CHRISTMAS FUDGE COOKIES

Christmas Fudge Cookies image

Have your kids ever told you late in the evening they "have" to bring something for the party the next day? Not to worry, here's a cookie that you already have in the pantry. These are a favorite with the kids class parties. My boys always ask me to make these during the holidays when the class is bringing cookies. Funny, the teachers always ask them if I really made these.

CHOCOLATE FUDGE COOKIES WITH TOFFEE & DRIED CHERRIES

Chocolate Fudge Cookies With Toffee & Dried Cherries image

These cookies have a crispy exterior and a soft and chewy interior. The various flavours and textures (rich dark chocolate, chewy sour cherries, and sweet crisp toffee) combine to produce a deliciously addictive cookie. From Regan Daley's cookbook, "In The Sweet Kitchen: The Definitive Baker's Companion". If you are using cherries, make sure they are plump and soft. If you want smaller cookies, decrease baking time. Dough freezes very well. These are fabulously gooey when warm.

Provided by blucoat

Categories     Drop Cookies

Time 40m

Yield 40 large cookies

Number Of Ingredients 12

2 1/4 cups all-purpose flour
1/2 cup unsweetened dutch cocoa
1 teaspoon baking soda
1/4 teaspoon salt
1 cup unsalted butter, room temperature
1 cup tightly packed dark brown sugar
3/4 cup granulated sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
1 cup plump moist dried sour cherries (optional)
8 ounces bitter chocolate (can use chocolate chips) or 8 ounces semisweet chocolate, chopped into chunks about the size of the cherries (can use chocolate chips)
1 cup english toffee pieces, such as Skor Bits

Steps:

  • Preheat oven to 350°F Line two heavy baking sheets, not non-stick with parchment paper and set aside. Sift flour, cocoa, baking soda and salt together in a bowl and set aside.
  • In a large mixing bowl or the bowl of an electric or stand mixer fitted with the paddle attachment, cream together the butter and both sugars until light in colour and fluffy - about 2 minutes. Add the eggs, one at a time, beating well after each addition and scraping down the sides of the bowl. Beat in the vanilla. Stir in the flour-mixture in 3 additions, blending just until the dry ingredients are moistened. This part is really easier with a wooden spoon since the batter is quite dense. (The dough may be frozen at this point for up to 4 months; wrap securely in plastic wrap, then in a plastic freezer bag; thaw in the refrigerator without removing its wrapping before portioning the cookies and baking.).
  • Drop the batter by heaping tablespoons onto the prepared baking sheets and place them in the centre of the oven, turning half way through baking.
  • Bake the cookies for 15-18 minutes or until barely set in the centre and just firm around the edges. Cool cookies on tray for 3-5 minutes, then transfer to wire rack to cool completely before storing. Store in air tight containers, layered between sheets of parchment or waxed paper for up to 5 days.

PEANUT BUTTER FUDGE COOKIES

Peanut Butter Fudge Cookies image

The Peanut Butter Cookies alone are delicious, but pair them with a fudge filling and the results are perfect. Absolutely Perfect. :) I brought these to a choir fundraiser, and they were gone before the first song was finished! I never wrote down exactly how many this made, so the yield is based on my rather fuzzy recollection - I'll update the next time I make these.

Provided by Lizzymommy

Categories     Drop Cookies

Time 30m

Yield 18 sandwich cookies, 18 serving(s)

Number Of Ingredients 12

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter or 1/2 cup shortening
1/2 cup peanut butter
1 egg
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
12 ounces chocolate chips
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375. Mix sugars, butter, peanut butter and egg. Gradually stir in flour baking soda & powder, and salt.
  • Shape dough in 3/4 inch balls and flatten slightly with a fork if you like the cross hatching pattern. Bake until set but not hard, and golden brown on the bottom, about 10 minutes.
  • If you're going to sandwich them with the chocolate, let them cool entirely before doing so. Match up cookies by size so you've got a more uniform sandwich when you're done.
  • For the filling, mix the chocolate, sweetened condensed milk, and vanilla together, and melt over low heat, or in the microwave. Spoon into a ziploc bag, close the bag, and snip a corner to pipe onto the flat side of a cookie. Top with a second cookie, flat side towards chocolate. Attempt to not devour in one sitting. Fail miserably, die happily. :).

FUDGE COOKIES (AN HEIRLOOM RECIPE FROM MY FAMILY)

Fudge Cookies (An Heirloom Recipe from My Family) image

This recipe brings back so many memories. When I saw that Kathleen's mother used lard in the original recipe, I knew I had to try it (my grandmother used lard in all of her recipes too). These lived up to my expectations! When this was enjoyed in the Test Kitchen the universal comment was "what gives this the crunchy texture?"...

Provided by Kathleen Hagood

Categories     Cookies

Time 40m

Number Of Ingredients 7

4 eggs
2 c granulated sugar
3/4 c shortening like crisco, do not melt it (we used lard when i was a child.)
4 Tbsp hershey's cocoa
1 c flour (all purpose)
1 tsp vanilla
we sometimes added 1/2 to 1 cup of pecans when we had them on hand although it wasn't in grandmother's original recipe

Steps:

  • 1. Preheat oven to 350 degrees. Pour all ingredients into a bowl and mix by hand (all at once). (In other words, do not cream sugar and shortening first.)
  • 2. Place in greased and floured 13 X 9 metal pan, and bake in 350 degree preheated oven for about 30 minutes.
  • 3. Note: I remember when we made these with lard that the tops of the fudge cookies would crackle much like the ground does after a heavy rain and pieces of the ground crack and turn loose from the rest of the ground. I loved these crackly, crunchy flakes. It doesn't do quite the same thing (to the same extent) with Crisco, but they are still good. Now, that everyone worries about the type of fat consumed, lard is long gone from many people's pantries. I think if we worked physically like my maternal Grannie did, we could probably still consume lard (and her favorite--bacon grease). She lived to 99, had no cholestrol or blood pressure issues, and was happy.
