug, whisk the egg and milk, until combined. Make a well in the centre of the dry ingredients and pour in the egg mixture. Using a cutlery knife, gently mix, until the dough comes together. Knead briefly in the bowl to make a soft, but not sticky dough.
  • Lightly flour a worksurface, tip out the dough and divide in 1/2. Shape each portion into a 12cm disc, working it as little as possible. Cut each disc into 6 equal triangles.
  • Arrange the triangles on the lined sheet, spacing slightly apart. Brush the tops with milk and bake for 10min, or until risen and golden. Transfer to wire rack and leave to cool completely.
  • To serve, stir the strawberries and mint into the chilled jam mixture. Split the scones and serve with the clotted cream and strawberry filling.

The last time I had a glass of Pimm's with all the trimmings, was on the lawn at a lovely old Elizabthan Hall, on a beautiful English summer's evening......so, I named my cocktail, Pimm's on the Lawn!! Nothing beats a glass of Pimms on a summer�s day. The British beverage is almost as much a tradition as the cup of tea, and the British down the gin-based drink by the gallon during the summer months. A history of Pimms: Step back to a London oyster bar in the 1840s where owner James Pimm invented the thirst-quencher. Using gin, quinine and a secret mixture of herbs, good old Pimm served up the brew as an aid to digestion, dishing it out in a small tankard and the No. 1 Cup moniker was born. After the Second World War, Pimms extended their range, using a number of other spirits as bases for new cups. Scotch lent its name to No. 2 cup, whilst No. 3 used brandy, No. 4 rum, No. 5 rye and No. 6 vodka. Of all of these, the vodka cup is the only one in production along with the original No. 1 cup, which still reigns supreme in popularity. Cheers!

1 cup Pimm's liqueur
lemonade
1 slice orange, per person
1 slice lemon, per person
1 slice apple, per person
1 slice cucumber, per person
1 sprig of fresh mint
strawberry (optional)

Steps:

  • Half fill a large jug or tall glass with ice cubes.
  • Take one slice of orange, lemon, apple, cucumber per person and one sprig of mint and add to them to the glass or jug. (Add strawberries if you are using them.).
  • Pour two parts lemonade to one part Pimms over the top of the fruit, cucumber and mint, mix and serve.
  • One part is usually 50 mls - to two parts, 100 mls of lemonade.
  • Alternative Pimms Cocktails:.
  • Turbo Pimms No.1.
  • As above but five parts lemonade, two parts Pimms, one part gin.
  • English Passion Pimms No.6.
  • Take a shaker 2/3 full of ice and add 50ml of Pimms No.6, 25ml of Zubrowka vodka, flesh and juice of a passion fruit and a dash of sugar syrup. Shake well and strain into a tumbler full of ice. Garnish with a sprig of mint and two short straws.
  • Maximum Voltage Pimms No.6.
  • Take a shaker 2/3 full of ice, 50ml of Pimms No.6, 25ml of Zubrowka vodka and 25ml of Cointreau. Shake well and strain into a highball full of ice. Fill with soda water and garnish with mint.

This is Common Cup (a name I've made up) because apparently the true traditional pimm's should be topped with champagne. In reality, this is what you're much more likely to find in pubs in the summer.

50 ml Pimm's liqueur (This is the Gin-based fusion of this "fruit cup" liquor. There is also Plymouth Fruit Cup.)
200 ml fizzy lemonade (British lemonade is clear lemon soda. Outside of the UK I've found a french soda called clear limona)
1 -2 lemon slice
1 -2 slice orange
1 -2 slice apple
1 slice cucumber
1 sprig of fresh mint
1 sprig borage (a cucumber flavoured herb. You can use this instead of cucumber)
ice

Steps:

  • Fill a Collins or Highball glass with ice.
  • Add your chosen garnishes. You can use all or a combination of the ones listed. My personal combination is lemon, orange, mint and cucumber (Or lemon, orange, mint and borage).
  • Pour the Pimm's into the glass.
  • Gently pour the fizzy lemonade into the glass by pouring down the inside of the glass while tilting the glass.
  • Stir gently with a swizzle stick if desired and Enjoy!
