SWEET PICKLE RELISH

Sweet Pickle Relish image

After much experimentation with ingredients and ratios, this is my favorite sweet pickle relish. I usually can it when the burpless cukes from the garden get away from me.

Provided by Donna Matthews

Categories     Vegetable

Time 5h

Yield 3 pints, 96 serving(s)

Number Of Ingredients 9

4 cups cucumbers, deseeded and chopped
2 cups onions, chopped
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
1/4 cup kosher salt
3 1/2 cups sugar
2 cups cider vinegar
1 tablespoon celery seed
1 tablespoon mustard seeds

Steps:

  • To deseed cucumbers, I cut them in half lengthwise and scoop out the seeds with my finger.
  • I chop the unpeeled cucumbers as well as the other vegetables with a Pampered Chef chopper.
  • Put all the vegetables in a large bowl.
  • Sprinkle the salt over the chopped vegetables.
  • Cover with cold water and let stand for 2 hours.
  • Drain vegetables well, then press out as much liquid as possible.
  • In a large pot, combine sugar, vinegar and seeds.
  • Bring to a boil.
  • Add vegetables.
  • Bring back to a boil and simmer for 10 minutes.
  • Using a slotted spoon, put into pint jars according to standard canning procedures.
  • (Note: Although some of the brine needs to go in the jars, I use a slotted spoon to keep it from being too soupy.).
  • Process in a hot water bath according to your altitude (10 minutes for up 50 1000 ft.).

SWEET PICKLE RELISH

Time 2h35m

Yield 96

Number Of Ingredients 10

8 cucumbers, chopped
2 onions, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
½ cup pickling salt
cold water to cover
2 cups cider vinegar
1 tablespoon celery seed
1 tablespoon mustard seed
3 ½ cups white sugar

Steps:

  • Combine cucumbers, onions, red bell pepper, and green bell pepper in a large bowl; add salt and pour in enough cold water to cover. Allow to soak for 2 hours. Thoroughly drain in a colander.
  • Pour vinegar into a large, heavy stainless steel pot; add celery seed and mustard seed. Stir sugar into mixture and bring to a boil, stirring until sugar is dissolved, 2 to 3 minutes. Add the drained vegetable mixture and return to a boil, about 10 minutes. Remove pot from heat.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack relish into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

MUFFULETTA DIP

MUFFULETTA DIP image

For the uninitiated, a muffuletta is traditionally a sandwich on a round Sicilian sesame bread, originated by Italian immigrants in New Orleans. A traditional style muffuletta sandwich consists of a muffuletta loaf split horizontally and covered with layers of marinated olive salad, mortadella, salami, mozzarella, ham, and provolone. The sandwich is sometimes heated to soften the provolone. Quarter, half, and full-sized muffulettas are sold. This recipe is a fun variation of the muffuletta. Recipe & photo: bhg.com

BEST HOMEMADE GIARDINIERA (HOT OR MILD)

BEST Homemade Giardiniera (Hot or Mild) image

The ULTIMATE pickled vegetable relish, its flavor and versatility will astound you! Not just for hot dogs and muffuletta sandwiches, add this giardinera to your burgers, nachos, pizzas, pasta salads and anything else your heart desires!

Provided by Kimberly Killebrew - www.daringgourmet.com

Categories     condiment

Time 40m

Number Of Ingredients 21

1/2 head cauliflower, chopped into small florets
10 ribs celery (, diced)
5 carrots (, diced)
2 large red bell peppers (, seeded and chopped)
1 cup sliced green pitted olives
4 serrano peppers (or more according to heat preference) (, sliced)
Spices/Ingredients for EACH pint jar:
1/2 teaspoon dried oregano
1/2 teaspoon coriander seeds
1/4 teaspoon yellow mustard seeds
1/4 teaspoon fennel seeds
1/4 teaspoon black peppercorns
1/4 teaspoon red chili flakes (optional, for hot giardiniera)
1/8 teaspoon celery seeds
1 bay leaf
1 clove garlic, cut in half
1 tablespoon extra virgin olive oil
For the Brine:
4 cups white wine vinegar
4 cups water
2 tablespoons kosher salt

Steps:

  • Place the chopped veggies a large non-reactive pot or bowl. Pour 1/4 cup kosher salt over the vegetables and enough water to cover them. Let the vegetables soak in the salt water for at least 6 hours or overnight.
  • To prepare the jars, place the spices into each of the jars, reserving the garlic and olive oil until after the brine is added. (I like to make some jars hot and some mild by adding/omitting the red chili flakes).
  • Thoroughly rinse and drain the vegetables before dividing them up between the jars. Pack the vegetables in as tightly as you can. Place a clove of garlic (cut in half) in each jar.
  • To make the brine: Bring the water, vinegar and salt to a boil. Pour the boiling brine over the vegetables leaving a little more than 1/2 inch headspace from the top. Pour a tablespoon of olive oil over the top in each jar. Thoroughly wipe the rims with a wet paper towel, ensuring no oil or other residue is on them, and seal the jars.
  • If you plan on using the giardiniera within two weeks let the jars sit at room temperature for a day or two and then transfer them to the fridge. The flavor only gets better with time so wait at least 2-3 days before eating it. Will keep refrigerated for 2 weeks.
  • If you're canning the giardiniera for long-term storage, seal the jars with the lids and rims and prepare a boiling water bath. Boil the jars for 10 minutes. Carefully remove the jars and let them sit undisturbed for 24 hours before moving them.If processed in the water bath, the giardiniera is best consumed within 6 months but will keep for at least a year.**IMPORTANT NOTE: If you're canning the jars for long-term storage it is critical to be sure you thoroughly wipe the rims of the jars to ensure no oil residue is on them, otherwise they will not seal properly. Alternatively, you can omit the oil during canning and add it later to your giardiniera when you open the jar.

CHOPPED OLIVE SALAD

Chopped Olive Salad image

This salad is a mixture of garlic, maybe an olive or two, and vinegar with some peppers thrown in there too. Use it to top a cracker, hang out with your boring chicken, or make an authentic New Orleans Muffuletta sandwich!

Provided by Jennifer Stewart

5 sweet cherry peppers (sliced and seeded)
2 cloves garlic (minced)
1 cup Castelvetrano olives (pitted and chopped)
3/4 cup Spanish olives (pimento removed)
1/2 cup roasted piquillo peppers/red pepper (diced)
3/4 cup black olives (chopped)
3 tablespoons capers (drained)
1/4 cup olive oil
1/4 cup red wine vinegar
1 tablespoon oregano
1/2 teaspoon salt

PICKLEY MUFFULETTA SUB

Pickley Muffuletta Sub image

Inspired by the traditional Cajun sandwich on the same-named flat, round bread, this layered sub is perfect for feeding a big crowd (especially when prepared on a 24-inch hoagie roll). What sets this sub apart is the addition of giardineria - the pickled vegetable relish - which nods to this sandwich's Italian roots. Be sure to make it two hours ahead so the fillings have time to soften the bread ever so slightly.

Provided by Leah Brickley

Categories     appetizer

Time 3h20m

Yield 12 to 14 servings

Number Of Ingredients 14

3 cups drained giardineria, chopped, plus 1/2 cup giardineria brine
1/2 cup pitted pimento-stuffed green olives, sliced
1/2 cup pitted kalamata olives, sliced
1/2 cup drained pepperoncini rings
1/2 small red onion, thinly sliced
1/2 cup loosely packed fresh parsley leaves, chopped
1/4 cup extra-virgin olive oil
1 garlic clove, finely chopped
One 24-inch or two 12-inch soft hoagie rolls
1/4 cup mayonnaise
3/4 pound sliced provolone
1/2 pound sliced mortadella
1/2 pound sliced deli ham
1/4 pound sliced Genoa salami

Steps:

  • Toss the giardineria, brine, green and kalamata olives, pepperoncini, onion, parlsey, olive oil and garlic together in a medium bowl. Cover and refrigerate for at least 1 hour; the mixture can be made up to a day ahead.
  • Slice the hoagie roll in half lengthwise, leaving the bottom half slightly thicker than the top half. Put both sides cut-side up and spread the mayonnaise evenly over the two. Top each side with the olive salad and drizzle with any remaining liquid from the bowl.
  • Shingle half of the provolone on the bottom bun, top with the mortadella (fold the meat as needed to fit), ham, and salami and finish with the remaining provolone. Carefully flip the top bun onto the bottom and press together. Wrap and refrigerate 2 hours. Slice into 12 to 14 small sandwiches, skewering each with a toothpick.

MUFFULETTA GRILLED CHEESE RECIPE

Muffuletta Grilled Cheese Recipe image

A grilled cheese sandwich layered with sliced meats and olive salad.

Provided by J. Kenji López-Alt

Categories     Lunch     Sandwiches

Time 15m

Yield 1 sandwich

Number Of Ingredients 17

For the Olive Salad:
3/4 cup pitted mixed oil-packed olives
1 tablespoon capers
1/4 cup chopped roasted red peppers
2 tablespoons parsley leaves
1/2 cup giardiniera (Italian-style pickled vegetable salad, see note)
1 medium garlic clove, minced (about 1 teaspoon)
1 tablespoon red wine vinegar
3 tablespoons extra-virgin olive oil
For the Sandwich:
2 tablespoons butter, cut into three even pieces
2 slices hearty white bread, such as Pepperidge Farm or Arnold, or 2 slices hearty French or Italian bread
2 slices mild Provolone cheese
3 slices sweet soppressata
3 slices mortadella
3 slices hot capicola
Kosher salt

Steps:

  • For the Olive Salad: Combine olives, capers, peppers, parsley, giardiniera, and garlic in the bowl of a food processor. Pulse to chop until no pieces larger than 1/2-inch remain. Transfer to a bowl. Add vineger and olive oil and stir to combine. For best results, let olive salad rest overnight before continuing to step 2.
  • For the Sandwich: Melt one third of butter in a large non-stick skillet over medium heat until foaming subsides. Add both bread slices and cook, swirling occasionally, until pale golden brown on bottom side, about 2 minutes.
  • Transfer to a cutting board toasted-side-up. Place one cheese slice on top of one slice of bread. Spread a layer of olive salad across bread with a spoon, then top with soppressata, mortadella, and capicola, followed by second cheese slice. Close sandwich, with both toasted sides facing inwards.
  • Melt one more piece of butter in the skillet and reduce heat to medium low. Add sandwich and cook, swirling occasionally, until deep, even golden brown, about 5 minutes. Remove sandwich using a flexible metal spatula. Add the remaining butter. Return sandwich to skillet cooked-side up. Season with salt. Cook, swirling occasionally, until second side is deep, even golden brown and cheese is thoroughly melted, about 5 minutes. Serve immediately.
