This recipe is from an old cookbook from about 1960. You can add almond extract or Kirsch to the filling if you like almond flavoring. I usually add about a tablespoon of Kirsch. This makes 2- 9" pies. You could half the recipe.

6 -6 1/2 cups thawed frozen dark sweet cherries, and juice
1/8 teaspoon salt
1/2-1 cup sugar (I only use 1/2 cup, we don't like our pies too sweet)
4 -5 tablespoons cornstarch
2 tablespoons lemon juice, fresh or bottled

Steps:

  • Reserve about 1/2 cup juice and mix the cornstarch in it.(4-5 tbsp, depending on how thick you like your filling)
  • Mix sugar with cherries and juices and cook till bubbling.
  • Stir constantly if cooking on stove stop.
  • In the microwave I cook at 5 minute intervals and stir in between.
  • Add the reserved juice/cornstarch mixture and stir to mix.
  • Cook for about 3 minutes until thickened.
  • Cool and use in your favorite pie crust.

4 cups pitted tart red cherries
1 cup white sugar
¼ cup cornstarch

Steps:

  • Place cherries into a saucepan over medium heat, and cover the pan; heat cherries until they release their juice and come to a simmer, 10 to 15 minutes. Stir often.
  • In a bowl, whisk the sugar with cornstarch until smooth; pour the mixture into the hot cherries and juice, and thoroughly combine. Return to low heat, bring to a simmer, and cook until the filling has thickened, about 2 minutes; remove from heat, let cool, and use as pie filling.

Grandma's Cherry Pie recipe is a simple, yet tried and true recipe that uses sweet frozen cherries and that will turn a novice baker into a rockstar! Homemade Cherry Pie tops the list of favorite summer fruit pies.

4 cups cherries, sweet - frozen or fresh pitted cherries*
3/4 cup + 1 tbsp sugar* (1 cup sugar sour cherries)
¼ cup corn starch
1 tbsp. lemon juice
pie crust for a 2 crust pie (bottom layer and lattice pie crust top)

Steps:

  • If using frozen cherries, make sure they are thawed.
  • Cook cherries in a saucepan over medium heat until they start to simmer and the juice releases stirring continuously - you don't want the cherries or sugar to burn. Remove from heat.
  • In a separate bowl, mix the sugar and cornstarch together. Add the lemon juice. Pour the mixture into the hot cherries and mix thoroughly.
  • Put the cherry mixture back onto low heat, bring to a simmer once more and keep cooking until the filling has thickened, again stirring often. This should take about 2 minutes.
  • Remove from heat and let it cool before using.
  • Pour the cherry pie filling into your prepared pie crust, top with the second crust and crimp the edges.
  • I would use a pie crust shield to keep the edges from overbrowning.
  • Place the cherry pie on a baking tray and bake for 20 minutes at 400F
  • Reduce heat to 375F and then bake for another 30 to 35 minutes. Remove from the oven and let cool.

All-purpose flour, for rolling
Basic Pie Dough for Sweet Cherry Pie
2 pounds Bing cherries, pitted and halved
1/2 cup granulated sugar
2 tablespoons cornstarch
2 tablespoons fresh lemon juice
1 large egg yolk, beaten with 1 tablespoon water, for egg wash
1 tablespoon turbinado or granulated sugar, for sprinkling

Steps:

  • Preheat oven to 400 degrees, with rack in lowest position. On a floured piece of parchment paper, roll one disk of dough to a 14-inch round. Wrap dough around rolling pin; unroll over a 9-inch pie plate. Gently fit into bottom and sides of plate (do not stretch dough). Using kitchen shears, trim dough to a 1-inch overhand all around. In a large bowl, combine cherries, granulated sugar, cornstarch, and lemon juice; toss until cherries are coated. Pour into prepared bottom crust.
  • On a floured piece of parchment paper, roll second disk of dough to a 14-inch round. Cut into eight 1 1/2-inch-wide strips; discard the shortest two. Weave strips over filling to form a lattice (see photo, page 28). Using kitchen shears, trim strips so they hang over rim by 1 inch. Tuck strips under rim of bottom crust; press to seal. Crimp with a fork all around the edge.
  • Using a pastry brush, lightly brush lattice with egg wash, and sprinkle with turbinado sugar.
  • Place pie on a rimmed baking sheet. Bake until filling is bubbling rapidly all over, 60 to 70 minutes (tent with aluminum foil when crust starts to brown, about 40 minutes). Transfer pie to a wire rack, and let cool to room temperature, at least 3 hours.

2 cups pitted fresh dark sweet cherries, such as Bing or Lambert
⅓ cup bottled cherry juice
¼ teaspoon almond extract
⅓ cup brown sugar
⅓ cup white sugar
¼ cup all-purpose flour
1 pastry for a double-crust 9-inch pie
1 tablespoon butter, cut into small chunks

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a bowl, mix the cherries, cherry juice, almond extract, brown sugar, white sugar, and flour until the sugar has dissolved; allow to stand while you prepare pastry dough, about 15 minutes.
  • Line a 9-inch pie dish with a pastry crust, and fill with the cherry filling; sprinkle small chunks of butter over the filling. Top with the remaining crust, and crimp the edges to seal; cut several steam vents into the top crust with a sharp paring knife.
  • Bake in the preheated oven until the cherry filling is bubbling and thickened and the pie crust is browned, 35 to 40 minutes. Allow to cool before serving.
