½ pound bulk Italian sausage
1 tablespoon olive oil
1 onion, sliced
1 small green bell pepper, sliced
1 small red bell pepper, sliced
2 cloves garlic, minced
1 (4 ounce) can sliced mushrooms, drained
2 teaspoons dried parsley
½ teaspoon garlic powder
⅛ teaspoon dried oregano
⅛ teaspoon dried basil
1 pinch crushed red pepper flakes
salt and black pepper to taste
1 tablespoon olive oil
20 ounces frozen pierogies
1 (8 ounce) package shredded mozzarella cheese
¼ cup grated Romano cheese

Steps:

  • Heat a large skillet over medium-high heat and stir in the Italian sausage. Cook and stir until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease, then remove the sausage from the skillet and place into a bowl.
  • Heat 1 tablespoon of olive oil in the skillet. Stir in the onion, green bell pepper, and red bell pepper; cook and stir until the onion is golden, and the peppers are tender, about 8 minutes. Stir in the garlic and mushrooms; cook for 1 minute more. Season with parsley, garlic powder, oregano, basil, and red pepper flakes. Season to taste with salt and pepper. Stir to combine, then scrape the vegetables into the bowl with the sausage.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Place the pierogies into the hot oil, and cook until golden brown on each side and hot in the center, about 5 minutes. Spoon the sausage and vegetable mixture over the pierogies. Sprinkle with mozzarella cheese and Romano cheese. Cover, and cook until the cheese has melted.

This is a kid-friendly twist on the classic Italian combination of broccoli rabe and sausage. We discovered that cooking mini pierogies pot-sticker style in a hot skillet saved time (no waiting for water to boil) and left them both crispy and tender.

3 tablespoons olive oil
One 12.84-ounce box frozen mini potato-cheese pierogies
1/2 pound sweet Italian sausage (about 3 links)
2 cloves garlic, smashed and roughly chopped
Pinch red pepper flakes
1 pound frozen broccoli spears, thawed (split any spears that are very large)
1 cup low-sodium chicken broth
2 tablespoons grated Parmesan, plus more for serving

Steps:

  • Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Arrange the pierogies snugly flat-side down in the skillet (there may be some overlapping). Cook until the bottoms just begin to brown, about 3 minutes. Pour in 1/2 cup of water and simmer until the pierogi dough is tender and the water has completely evaporated, 4 to 5 minutes. Lower the heat to medium and continue cooking until the bottoms are golden brown, 2 to 3 minutes more; watch carefully as they can go from golden to burnt quickly. Remove from the heat.
  • While the pierogies cook, heat the remaining 1 tablespoon oil in a large skillet over medium heat. When the oil is shimmering, squeeze the sausage out of the casings into the skillet. Cook the sausage, stirring frequently and breaking it up into bite-size pieces, until browned, 5 to 6 minutes. Add the garlic and pepper flakes and stir until the garlic begins to brown, about 30 seconds. Stir in the broccoli. Stir in the broth, scraping the bottom of the pan to release any browned bits. Sprinkle with the Parmesan. Reduce the heat and simmer, uncovered, until the liquid is reduced by half and the broccoli is tender, 4 to 5 minutes. Remove from the heat.
  • Transfer the pierogies to a large, shallow serving dish and top with the sausage and broccoli mixture. Toss everything to combine and sprinkle with extra Parmesan.

Reduce the heat to medium. Add the bell peppers, onion, garlic and red pepper flakes and cook, stirring, until the vegetables are tender, 7 to 9 minutes. Season with salt.
  • Add the pierogi to the skillet and toss. Add the butter and 1/4 cup of the reserved cooking water; cook over medium heat, stirring gently, until the butter melts, adding more cooking water as needed to loosen. Stir in the basil.

Cabbage, Kielbasa and Pierogies image

I love pierogies and they finish this cabbage-kielbasa saute perfectly. I know there are plenty of really good cabbage, kielbasa and potato recipes, but the pierogies in this dish just melt in your mouth. Not a diet dish, but a delicious comfort food meal. I got the recipe from a PBS home cooking special and have loved it ever since. Note that cooking start times overlap in this recipe. Reduce the amount of butter if desired.

12 frozen potato and onion pierogies (1 box)
8 tablespoons butter or 8 tablespoons margarine
1 large onion, coarsely chopped
1 head cabbage, at least 2 1/2 lbs, cored & coarsely chopped
salt and pepper
1 lb kielbasa, sliced 3/8 - 1/2 inch thick

Steps:

  • Bring a large pot of water to a boil. Add pierogies and boil for 5-7 minutes. Pierogies should float to the surface when they are done, but that's not always true with today's frozen products - some float right away or within a minute or two. Ignore that event and boil for at least 4-5 minutes to fully cook the filling.
  • Remove pierogies with a slotted spoon and drain well.
  • While the water is heating for the pierogies, melt butter in a large skillet over medium high heat. Add onion and saute until it softens, 3 - 5 minutes.
  • Add cabbage and saute mixture 5 more minutes. Season generously with salt and pepper.
  • Stir in sliced kielbasa and continue to cook until cabbage is done and kielbasa flavors have melded with the mixture.
  • Reduce temperature to warm. Place cooked pierogies atop cabbage and season with pepper.
  • Spoon some of the cabbage mixture over the pierogies to help them reheat. The dish is ready when the pierogies are heated through. Serve warm.

Yum.....easy, fast and delicious comfort food. These are a regular item on our menu that take very little effort for a great reward ! I came home dog tired tonight and the last thing on my mind was dinner, but had these on the table in 30 minutes! Not bad for a Monday night dinner !

1 lb pierogi, frozen (potato and bacon, cheese and bacon, etc.)
3 slices bacon
1 onion, chopped
4 sausages, spicy
sour cream

Steps:

  • Heat a large pan of water to boiling.
  • When the water boils, add the pierogies.
  • Cook the frozen pierogies for approximately 10 - 15 minutes. They will float to the top when ready.
  • Drain and set aside.
  • While the water is heating, cook 3 slices of bacon until crisp.
  • Drain on a paper towel then cut up finely.
  • Reserve the oil from the bacon.
  • Fry the sausages in the oil until done - about 10 - 15 minutes on medium heat.
  • Remove the sausages and set aside but keep warm.
  • Add the pierogies to the oil and fry for approximately 10 minutes. Add the onion and bacon 1/2 way through.
  • Turn the pierogies frequently, they should start to get a bit crisp from the oil.
  • Serve pierogies and sausages with bits of fried onion, bacon and top with sour cream.
  • Yum !

Take a one-pot dinner to the next level with this baked Kielbasa and Pierogies Sheet Pan Meal. It's a delicious and efficient way to get dinner on the table even on the busiest nights.

2, 14 ounce packages Kielbasa (I like Hillshire Farms brand because it's readily available.)
2 medium onions (peeled, halved, and cut into 1/2-inch thick strips)
12 baby bell peppers (or 2 large bell peppers, stemmed, seeded and cut into 1/2-inch thick strips)
1 tablespoon olive oil
1/2 teaspoon plus 1 teaspoon kosher salt (divided)
1/2 teaspoon freshly ground black pepper
24 frozen pierogies
2 tablespoons canola or peanut oil
1 tablespoon chili powder
2 teaspoons Tabasco or preferred hot sauce
1/2 teaspoon granulated garlic or garlic powder
1/2 teaspoon granulated onion or onion powder
any robust mustard like grainy Dijon (smooth Dijon, spicy brown, etc...)

Steps:

  • Preheat oven to 400°F.
  • Cut the kielbasa into 4-6 inch lengths and arrange around the outside of the sheet pan. Toss the onions and bell peppers with the olive oil, 1/2 teaspoon of kosher salt, and black pepper in a large mixing bowl then use your hands or tongs to move it to the pan, depositing it between the lengths of kielbasa.
  • In the same large mixing bowl you used for the peppers and onions, toss the pierogies with the remaining ingredients to coat, then arrange those in the center of the sheet pan. The goal is to get as many pierogies touching the surface of the pan as possible. Try not to have multiple layers of pierogies. Place the pan in the oven. After 15 minutes, try to remember to flip the pierogies over, having any that weren't touching the pan do so now. If you forget, it's not a disaster, but they'll be better if you remember.
  • Bake an additional 15 minutes, for a total of 30 minutes or until the pierogies are puffy and beginning to show signs of golden brown around the edges, the sausages are plump, and the onions are crisp tender. Serve immediately with a nice salad.

Steps:

  • Preheat oven to 400 degrees and line a rimmed baking sheet with parchment paper.
  • Add perogies and onion a bowl and drizzle with oil and sprinkle with salt and pepper. Turn to coat and spread on pan.
  • Slice smoked sausages and add to the pan around the perogies and onions (we want the sausages evenly spread through the pan as they will render fat and flavor that will add to the perogies). Spread everything into a single layer as much as possible.
  • Bake for 25-30 minutes, turning perogies once half way through, until perogies are puffed and tender and onions are golden.
  • Serve as desired (my family loves it with sour cream!)

1 pound frozen or refrigerated pierogi, preferably potato and cheese
1 small onion, halved and sliced root to tip
1/2 teaspoon dried oregano

1 12-ounce bag broccoli florets, large florets halved or quartered
1 red, yellow or orange bell pepper, sliced
2 cloves garlic, finely chopped
1/4 cup grated Parmesan cheese

  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking it up into small clumps with a spatula or wooden spoon, until browned and cooked through, about 8 minutes. Remove to a large plate, leaving the drippings in the pan. Add the pierogi to the pan and cook, turning, until browned and heated through, about 5 minutes. Remove to the plate with the sausage.
  • Add the onion, oregano and a big pinch each of salt and pepper to the skillet. Cook, stirring, until the onion is softened and just beginning to brown, about 3 minutes. Push to one side of the skillet; add 1 more tablespoon olive oil and the broccoli to the open side. Season the broccoli with salt and let cook, undisturbed, until it starts to brown in spots, 2 to 3 minutes. Stir the broccoli into the onion and cook until the broccoli is bright green with crisp-tender stems, 5 minutes.
  • Add the bell pepper to the skillet and cook until just softened, 2 to 3 minutes. Return the sausage and pierogi to the skillet and add the garlic and remaining 1 tablespoon olive oil. Cook, tossing, until well combined. Season with salt and pepper and stir in 2 tablespoons Parmesan.
  • Divide the pierogi and vegetables among plates or shallow bowls. Sprinkle with the remaining 2 tablespoons Parmesan.
