SMOKED SALMON FILO CUPS

45 frozen mini filo cups
8 ounces cream cheese, at room temperature
3/4 cup roughly chopped smoked salmon (about 4 ounces)
1/2 cup creme fraiche
1 tablespoon roughly chopped drained capers
1 tablespoon finely chopped shallot
1 teaspoon lemon zest plus 1 tablespoon lemon juice
2 tablespoons chopped fresh dill
2 tablespoons chopped chives

Steps:

  • Preheat the oven according to the package instructions for the filo cups. Put the filo cups on a baking sheet and bake until golden brown and crispy according to the package instructions. Let cool.
  • In a medium bowl, mix together the cream cheese, salmon, creme fraiche, capers, shallot, lemon zest and juice, 1 tablespoon of the dill and 1 tablespoon of the chives. Transfer the mixture to a ziptop bag. Cut an approximately 1-inch opening in the corner of the bag. Pipe the salmon mixture evenly among the filo cups, filling them to the top.
  • Mix together the remaining dill and chives, then sprinkle some of the herbs on top of each cup to garnish. Serve immediately.

CREAMY SMOKED SALMON AND DILL TART

Purchased phyllo pastry is used here instead of a regular pie crust for quick and easy assembly. This tart is best when served at room temperature.

5 frozen phyllo pastry sheets, thawed
3 tablespoons unsalted butter, melted
4 large egg yolks
1 tablespoon plus 1 teaspoon Dijon mustard
3 large eggs
1 cup half and half
1 cup whipping cream
6 ounces smoked salmon, chopped
4 green onions, chopped
1/4 cup chopped fresh dill or 1 tablespoon dried dillweed
Dill sprigs

Steps:

  • Generously butter 9 1/2-inch-diameter deep -dish pie plate. Place 1 phyllo sheet on work surface (cover remaining pieces with plastic wrap, then with clean damp towel.) Brush phyllo sheet with butter and fold in half lengthwise. Brush folded surface with butter. Cut in half crosswise. Place 1 phyllo rectangle, buttered side down, in prepared pie plate, covering bottom and letting pastry overhang 1 section of edge by 1/2 inch. Brush top of phyllo in pie plate with butter. Place second phyllo rectangle in pie plate, covering bottom and letting pastry overhang another section of edge by 1/2 inch; brush with butter. Repeat process with remaining 4 phyllo sheets, making certain entire surface of edge is covered to form crust. Fold overhang under to form crust edge flush with edge of pie plate. Brush crust edges with butter. (Can be prepared 4 hours ahead. Cover and refrigerate.)
  • Preheat oven to 350°F. Whisk yolks and mustard in medium bowl to blend. Beat in eggs, half and half, cream, salmon, onions and chopped dill. Season to taste with salt and pepper. Pour into prepared crust. Bake until center is set, about 50 minutes. Transfer to rack. Cool Garnish with dill sprigs and serve slightly warm or at room temperature.

About 1 pound good smoked salmon offcuts, trimmed and snipped into small pieces
Tiny leaves from a few sprigs of thyme (or 1 teaspoon dried thyme)
Juice and finely grated zest of 1 small unwaxed lemon
2 tablespoons soft unsalted butter
3 1/2 ounces plain Boursin cheese
1/4 teaspoon paprika
Cayenne pepper
Sea salt
Thinly sliced, buttered, light rye bread and a handful of watercress leaves, to serve

Steps:

  • In a food processor, briefly whiz the pieces of smoked salmon with the thyme and lemon juice and zest. Scrape down the sides of the bowl, then add the butter and Boursin. Season lightly with the paprika, a touch of cayenne, and black pepper. Whiz again briefly until the mixture is combined, but still a little rough. Taste, and adjust the seasoning, salt, pepper or paprika. Chill for at least 20 minutes, longer if convenient. Remove from the refrigerator at least 10 minutes before serving.
  • Serve with or on slices of buttered rye bread, with a few watercress leaves.

100 phyllo tartlett shells
1 side smoked salmon, minced
1 small red onion, chopped fine
1 bunch chives, chopped very fine
1 cup capers, rough chopped
2 cups aioli
1 jar domestic osetra caviar
2 cups plain yogurt, drained
2 Tbs. fresh dill, chopped fine
fresh juice from 2 lemons
salt and pepper to taste
dill to garnish

Steps:

  • Preheat oven to 400 F. Place tartlett shells on a sheet tray and bake until golden brown. Let cool.
  • Mince salmon in a food processor. In a medium bowl, mix salmon, onion, chives, capers, aioli and a touch of lemon. Season with salt and pepper to taste. Refrigerate until use.
  • In a small bowl, mix yogurt, dill, lemon, salt and pepper. To serve, fill each shell with a spoon of salmon mixture. Top with a refined amount of caviar and tiny dollop of yogurt. Garnish with dainty dill sprig.

1/2 lemon, juiced
1 tablespoon Dijon mustard
Dash extra-virgin olive oil
Dash Worcestershire sauce
Dash hot pepper sauce (recommended: Tabasco)
1 1/2 teaspoons capers, chopped
1 1/2 teaspoons caper juice (liquid from a jar of capers)
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
3 tablespoons fresh chives, minced
8 ounces salmon fillet, skinless, about 3/4 inch thick
1 teaspoon finely ground sea salt
1/2 teaspoon freshly ground black pepper
1 cup cold water
1 tablespoon fresh lemon juice
4 ounces smoked salmon, cut into strips about 1-inch long and 1/4-inch wide
Lemon zest, julienned, for garnish

Steps:

  • In a bowl, whisk the mayonnaise, lemon juice, Dijon mustard, olive oil, Worcestershire, hot pepper sauce, capers, caper juice, salt, and black pepper. Whisk in 2 tablespoons chives and taste for seasoning. Cover and refrigerate until needed. Will keep for 2 to 3 days refrigerated. Makes about 1 cup.
  • Preheat an 8-inch skillet over high heat. Add the water and lemon juice, the liquid should be about 3/4 inches deep. Generously season the salmon fillet on both sides with salt and pepper. Put the salmon in skillet, and bring the water to a simmer (about 180 degrees). Reduce the heat to very low, tightly cover the pan, and poach the salmon until medium rare, 5 to 6 minutes. Remove the salmon to a plate and place it in the refrigerator to cool.
  • Remove any pin bones from the salmon and break the fish up into the mayonnaise. Add the smoked salmon and fold together. Garnish with lemon zest and remaining tablespoon of chives. Store tightly covered in the refrigerator. Serve cool but not cold.
  • Cooking Notes: For the most luscious texture, poach the salmon on your stovetop's lowest possible setting, with the water just gently steaming the fish.
  • Wine Notes: Chardonnay is wonderful with this dish, but please ask your wine merchant for one with little or no oak, so it does not clash with the woody flavor of the smoked salmon.

1 shallot, finely chopped
Canola oil, for cooking
1 quart cold-smoked cod
1 cup sour cream
1/2 cup mayonnaise
2 tablespoons finely chopped fresh dill
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped scallion
1 tablespoon hot sauce
1 tablespoon freshly ground black pepper
1 tablespoon salt, or more as needed
1 teaspoon fermented Fresno powder (sub cayenne if unavailable)
1 teaspoon MSG, optional
Juice and zest of 2 limes, or more as needed
Juice and zest of 1 lemon, or more as needed
1/2 preserved lemon, finely diced
Toasted crostini, for serving

Steps:

  • Sautee the shallots in a pan in some oil until softened. Set aside.
  • With clean hands, break apart smoked cod into bite-size pieces.
  • In a large bowl combine sour cream, mayonnaise, dill, parsley, scallion, hot sauce, pepper, salt, Fresno, MSG if using, lime juice and zest, lemon juice and zest, preserved lemon and shallots. Taste for salt and citrus. Add more if needed.
  • Add smoked fish pieces. Chill and serve with toasted crostini.

SALMON RILLETTES

1 tablespoon olive oil
6 ounces/170 g salmon, cut into large cubes
1/3 cup/70 g butter, softened
1 tablespoon creme fraiche
1 tablespoon chopped shallot
1 tablespoon chopped fresh tarragon
Kosher salt and freshly ground black pepper
1 lemon, juiced

Steps:

  • Heat the oil in a saute pan and gently cook the salmon, leaving the pieces slightly pink in the center, about 5 minutes. Cool. In a food processor or using two forks, shred the salmon and mix with the butter. Add the creme fraiche, shallot and tarragon. Season the mixture with salt, pepper and lemon juice. Pack into ramekins or similar small pots. Keep in the refrigerator, but before serving, take it out to soften because you want it nice and smearable.

Vegetable-oil or butter-flavored cooking spray
1/4 cup raw sugar, such as turbinado
8 oz nonfat vanilla yogurt, warmed to room temperature
8 oz Neufchâtel (a lower-fat variety of cream cheese)
1 tsp vanilla extract
1 1/2 cups pitted cherries and mixed berries (such as raspberries, blackberries, blueberries and sliced strawberries)
1 tbsp Grand Marnier, rum, or Kahlúa (optional)

Steps:

  • Preheat oven to 400°F. Place a sheet of phyllo on a flat surface such as a cutting board; spray lightly with spray and sprinkle with 1 tbsp sugar. Cover with another sheet of phyllo. Repeat three times, finishing with spray and sugar. Using a pizza cutter or a very sharp knife, cut the phyllo into 3-inch squares. Place each square in a cup on a muffin tin, pressing in gently and fanning phyllo layers so corners don't overlap. Bake 7 to 10 minutes or until golden. Whip yogurt in a small bowl. Fold in Neufchâtel and vanilla (and liquor, if desired). Cover and refrigerate 10 minutes. After cups have cooled, remove them from muffin tin. Add 1 tbsp yogurt mixture to each cup. Top with fruit and serve. (You can also mix fruit directly into yogurt mixture.)

FRESH & SMOKED SALMON RILLETTES



Fresh & smoked salmon rillettes image

A simple starter, fresh and rich, that makes a bit more of a pack of smoked salmon - serve instead of pâté on rye or piled into chicory leaves

150ml vermouth
½ onion , sliced
2 tbsp lemon juice , plus a squeeze
small bunch parsley , stalks only (use the leaves below)
8 black peppercorns
280g salmon fillet
125g smoked salmon , cut into small shreds
30g butter , melted
1 tbsp chopped chervil (or chives if you can't get chervil)
rye bread and chicory leaves, to serve (optional)
200g crème fraîche
2 tbsp finely chopped parsley and chives
2 tbsp capers , rinsed of salt or brine
1 small shallot , finely chopped
1 tbsp extra virgin olive oil
lemon juice , to taste

Steps:

  • Put the vermouth, onion, lemon juice, parsley stalks and peppercorns in a saucepan with 150ml water and bring to the boil. Simmer for 10 mins. Turn the heat down to a very gentle simmer, add the salmon fillet and poach for 4 mins. Let the salmon sit and cool in the liquid.
  • Lift the salmon out of its poaching liquid, remove the skin and flake the flesh roughly. Mix the flesh with the smoked salmon, a good squeeze of lemon, the butter, chervil and some pepper. Tip into a bowl, cover and put in the fridge (be sure to bring it back to room temperature to serve).
  • Mix the crème fraîche with the herbs, capers, shallot, oil and lemon juice to taste. Serve the rillettes with leaves of chicory - its bitterness is very good against the richness of the salmon - the caper crème fraîche and some rye bread, if you like.

These are really easy, can be made ahead, frozen etc... and are quite tasty warm or cold. If you are intimidated by phyllo dough (don't be, phyllo is your friend, and very forgiving) you could use Crescent dinner rolls, rolled and cut into squares, for the pastry.

4 sheets phyllo dough or 1 (8 ounce) can pillsbury crescent roll dough
3 1/2 tablespoons butter, separated
8 ounces fresh mushrooms, finely chopped
1 tablespoon flour
1 finely chopped shallots or 2 tablespoons onions
2 garlic cloves, minced
1/2 cup heavy cream
1/4 cup freshly grated parmesan cheese
2 tablespoons chopped fresh parsley, for garnish (optional)

Steps:

  • Heat oven to 350°F.
  • Melt 2 tbsp butter in a large skillet over medium heat.
  • Add mushrooms, shallots and garlic & flour; mix well.
  • Cook 5 minutes or until tender, stirring frequently.
  • Add cream and cheese; mix well.
  • Cook 2 to 3 more minutes or until most of the liquid has evaporated, stirring frequently; set aside.
  • Melt remaining butter in a small dish in microwave.
  • Brush one sheet of phyllo with butter, place another sheet on top, and brush with butter, repeat, do not butter top of last sheet.
  • Cut phyllo into 24 equal squares, and place each square into ungreased mini muffin cups.
  • Spoon one heaping teaspoon mushroom mixture into each cup.
  • Bake at 350°F for 8-10 minutes or until golden brown.
  • Sprinkle with parsley.

SALMON RILLETTES



Salmon Rillettes image

A light but rich tasting spread made with fresh and smoked salmon. This is my adaptation of David Lebovitz's adaptation of Susan Loomis's salmon rillettes, a recipe that I have been wanting to make for years. A more buttery version is in Susan Loomis's wonderful book "Cooking at Home on Rue Tatin," and on David Lebovitz's eponymous website. David uses a mixture of steamed fresh salmon and smoked salmon, and I have followed suit, changing the proportions slightly. I used much less butter - 1 tablespoon, and a tablespoon each of olive oil and crème fraîche, as well as some Greek yogurt, and I still came up with a mixture that I can call rillettes. You can serve the spread with sliced bread or crackers, spoon onto endive leaves, cucumber rounds or squares of red and green pepper, or use as a filling for miniature bell peppers. You can also substitute these salmon rillettes for the smoked trout rillettes in the recipe for "Lentils With Smoked Trout Rillettes" from earlier this week. As always, use a fork, not a food processor, to make this.

1 6-ounce salmon fillet, bones removed
Salt and freshly ground pepper
5 ounces smoked salmon, cut into thin strips, then into 1/4-inch pieces
1 tablespoon unsalted butter, at room temperature
1 tablespoon extra virgin olive oil
4 tablespoons plain Greek yogurt
1 tablespoon crème fraîche (or omit and use 5 tablespoons yogurt)
1 1-2 to 2 tablespoons fresh lemon juice
2 tablespoons chopped chives

Steps:

  • Lightly oil a steamer basket. Season salmon with salt and pepper and place in steamer basket over 1 inch of boiling water. Cover and steam 5 to 8 minutes, depending on thickness of the salmon. It should be just cooked through and easy to flake apart, but moist. Remove from heat and allow to cool.
  • Using a fork or a whisk, cream butter and olive oil together until mixture is smooth and emulsified.
  • Flake salmon into a medium-size bowl and add smoked salmon. Using a fork, mash the two together until well combined and salmon has broken down like canned tuna. Add butter and olive oil, yogurt and crème fraîche and work together with a fork until well combined. Add lemon juice to taste and the chives, and mix together well. Add pepper and mix together. Chill for 1 to 2 hours. Allow to come to room temperature before serving.
  • Either spoon onto endive leaves or other vegetables, or serve with toasted bread or crackers.

1/2 lb smoked salmon, thinly sliced
1 (8 ounce) container cream cheese, softened
2 tablespoons chives, fresh minced
2 tablespoons parsley, fresh minced
1 tablespoon tarragon, fresh minced
1 teaspoon paprika, sweet ground
1/4 cup white onion, diced
1/2 lb brie cheese, rind removed, cut in half and sliced through the thickness in 3 slices
1/4 cup butter, unsalted and melted
4 sheets phyllo dough, thawed
salt
pepper

Steps:

  • Mix together the cream cheese, chives, parsley, tarragon, paprika, salt (to taste), and pepper (to taste) in a bowl. You may need to add a spoonful of milk or water to thin the consistency slightly. It needs to be thick but slightly spreadable.
  • Brush the melted butter on each sheet of phyllo dough and layer gently.
  • In the center, right half of the phyllo rectangle, gently spread half of the cream cheese mixture, layer half of the brie slices, and sprinkle half of the onions. Add salmon slices and season with a bit of salt and pepper. It is ok if they overlap. Top the salmon with the remaining cream cheese, onions, and brie.
  • Fold over the empty half of the phyllo and create a large package, sealing tightly around the edges. Make it as pretty or rustic as you prefer.
  • Brush the top of the dough with melted butter.
  • Bake in a 400 degree oven for about 7-8 minutes, or until outside is golden brown and flaky. Cool before slicing.
  • Slice into squares and serve at a brunch or as an appetizer. It goes well with mustard, bagels, bagel chips, cheese, vegetables, fruit, etc.
  • Enjoy!
