For whatever reason, rice pudding is usually not near the top when people list their favorite desserts, but despite that, it's a proven crowd-pleaser, and quite easy to make, especially using this simplified, one-pot method.

½ cup uncooked long-grain white rice
¼ teaspoon kosher salt
1 cup water
¼ cup white sugar
1 ⅓ cups milk
½ teaspoon vanilla extract
⅛ teaspoon ground cinnamon
1 large egg yolk
1 tablespoon cold butter
2 tablespoons dried cherries, chopped

Steps:

  • Place rice, salt, and water into a saucepan. Bring to a boil over medium-high heat. Reduce heat to low, cover, and cook until tender, about 20 minutes. Remove from heat; sprinkle with sugar and pour in milk. Stir with a whisk until until the thin layer of cooked-on starch at the bottom of the pan is cleared and incorporated into the mixture, 2 or 3 minutes.
  • Place pan over medium heat, stirring frequently, until it reaches your desired of level of doneness and creaminess, 8 to 10 minutes. The longer it cooks, the thicker and stickier it will be. Remove from heat. Add vanilla and cinnamon. Very quickly whisk in the egg yolk (to prevent it from cooking). Whisk for about 1 more minute. Add butter and dried cherries; stir thoroughly.
  • Transfer warm pudding to serving dishes. Cool to room temperature. Cover and refrigerate until thoroughly chilled, 3 to 4 hours.

1 ½ cups water
⅓ cup sugar
1 teaspoon cornstarch
¼ teaspoon salt
1 ⅓ cups milk
1 tablespoon butter or margarine
½ teaspoon vanilla extract
2 egg yolks, beaten
1 pinch Cinnamon or blueberries

Steps:

  • Combine rice and water in medium saucepan. Bring to a boil. Reduce heat, cover and simmer 25 minutes, or until rice is very tender and most of water is absorbed.
  • In separate bowl combine sugar, cornstarch and salt.
  • Add milk and sugar mixture to rice. Heat to boiling; boil 1 minute, stirring constantly. Remove from heat.
  • Stir in butter and vanilla.
  • Slowly stir about 1 cup of the hot rice mixture into beaten egg yolks in a bowl.
  • Blend into remaining mixture in saucepan. Cook over medium heat, stirring frequently, just until mixture starts to bubble. Remove from heat.
  • Serve warm or chilled, with the option of adding cinnamon and/or blueberries.

Steps:

  • Combine milk, minute rice, sugar, raisins and salt in a medium saucepan. Bring to a boil, stirring constantly. Reduce heat to medium-low; simmer, uncovered 6 minutes, stirring occasionally.
  • Beat egg and vanilla with wire whisk until well blended. Add a small amount of the hot milk mixture; mix well. Return to saucepan; cook and stir on low heat 1 minute. (do not boil).

Homemade rice pudding is the most comforting dessert recipe. Rice is cooked in a sweet mixture of milk and cream with vanilla soaked raisins. This stove top recipe is easy to make.

1/4 cup raisins
2 tablespoons vanilla extract
2 1/2 cups whole milk
1/2 cup heavy cream
1/2 cup uncooked white rice (short grain works best)
1/4 teaspoon kosher salt
2 eggs
1/4 cup brown sugar
1/4 cup granulated sugar
1/4 teaspoon pumpkin pie spice (or use cinnamon)
soaked raisins with vanilla

Steps:

  • At least one hour prior to making rice pudding, soak the raisins in the vanilla. A longer soak of over 24 hours is optimal.
  • In a medium-sized, heavy-bottomed saucepan, bring the milk, heavy cream, uncooked rice, and salt to a boil over high heat. As soon as it starts to simmer around the edge of the pan, reduce heat to the lowest temperature where you can maintain a simmer, partially covered, until the rice is tender, about 20-25 minutes. Stir frequently to prevent the rice from sticking to the bottom of the pan. Taste the rice to ensure it is done. You want it tender but still firm.
  • In a separate bowl, whisk together eggs and sugar. Add a ladel of the hot milk mixture to the egg mixture, whisking while pouring it in a very slow steady stream. Your goal is to bring the temperature of the egg up without curdling the egg.
  • Continue to add more of the hot milk mixture to the egg mixture, whisking continually, until the egg mixture is warm.
  • Add tempered egg mixture back into the saucepan of rice and milk and stir over low heat for 5 to 10 minutes, until thickened. This rice pudding can go from thin to too thick rather quickly, so don't leave it unattended. Also keep in mind that it will thicken even more as it cools. A temperature of 160°F will ensure the eggs are cooked all the way through.
  • When done, remove from heat and stir in the pumpkin pie spice and soaked raisins.
  • Serve warm or cold.

Steps:

  • Whisk together the egg, sugar, vanilla and cinnamon in a small bowl. Set aside.
  • Add the milk, cream, rice and salt to a medium-sized saucepan and bring to a boil over high heat.
  • Once boiling, reduce the heat to low and simmer until the rice is tender, about 20-25 minutes. Stir frequently to keep the rice from sticking to the bottom of the pan.
  • Slowly add about half a cup of the hot rice mixture to the egg mixture, whisking quickly, to temper the egg mixture.
  • Add the egg mixture to the saucepan with the remaining rice mixture. Stir everything together and continue heating on low heat for about another 5-10 minutes, or until thickened. Don't boil. It will thicken quickly. Keep in mind that the mixture will continue to thicken as it cools, so you don't want it to be too thick before you take it off the heat. A touch soupy still is ok.
  • Remove from heat and serve warm.

3/4 cups/200ml water
3 cups milk/750ml milk
1/4 cup/60g granulated sugar

  • Use a 1 quart pot with cover.
  • Place the rice and water into the pot, bring to a boil then simmer for few minutes, covered, until the rice absorbs the water. 
  • Add milk, butter and salt and cook the rice on low heat, stirring constantly to avoid scorching.
  • When the rice is almost cooked(about 10-15 minutes), add sugar and simmer for another 3-4 minutes.
  • Add vanilla, lemon zest and stir to combine.
  • The best way to know if the rice pudding is cooked is by tasting the grain. You want the rice to be cooked but still "al dente".
  • Remove the pudding from the heat and allow it to cool for 5-10 minutes. The rice will absorb the rest of the liquid and become thicker and creamier.
  • Serve the rice pudding in cups and decorate with cinnamon, pieces of fruit, your favorite jam, dried fruits etc.

An oldie but a goodie, this is one of the best and simplest of all puds. You just need to serve this rice pudding with a blob of jam for sheer comfort food heaven. The little bit of milk powder in the mix is an old trick that makes the pudding especially creamy.

60g/2¼oz pudding rice
600ml/20fl oz full-fat milk
1 tbsp skimmed milk powder
2 tbsp caster sugar
1 thin strip lemon rind
freshly grated nutmeg, to taste
15g/½oz unsalted butter, cut into small cubes
jam, to serve

Steps:

  • Preheat your oven to 150C/300F/Gas 2.
  • Wash the rice and drain in a sieve, then put it into a wide ovenproof dish, at least 1 litre/1¾pint capacity. Pour in the milk. Add the milk powder, caster sugar and lemon rind and stir together. Grate some nutmeg over the top and dot with the butter.
  • Place in the oven and bake for 2-2½ hours, or until the pudding has a golden-brown skin and the rice is tender and creamy (the longer you give it, the more thick and sticky it will become).
  • Serve warm, with a blob of your favourite jam on top.

  • 1. You will need a 1.6-litre (2¾-pint) wide-based ovenproof dish, well greased. Preheat the oven to 160°C/140°C fan/Gas 3. 2. Tip the rice into the dish.   • Combine rice, milk sugar and salt in a medium-size saucepan. Cook over medium heat, stirring constantly until thick and creamy – approximately 15-20 minutes.
  • Add the raisins and stir to incorporate. You can also leave them out or substitute 1/3 cup fresh chopped granny smith apples and 1/3 cup dried cranberries.
  • In a separate container, whisk the egg. Add the half & half to the whisked egg and blend completely. Taking a Tbsp. at a time, add a little of the hot rice mixture to the egg mixture to temper it. Stir quickly. Continue to add the hot liquid to the egg mixture this way until the egg mixture is sufficiently warm – approximately 1/2 cup of the rice mixture.
  • Once tempered, gradually add the egg mixture into the pot of rice, stirring quickly and constantly to ensure it is fully incorporated. Cook for one minute.
