PILAF-STUFFED PORK CHOPS



Pilaf-Stuffed Pork Chops image

A quick homemade gravy adds the finishing touch to these tender pork chops stuffed with rice and colorful vegetables. Serve them with corn on the cob and Key lime pie (shown above right) or complete the meal with applesauce and bakery cookies.

1/2 cup water
1/2 cup uncooked instant rice
1/4 cup shredded carrot
1/4 cup shredded zucchini
1/4 teaspoon onion salt
1/4 teaspoon pepper, divided
2 bone-in pork loin chops (1-1/2 inches thick)
1/8 teaspoon salt
1 tablespoon butter
3/4 cup beef broth
1 tablespoon cornstarch
3 tablespoons cold water
1/4 teaspoon browning sauce, optional

Steps:

  • In a saucepan, bring water to a boil. Add rice. Remove from the heat; cover and let stand for 5 minutes. Fluff with a fork. Stir in the carrot, zucchini, onion salt and 1/8 teaspoon pepper; set aside., Cut a pocket in each pork chop; sprinkle with salt and remaining pepper. In a skillet, brown chops in butter. Cool for 5 minutes. Stuff with pilaf. , Place in an ungreased 11x7-in. baking dish. Pour broth into dish. Cover and bake at 350° for 25-30 minutes or until a thermometer inserted into the meat portion reads 160°, Remove chops and keep warm. Pour cooking juices into a saucepan. Combine cornstarch and cold water until smooth; stir into juices. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in browning sauce if desired. Serve over pork chops.

2-1/4 cups water
1 tablespoon butter
1 package (5.6 ounces) instant chicken-flavored rice and sauce mix
4 bone-in pork loin chops (1 inch thick and 8 ounces each)
1 envelope seasoned coating mix

Steps:

  • In a large saucepan, combine the water, butter and rice with contents of sauce mix. Bring to a boil; stir. Reduce heat; cover and simmer for 4 minutes or until the rice is almost tender. Let stand for 5 minutes., Meanwhile, moisten pork chops with water; dip in coating mix. Cut a pocket in each chop; fill with rice mixture. Place in an ungreased 13-in. x 9-in. baking dish. Spoon remaining rice around chops. Bake, uncovered, at 425° for 25-30 minutes or until a thermometer reads 145°. Let meat stand for 5 minutes before serving.

This is a fast and easy way to make stuffed pork chops. Of course, my mom would make homemade stuffing etc. but who has the time? This is a quick and easy weeknight meal. Great with green beans and applesauce!

Number Of Ingredients 7

6 pork chops (boneless loin or sirloin chops work best)
1 (6 ounce) box chicken stove top stuffing mix or 1 (6 ounce) box pork stuffing mix
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk
1 (4 ounce) can sliced mushrooms
1 tablespoon minced onion
1/2 teaspoon Kitchen Bouquet (for color)

Steps:

  • Preheat the oven to 350 degrees.
  • Prepare stuffing as recommended on the box.
  • Spray 9x13 pan with non-stick cooking spray.
  • Place pork chops in the pan.
  • Spoon heaping stuffing mixture onto each pork chop.
  • Cover with foil and bake at 350 degres for 20 minutes.
  • While pork chops are baking, heat the cream of mushroom soup, milk, minced onions, mushrooms and Kitchen Bouquet together on the stovetop.
  • Once heated, pour over the stuffed pork chops and bake uncovered fro another 10 minutes.
  • Serve with applesauce and enjoy!

1 (6 1/2 ounce) box rice pilaf mix
3 -6 pork chops
1 teaspoon oil
salt
pepper

Steps:

  • Season pork chops with salt and pepper.
  • Brown both sides of pork chops, no oil needed with a non stick skillet.
  • Using a 9"x13" pan, mix together rice pilaf mix and the ingredients needed to make the rice pilaf, usually water and margarine.
  • I use hot water so that the margarine melts.
  • Spread rice pilaf evenly on the bottom of the pan, lay pork chops on top of rice.
  • Cover tightly with foil and bake at 350°F for 1 hour.
  • Bake for 1 hour and 15 minutes for really thick pork chops.
  • Experiment with different rice pilaf mixes, but I like the chicken versions best.

Scrape the mixture into a 9-inch square baking dish, cover with foil and bake for about 15 minutes, or until the quinoa and wheat berries are tender. Remove the pilaf from the oven and keep covered.
  • Heat the olive oil in a large skillet. Season the pork chops with salt and pepper and brown them in the skillet over moderately high heat, about 4 minutes per side. Transfer to a plate. Add the dried pears, apricots and cherries to the skillet and cook for 1 minute. Add the port and cook for 1 minute. Add the remaining 1 cup of stock and simmer over moderately high heat until reduced to 1/3 cup, about 5 minutes. Add the pork chops and any accumulated juices and cook over moderate heat, turning the pork a few times, until it is hot and just cooked, about 2 minutes.
  • Uncover the pilaf and fluff it with a fork; season with salt and pepper. Mound the pilaf on plates. Set the pork chops on the pilaf, top with the fruit sauce and serve.
