GARLIC FRIED RICE (SINANGAG)



Garlic Fried Rice (Sinangag) image

Sinangag, or Filipino Garlic Rice is the perfect way to use leftover rice, and I'm going to show you the ingredients and techniques to make this classic dish better. With fluffy grains of rice infused with garlicky oil, it's accented by loads of caramelized garlic.

300 grams cooked long grain rice ((about 2 cups))
2 tablespoons olive oil
20 grams garlic ((3 large cloves, minced))
1/4 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Use your hands to break up any clumps of rice.
  • In a large frying pan, add the olive oil and garlic and heat over medium-high heat, stirring regularly to ensure even browning. Fry the garlic until most of the sizzling subsides and the garlic is a golden brown color.
  • Remove half of the garlic from the pan, leaving the oil behind.
  • Add the rice and toss to coat evenly with the oil and garlic.
  • Stir-fry the rice until it's heated through. Season with salt and pepper to taste.
  • Serve the Sinangag hot and garnish with the reserved garlic. You can also top with some scallions for color.

1/2 lb bacon (chopped)
1 green pepper (seeded, chopped)
1 onion (minced)
1 small cabbage (shredded)
3 carrots (peeled, julienned)
2 garlic cloves (minced)
1 lb leftover roast pork (chopped)
2 cups cold cooked rice
1 cup frozen peas (thawed)
1/2 cup soy sauce

Steps:

  • In a wok fry bacon until crisp. Drain well.
  • Re-heat wok.
  • Add the pepper, onion, cabbage, carrots and garlic. Stir-fry 3 minutes.
  • Add pork. Cook 1 minute.
  • Add rice. Cook 1 minute.
  • stir in peas and soy sauce. Cook 30 seconds.

4 tablespoons vegetables or 4 tablespoons corn oil
2 tablespoons minced garlic
1/4 cup minced shallot
4 cups hot cooked rice
1 tablespoon soy sauce
1 teaspoon salt (MSG) or 1 tablespoon Accent seasoning (MSG)
1/4 teaspoon fresh ground pepper

Steps:

  • In a wok or frying pan, heat oil and fry garlic until light brown. Add shallots, rice, soy sauce, salt and pepper.
  • Stir the mixture constantly to prevent it from sticking to the pan and to ensure even cooking.
  • Cook and continue stirring for 10 minutes. Serve hot.
