PIGGY PUDDING DESSERT CAKE
Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, combine butter or margarine, flour and chopped walnuts. Mix, then pat into bottom of 9x13 " pan.
- Bake at 375 degrees F (190 degrees C) for 20 minutes. Allow to cool.
- Beat softened cream cheese with confectioners sugar until smooth. Fold in 1/2 of the whipped topping. Spread over cooled crust.
- In a medium bowl, combine chocolate pudding mix with 3 cups milk. Mix well and spread over cream cheese mixture.
- Spread remaining 1/2 container of whipped topping over pudding. Sprinkle with 1/2 cup chopped nuts.

PIGGY PIE SPICY PORK EMPANADAS
Empanada basically means baked in pastry. These Mexican pastries are a great side, appetizer, snack or main course. There are also sweet fruit filled ones that are a terrific dessert. Empanadas range in size from empanaditas, which are ravioli sized, to empanada gallegas, which are almost pie sized.

Steps:
- For filling: Heat oil in large nonstick pan over medium-high heat. Add pork, serrano, chili powder, cumin, chipotle powder, cinnamon, and allspice to the skillet and stir for 3 minutes. Add raisins and lime juice, bring to a boil and cook until almost all liquid evaporates, about 1 minute. Remove from heat. Mix in the almonds and sour cream. Season with salt and pepper. Cool.
- For dough: Butter 2 large baking sheets. Mix flour, masa harina, baking powder, and salt in large bowl. Stir in melted butter. Whisk water and 1 egg in a small bowl to blend. Add to flour mixture; knead in bowl until smooth pliable dough forms, about 2 minutes. Working with half of dough at a time, roll out on floured surface to 1/8-inch thickness. Using a 3-inch diameter biscuit cutter, cut out rounds. Reroll scraps and cut out additional rounds for a total of 12 rounds per dough half. Whisk remaining egg in a small bowl to blend. Place 1 tablespoon filling in center of each dough round. Lightly brush edges with egg. Fold dough over, pressing edges with fork to seal. Place on prepared baking sheets. Cover with plastic wrap; chill. Note: dough can be made 1 day ahead.
- Preheat oven to 375 degrees F. Brush empanadas with beaten egg. Bake until light golden brown, about 25 minutes.

Steps:
- Preheat oven to 400F degrees.
- Par-boil the leeks for about 5 minutes.
- Drain well.
- Fill a pie dish with the leeks and pork and pour in the milk.
- Cover with foil and bake for about 1 hour (don't worry if it looks curdled).
- Stir the cream into the eggs, and then pour into the dish.
- Allow the pie to cool.
- Increase oven heat to 425F degrees.
- Roll out the pastry on a lightly floured surface to 2 inches wider than the dish.
- Cut a 1-inch strip from the outer edge and use this to line the dampened rim of the pie dish.
- Dampen the pastry rim with water, cover with the pastry lid and seal the edges well.
- Make a hole in the center of the pie and use pastry trimmings to decorate.
- Bake for about 25-30 minutes, until risen and golden brown.

PIGGY PIE
This recipe is inspired by, but not nearly as good as, a dish served at Grandpa's BBQ in Cabot Arkansas. They have the BEST bbq sauce in the world that cannot be imitated! Anyway, to the recipe... Salad ingredients can be substituted with coleslaw. The coleslaw I bought was super nasty so I decided to throw together my own.

- 1. Boil the chicken breast in water combined with the ranch seasoning until fully cooked and until tender (to your preference).
- 2. Meanwhile, chop the lettuce, carrots and tomato. Pour in the Creamy Caesar dressing and mix.
- 3. In a separate bowl (or pan) heat up the baked beans.
- 4. Shred the cooked chicken in a mixing bowl and mix in the BBQ sauce.
- 5. Layer your serving bowl like so: Corn chips Baked beans Chicken Salad Enjoy!
PIGGIES (SUGAR AND CINNAMON PIE DOUGH COOKIES)
Crumbly sugar and cinnamon cookies that you can make as fast as they disappear. My father told me about these cookies that his mother used to make. When she made a pie, she would take the excess dough and make these simple cookies. You don't have to make a pie first, all you need is pie dough. My father loves when I make them for him, and I think you will be hard-pressed to find someone who doesn't. My father said she called them Piggies. That's what I call them.

- Preheat oven to 450 degrees F (230 degrees C). Spray a baking sheet with cooking spray, or line with parchment paper.
- Mix flour and salt together in a bowl, and use a pastry cutter to cut in 1/3 cup of shortening until the mixture forms pea-size balls. With a fork, form a small well in the center of the mixture, and pour in water, a couple of teaspoons at a time, and stir with the fork to mix in the water and form a dough. Incorporate each addition of water before adding the next, until about 3/4 of the flour mixture has formed a stiff dough. Work a little more water in with your hands, and shape the dough into a ball.
- Working on a well-floured work surface with a floured rolling pin, roll the dough out into a rectangle about 12 by 16 inches, and about 1/8-inch thick. Spread 1 tablespoon of shortening over the surface of the dough with a soft spatula, and sprinkle sugar all over the dough square. Sprinkle the dough with cinnamon. Pick up a long edge of dough, and tightly roll the dough into a log shape. With a sharp knife, slice the log into 3/4-inch thick slices. Place the slices onto the prepared baking sheet.
- Bake in the preheated oven until the cookies are lightly browned and sizzling on the bottom, about 8 minutes. Cool on paper towels; freeze extras for later.

PIGGY BANK PIE
Chef Buckley's take on a pulled pork "shepherd's pie" with horseradish mashed potatoes. This is a hearty meal that is great for using up leftover pulled pork and won't break the bank in the process. This recipe also freezes well.

- Get your potatoes boiling on the stove, add a pinch of salt, and reduce them to low heat until you can easily pierce them with a fork (about 20 mins.).
- While you've got those babies going, get out a large skillet and heat over medium heat. Throw in the tbsp of olive oil (or whatever cooking oil you have handy) and coat the bottom of the skillet.
- Add in your garlic and onions and sauté until the onions are translucent.
- Then add in your peas, carrots, and celery. Sauté about 6 minutes.
- Add in your cooked pork, tomato paste, beer or broth, worcestershire sauce and season with salt and pepper until it tastes just right. Let that go for a couple of minutes to get the liquids to reduce down.
- Next, pour the veggie/pork mixture into a square baking dish. That can just chill out on the counter for the moment while you make the horseradish mashed potatoes to go on top.
- Drain your potatoes and add in butter, cream, horseradish, salt and pepper.
- Now mash away. Any way you want to mash. Or rice. Or food process.
- While the potatoes are still hot, spread over the veggie/pork mixture.
- Sprinkle with cheddar cheese.
- At this point you can either:.
- Broil immediately in the oven for a couple of minutes until the cheese browns.
- Cover and freeze or refridgerate until later, bring to room temp and bake at 375, covered in foil about 30 minutes. Then take off the foil and broil until cheese browns.
- Chow down!
