PASTA WITH GARLIC OIL AND TOASTED BREAD CRUMBS
This recipe was in a 2000 Chef's Illustrated magazine. It's different than most pasta recipes with garlic oil, and so yummy! It takes a little longer to prepare, but it's worth it. Don't be afraid to toast the crumbs until dark brown. The crunchier the better!

Steps:
- Adjust oven rack to middle position, place large oven-safe serving bowl on rack, and heat oven to 200 degrees. Prepare pasta according to directions on package, reserving 1/2 cup pasta cooking water before draining.
- Heat butter in heavy-bottomed 10-inch skillet over medium-high heat until foaming. Add bread crumbs and cook, stirring frequently, until golden brown, toasted, and fragrant, 2 to 3 minutes. Transfer crumbs to small bowl and mix in cheese and 1/2 teaspoon minced garlic; set aside. Wipe out now-empty skillet with large wad of paper towels.
- Mix remaining minced garlic with 1 teaspoon water. Heat olive oil, garlic, and pepper flakes in cleaned skillet over medium heat until fragrant, about 2 minutes. Add vermouth, reserved pasta cooking water, remaining 1 teaspoon salt, and pepper to taste; cook to blend flavors, about 1 minute longer. Toss pasta and sauce in warm serving bowl; sprinkle bread crumbs over and serve immediately.

PASTA WITH SPICY ANCHOVY SAUCE AND DILL BREAD CRUMBS

- Heat 1/4 cup oil in a 12-inch heavy skillet over medium heat until it shimmers, then cook bread crumbs, stirring constantly, until deep golden and crisp, 6 to 8 minutes.
- Transfer bread crumbs to a bowl and toss with dill and 1/4 teaspoon each of salt and black pepper.
- Wipe out skillet, then cook onions with 1/4 teaspoon salt in remaining 1/2 cup oil over medium heat, stirring frequently, until very soft, 12 to 15 minutes. Add anchovies and cook, mashing anchovies into onions, until dissolved.
- Meanwhile, cook bucatini in a pasta pot of boiling salted water (2 tablespoons salt for 5 quarts water) until al dente. Reserve 1/2 cup cooking water, then drain pasta.
- Stir red-pepper flakes and reserved water into anchovy sauce, then add pasta and toss to combine. Add about half of bread crumbs and toss to coat. Serve sprinkled with remaining bread crumbs.
PICI WITH GARLIC AND BREAD CRUMBS

- 1 Prepare the pasta. In a skillet large enough to hold all of the pasta, heat the oil over mediumlow heat. Lightly crush the garlic cloves and add them to the pan. Cook until the garlic is golden, about 5 minutes. Do not let it become brown. Remove the garlic from the pan and stir in the bread crumbs. Cook, stirring often, until the crumbs are browned, about 5 minutes. 2 Meanwhile, bring at least 4 quarts of water to a boil. Add the pasta and 2 tablespoons of salt. Stir well. Cook over high heat, stirring frequently, until the pasta is al dente, tender yet firm to the bite. Drain the pasta. 3 Add the pasta to the skillet with the crumbs and toss well over medium heat. ESCAROLE WITH GARLIC AND BREAD CRUMBS
Escarole is a bitter green and we love it sauteed with fresh garlic. A quick blanching keeps it bright green and tames some of it's bitterness. I found this version in "The North End Italian Cookbook". Fried bread crumbs and a few red pepper flakes makes this dish fantastic.

Steps:
- Bring a large pot of water to a boil.
- Coarsely chop the escarole.
- Add to water, cook 2 minutes, drain, rinse with cold water and drain again.
- Heat oil in a heavy skillet, add garlic and red pepper flakes and cook over medium heat until garlic is browned.
- Add bread crumbs and cook until browned.
- Turn heat to high, add escarole, season with salt and pepper, stir and toss until heated through.
- Place in a serving bowl and pour any oil left in the pan over the escarole.

GARLIC BREADCRUMBS
Steps:
- Preheat the oven to 350°F.
- Place the bread slices on a baking sheet and bake until lightly toasted and dry, 10 to 12 minutes. While the bread toasts, place the olive oil and garlic in a sauté pan and set over low heat. Cook gently, allowing the garlic to infuse the oil.
- When the bread slices are toasted, place in a food processor and pulse until finely ground. Add the crumbs to the garlic oil and stir gently until coated. Season to taste with salt and cook for 2 to 3 minutes, or until the oil is absorbed. Remove the garlic cloves. The crumbs will keep in an airtight container at room temperature for about 2 weeks.

- Preheat oven to 450 degrees.
- Lightly oil a large baking sheet.
- In a medium bowl, combine bread crumbs, parsley, garlic, and salt and pepper to taste.
- Add 3 tablespoons oil or enough to moisten the crumbs.
- Arrange the shrimp on a single layer on the baking sheet, curling each one into a circle.
- Spoon a little of the crumb mixture onto each shrimp and drizzle with a little more oil.
- Bake 10-15 minutes, depending on the size of the shrimp, or until the shrimp turn pink and the crumbs are lightly browned.
- Serve with lots of lemon wedges.

CAULIFLOWER WITH GARLIC BREAD CRUMBS
I absolutely love this dish. Even my father, who does not like garlic or cauliflower that much, was raving about this dish. It is essential to use fresh bread crumbs. I usually buy a baguette or country-style bread from the grocery store, and after cutting off the crust and tearing it into slices, put it in the food processor until it forms crumbs the size I want. This recipe is from the Williams Sonoma Vegetable Cookbook.

Steps:
- Bring a large saucepan 3/4 full of water to a boil. Add a pinch of salt, the sugar, and the cauliflower and boil until tender, about 5 minutes. Do not overcook.
- Drain, rinse under running cold water, and leave to drain.
- In a large frying pan over medium heat, warm 4-5 Tb of the oil. When the oil is hot, add the crumbs and toss them constantly until they are evenly toasted, browned, and crisp, about 5 minutes.
- Add the garlic, turn the crumbs once or twice, and remove them from the pan. Do not allow the garlic to brown; it should be cooked only enough to flavor the crumbs.
- Heat the remaining 2-3 Tb oil in the same pan over medium heat. Add the cauliflower and mash and break it up a bit as it lightly browns in the oil and become slightly tender, about 5 minutes. Do not allow the cauliflower to become crisp and dark.
- Add the crispy garlic crumbs to the pan and toss them with the cauliflower over medium-low heat, mashing some of the cauliflower and allowing some of it to keep its shape, about 5 minutes.
- Season to taste with salt and pepper and serve hot.
