SQUASH CASSEROLE WITH PIMENTO
A delicious side dish with the turkey at Thanksgiving. Very light and spicy. We use Hubbard Squash but any winter squash would work. Easily prepared in advance and baked later. Time does not include cooking and mashing squash.

Steps:
- Preheat oven to 350.
- Melt butter in hot milk and pour over the bread crumbs. Mix well and add squash, onion, pimento and seasonings.
- Beat eggs and add to squash mixture.
- Pour into a greased 2-quart casserole and cover with buttered bread crumbs.
- Bake 20 to 30 minutes.

SPAGHETTI SQUASH CASSEROLE
I love spaghetti squash and am always looking for new ways to use it. This recipe uses low-fat ingredients but could easily be converted to full-fat if you wish. Other spices or herbs can be added to dress it up; this is just the basic recipe.

Steps:
- Preheat oven to 350º.Coat an 8-inch by 8-inch baking dish with cooking spray.
- Cut the squash in half lengthwise, scoop out and discard seeds, place cut-side down on a baking sheet and bake for 25 minutes. ( Or place cut side down on a microwave safe dish, poke holes in peel & nuke until tender ).
- When squash is tender, scoop out the meat with a fork. (you may only need 1 half to get 3 cups, depending on the size of your squash).
- Mix together the squash strands, bell pepper, onion, water chestnuts, pimiento, cheese, salt and pepper.
- Stir in the egg substitute.
- Combine the sour cream and milk & fold into squash mixture.
- Pour into prepared casserole dish. Sprinkle with panko crumbs and paprika and bake for 30-35 minutes.

SQUASH CASSEROLE
Standard Southern treatment for yellow squash - delicious comfort food. It takes one "sleeve" of saltine crackers to make up the 1 1/2 cups of crushed saltines - depending on how finely you crush them and pack them down this amount may vary a bit. The recipe form won't let me put in "one sleeve of saltines", but that is the amount to use. Some people like a lot of pepper in their squash - if you like things less spicy I'd stick with the 1/2 teaspoon amount.

Steps:
- Preheat oven to 350 degrees.
- Place squash & onion in a large pot. Add 1/4 cup water. Cover & cook over medium heat, stirring often. Cook until squash is no longer white and hard in the center of the slices - about 5 to 10 minutes. Drain the squash well.
- When squash is tender, turn into mixing bowl. Mix with butter or olive oil and add salt and pepper.
- Mix in the milk, cheese and the saltines. Add garlic powder and tabasco. Mix well.
- Turn into baking dish greased w/ Pam. Top with bread crumbs.
- Bake @ 350 for 40 minutes.
- Let stand for 5 minutes before serving.
- ***This can also be cooked in the microwave. Place the mixture in a microwave-safe dish with a cover. Cover and bake on high for 10 minutes. Let sit for 5 minutes before serving.***.

- Place squash and onion in a large pot. Add water just to cover. Add 1 teaspoon of salt. Bring to a boil. Reduce heat to medium-low and simmer until squash is soft, about 7 minutes. Drain well.
- In a large bowl, mix together mayonnaise, sour cream, egg, black pepper, and remaining 3/4 teaspoon salt.
- Stir pimentos, squash and onion, and 1/2 the cheddar cheese into mayonnaise mixture and transfer to prepared casserole dish.
