GLAZED CHICKEN WINGS
I received this easy wing recipe from a cousin on Vancouver Island during a visit there a few years ago. They're an appealing appetizer, but also a favorite for Sunday lunch with rice and a salad. -Joan Airey, Rivers, Manitoba

Steps:
- Cut chicken wings into 3 sections; discard wing tip section. Place in a greased 13x9-in. baking dish. Combine barbecue sauce, honey and soy sauce; pour over wings. Bake, uncovered, at 350° for 50-60 minutes or until chicken juices run clear.

PICANTE CHICKEN WINGS
Spicy sweet wings with a picante sour cream sauce. Time does not include marinating 1 hour. If you like "HOT", you might want to add some cayenne.

Steps:
- Preheat oven to 375°F.
- Combine 3/4 cup picante sauce with catsup, honey and cumin.
- Pour over wings, cover and marinate in refrigerator 1 hour or more, turning at least once.
- Place wings on a foil lined broiler pan, reserving marinade.
- Bake 30 minutes.
- Baste with marinade, bake 15 minutes, brush with marinade and bake another 15 minutes.
- Turn heat up to broil, place pan 6 inches from broiler, cook 2 minutes per side.
- Combine 1/4 cup picante sauce with sour cream and serve with wings.

- Stir together 3 tablespoons sugar, 3 tablespoons fish sauce, and 2 tablespoons lime juice until sugar dissolves. Pour mixture into a ziplock plastic bag; add chicken. Seal bag; gently massage bag to coat wings with marinade. Refrigerate 24 hours.
- Preheat oven to 400°F. Line a baking sheet with aluminum foil; coat with cooking spray. Remove wings from marinade; discard marinade. Pat wings dry; arrange in a single layer on prepared baking sheet. Bake in preheated oven until lightly browned, about 25 minutes, flipping once.
- Meanwhile, whisk together 2 tablespoons water, remaining 2 tablespoons sugar, remaining 2 tablespoons fish sauce, and remaining 2 tablespoons lime juice in a small bowl until sugar dissolves. Set aside.
- Heat oil in a wok over high. Add wings and soy sauce; cook, stirring often, until darkened in spots, 1 to 2 minutes. Add fish sauce mixture; cook, stirring constantly, until sauce reduces and wings are glazed, 30 seconds to 1 minute. Add scallions, fried garlic, and dried shrimp; cook, stirring constantly, until shrimp soften slightly, about 1 minute. Remove from heat; stir in cilantro and basil. Transfer to a platter.
