BAKED PEROGIES
A must at every special occasion in our house. Baba taught mom, mom taught me, and now I share with you! Enjoy!

Steps:
- FOR FILLING:.
- Boil and mash approx 4-5 quarts of mashed potatoes.
- Add while potatoes are still hot 2 tbsp of dill.
- Salt and Pepper to taste.
- Can use warm or cold to fill perogies (obviously slightly cooled is going to be easier on the fingers).
- FOR DOUGH:.
- Dissolve 1 tsp sugar in 1/2 cup lukewarm water.
- Add pkg of yeast and let stand for 10min.
- In large bowl: Blend 1/2 cup sugar and 1/2 cup margarine.
- Add 1 tsp salt, then 3 cups water and 1 tbsp vinegar.
- Add flour until you create a bun dough where it's no longer sticky.
- Let Rise (2hrs) until double in bulk.
- Punch Down.
- Cut off a size you would use to make a small dinner bun (1x2-inch size).
- Shape into a square.
- Put about 1 tbsp of filling in middle.
- Fold over.
- Pinch and tuck edge under.
- Place on greased baking sheet.
- DO NOT LET RISE.
- While baking one sheet, shape other perogies.
- Bake at 375°F (or 190°C) for 20-25 minutes, until lightly browned.
- YOU CAN FREEZE BAKED PEROGIES BEFORE ADDING SAUCE - They still taste delicious after freezing (let thaw and follow the "for sauce" directions the same way).
- FOR SAUCE:.
- In large dutch oven or pot.
- Take 1 liter of whipping cream (or fresh farm cream) heat on med-low.
- Add about 2 tbsp dried/fresh dill.
- Fry 1 Large onion in butter until tender.
- Add onion to cream.
- Thicken cream with cornstarch & water (or flour and oil).
- Add perogies to cream
- Let sit 1/2 - 1 and 1/2 hours on low stirring every 15 minutes.
- Makes approx 4 dozen perogies.
- Serve Hot! ENJOY!

I am always looking for something to do with frozen pierogies...came upon this recipe, had everything in the house, so tried it. It was delicious and oh, so easy!

- Preheat oven to 375.
- Combine first four ingredients.
- Spread half of sauce mixture in bottom of 3 quart baking dish.
- Top with pierogies (frozen) and remaining sauce mixture.
- Cover with foil.
- Bake 40 minutes.
- Remove foil; sprinkle with cheese.
- Bake 5 minutes.
- Sprinkle with cilantro.
- If desired, serve with sour cream.

REUBEN PIEROGI BAKE
Makes a great easy weeknight dinner and is easily a one-dish meal. I usually serve this with a side of pickled beets and/or rye bread/rolls.

- Preheat over to 425 degrees.
- In a saucepan, bring 2 quarts of water to a boil; add pierogies and cook for about 5 minutes or until they float.
- Drain and transfer pierogies into a greased 10 inch round baking dish.
- Layer on top of the pierogies: corned beef, sauerkraut, dressing and end with the swiss cheese.
- Bake for 10 minutes or until pierogies are hot and cheese melts.

PIEROGI CHICKEN BAKE
My step-son and step-daughter love this chicken dish. It may not be fine dining, but does get the job done when it comes to family dinnertime.

- In a large bowl, combine the chicken, chicken gravy, pierogis, frozen vegetables, and salt/pepper to taste; mix well.
- Transfer to a 13x9 inch baking dish.
- Cover with foil and bake at 350° for 50 minutes.
- Take out of the oven, uncover, and top with French-fried onions.
- Bake, uncovered, 5 more minutes or until onions are golden brown.
OUR TRADITIONAL PIEROGIES
We have these pierogies every year for Christmas and even though it might sound strange it is one of our family's favorites. You don't even have to wait for Christmas! Just a note.. We usually make 2 casserole dishes full and it is enough for almost 40 people.

Steps:
- Preheat oven to 350°F
- Lightly grease one large or two small baking dishes.
- Boil the pierogies in batches until mostly cooked but not completely cooked.
- Place one layer in the baking dish with half the onions and dot with 3 tbsps. marg. or butter.
- Repeat layers, sprinkling with salt and pepper.
- Fill the baking dish not quite to the top with the whipping cream and place on a baking sheet as this helps prevent leaking onto the bottom of the oven.
- Cover and bake for 30 to 45 minutes or until pierogies are fork tender.

- Make the dough: Whisk together egg and sour cream. Whisk in milk and water. Stir in flour, 1 cup at a time.
- Turn out dough onto a floured surface. (Dough will be loose and sticky.) Using a bench scraper, turn and fold dough to knead, dusting with flour as needed, until elastic and no longer sticky, 8 to 10 minutes. (Dough will come together as you knead it. Be careful not to add too much flour, since it will toughen the dough.) Cover with an inverted bowl; let rest for 1 hour.
- Divide dough into 4 equal pieces. Line a rimmed baking sheet with a clean linen towel, and dust generouslywith cornmeal to prevent sticking.
- Roll out 1 piece of dough on a lightly floured surface into a 1/8-inch-thick round (keep other pieces covered).
- Cut out circles very close together, using a 3-inch cutter or glass (5 inches for the plum version). Cover with plasticwrap to prevent dough from drying. Repeat with remaining dough.
- Fill pierogi: Place filling in center of each dough circle. Bring a large pot of salted water to a boil.
- Holding 1 circle in your hand, fold dough over filling. Pinch edges, forming a well-sealed crescent.
- Transfer to cornmeal-dusted towel, and loosely cover with plastic wrap. Repeat with remaining dough circles and filling. Working in batches, transfer pierogi to boiling water. They will sink to the bottom and then rise. Once they have risen, cook through, about 2 minutes more (or up to 4 minutes for plum pierogi, depending on ripeness). For savory pierogi, coat a platter with half the butter. Transfer pierogi to platter using a slotted spoon. Drizzle tops with remaining butter, and season with salt. For sweet pierogi, transfer to a platter using a slotted spoon, and dot with sour cream.
BAKED SPINACH AND PIEROGIES
Recipe from box of Mrs T frozen pierogies. This recipe is often requested. Serve as main dish or side.

Steps:
- Thaw 1 dozen frozen pierogies in boiling water for 3-5 minutes uncovered. Drain.
- Preheat oven to 350 degrees.
- Finely chop onion.
- Mince garlic.
- Saute fresh spinach in olive oil. Not neccesary if using frozen spinach, just thaw and squeeze water out of it. Remove from pan.
- Saute onion add more olive oil if needed.
- Stir garlic into onion and just heat through.Add soup and warm.
- Grease 13x9 pan.
- Drizzle 2 tablespoons of sauce on bottom of dish.
- Place pierogies in single layer.
- Put spinach on top of each pierogie.
- Pour rest of sauce evenly over top of spinach and pierogies.
- Top with mozzarella and parmesan cheese.
- Bake at 350 degrees covered for 20 minutes.
