My favorite hobby for the past 38 years has been collecting cookbooks. Presently I have close to 500! I found this recipe in one of my favorite books and it's been part of our holiday breakfast tradition for years.

1 unsliced round French or sourdough bread (1 pound)
4 ounces bulk Italian sausage
4 ounces bulk pork sausage
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup sliced fresh mushrooms
4 large eggs, lightly beaten
1/2 cup each shredded Monterey Jack and cheddar cheese

Steps:

  • Cut bread in half horizontally; hollow out top and bottom, leaving a 3/4-in. shell. Save removed bread for another use. , In a large skillet, cook the sausage, onion, green pepper and mushrooms until sausage is no longer pink and vegetables are tender. Remove mixture and set aside; drain all but one tablespoon of drippings. Add eggs; cook and stir gently until set. Stir in sausage mixture; remove from the heat. , Place bread bottom on a large sheet of foil. Combine cheeses; sprinkle half in the bread bottom, Spoon in egg mixture and cover with remaining cheese. Replace bread top and wrap tightly with foil. Bake at 400° for 25 minutes or until filling is heated through.

In only half an hour, prepare a quick and tasty dinner for your family! Stuffed French Bread is a simple recipe for a crispy loaf of bread stuffed with cheesy ground beef. You can serve it cut into pieces, as a Philly cheesesteak sandwich, or as an appetizer!

1 loaf french bread
1 Tablespoon olive oil
1 Lb. lean ground beef
1 small onion -chopped
1 teaspoon minced garlic
1/2 cup chopped leek (you can use other chopped vegetables: carrots, celery, green bell pepper...)
1 can cream of mushroom soup (or cream of celery or chicken soup)
1 Tablespoons milk ( or more if needed )
1 Tablespoon mustard
salt and pepper, to taste
1 1/2-2 cups shredded cheese
chopped parsley (optional)

Steps:

  • Preheat the oven to 350 F.
  • Slice French bread in half (lengthwise), scoop the center of each half and crumble it in a large bowl.
  • Place the halves of bread onto a baking sheet and set aside.
  • In a large skillet place 1 Tablespoon of olive oil and ground beef and cook over medium-high heat until the beef is browned, stirring occasionally. Add chopped onion, chopped leek (or other vegetables) and minced garlic and cook a few minutes until the vegetable is tender.
  • Add soup, mustard, salt and pepper to taste and cook for at least 5 minutes.
  • If the mixture is too thick add a little milk.
  • Add cooked beef mixture to the bread and stir to combine.
  • Spread the mixture in the center of one half of the french bread.
  • Spread shredded cheese in the center of other half of the french bread. and place the bread carefuly back on top of first half.
  • Bake 10-15 minutes (until the cheese is melted). If you don't want to brown the bread too much or to become too crispy, cover with aluminium foil.
  • Let it cool 5-10 minutes before slicing. Garnish with chopped parsley if you like.

Baked Stuffed French Toast image

This Baked Stuffed French Toast is a perfect breakfast recipe. Fill brioche with cream cheese and jam, let it soak overnight, and simply place the casserole in the oven the next morning.

12 slices brioche bread
8 ounces cream cheese
4 tablespoons raspberry jam ((strawberry jam and blueberry jam also work well))
7 large eggs
2 cups milk
1 teaspoon quality vanilla extract
1 pinch salt

Steps:

  • The night before, grease a large casserole dish. Check that you can lay out 6 slices of bread evenly across the bottom of your casserole dish. If they do not fit, trim the bread as needed so you can fit the stuffed french toast sandwiches evenly. I use this 13-inch x 10-inch casserole dish.
  • In a small bowl, mix together the cream cheese and raspberry jam.
  • Spread on a thick layer of the cream cheese mixture on a slice of bread and close it with a second slice to make a sandwich. Place it in the casserole dish. Repeat with the remaining slices. You will want to divide up all of the cream cheese mixture evenly.
  • Whisk the eggs together. Whisk in the milk, vanilla and salt.
  • Gently pour the mixture over the French toast sandwiches. Allow it to soak for 1 minute. Then carefully using the help of a spatula, flip each sandwich over. Don't let it soak too long because if the bottom bread becomes too soggy, it's hard to flip.
  • Cover and set in the refrigerator to soak overnight.
  • In the morning, take the french toast casserole out of the oven 30 minutes before baking. Preheat the the oven to 350°F / 175°C.
  • Bake in the middle of the oven for about 55 minutes. The Baked Stuffed French Toast Casserole is done when there's no more liquid left and the egg is set.
  • Remove from the oven and allow to cool for 5 minutes before serving.
  • Serve warm, topped with maple syrup, whipped cream and more jam.

1 loaf french bread
1 pound lean ground beef

1 can cream of mushroom soup
2 tablespoons milk
2 teaspoons Worcestershire sauce

1 1/2 cups shredded cheddar cheese
1/2 tablespoon chopped parsley (optional)

Steps:

  • Preheat oven to 350° F Slice the french bread in half, lengthwise, so you have two equal pieces. Scoop out the bread in the center of each piece. Place bread in a large bowl and tear into small chunks. Set the two halves of french bread onto a large baking sheet. Set aside. Brown the ground beef and onion in a large skillet, over medium-high heat. Drain any grease. Add the celery and garlic to skillet. Cook a few minutes until celery is tender. Next, add soup, milk and Worcestershire sauce. Season with salt and pepper. Stir and cook mixture until heated; another 5 minutes or so. Add the beef mixture to the bread in the large bowl. Stir to combine. Pour mixture into the center of one-half of the French bread. Spread out evenly. Top the mixture with the shredded cheese. Top with the other half of bread. Bake for 10 to 15 minutes, or until cheese is melted. Remove from oven and let stand 5 minutes before slicing and serving. Enjoy!

Chicken Parmesan Filling:
1 loaf of french bread
2 cups of cooked breaded or unbreaded cooked chicken sliced
2 cups Italian marinara sauce of any kind you like homemade or store-bought
1/2 cup Parmesan cheese or more for the top
1 tablespoon Italian chopped fresh basil
1/2 teaspoon dried oregano
2 cups shredded whole milk mozzarella
Mix the chicken with sauces and half the mozzarella, adding the rest of the ingredients. The rest of the cheese goes on top of the filling.
Chicken Alfredo Spinach Filling:
1 loaf of French bread
1/2 cup chopped roasted red bell pepper, thoroughly drained and patted dry
2 teaspoons finely chopped garlic
1 cup packed baby spinach, coarsely chopped
2 cups of breaded chicken tenders chopped or deli rotisserie chicken shredded off the bone
1 jar (15 oz) Alfredo pasta sauce
salt, pepper, and cayenne pepper to taste
1 cup shredded Italian blended cheese and extra for the top
4 tablespoons Parmesan grated cheese
Mix all filling ingredients together reserving more Parmesan and Italian shredded Italian cheese for the top.
Chicken Cordon Bleu
1 loaf of french bread
2 cups of cooked chicken, bread, breaded or unbreaded
8 ounces of chopped deli ham
8 ounces of Swiss cheese
8 ounces of Havarti cheese shredded
1 jar of alfredo sauce or cheese sauce of any kind
Mix the chicken with alfredo and shredded Havarti cheese.
Fill the bread with the chicken topping with the ham, then sliced swiss cheese.
Buffalo Chicken Filling:
1 loaf of French bread
2 or 3 cups of cooked chicken about 1 pound or so ( use rotisserie, baked chicken nuggets cut up, fried chicken off the bone, bread chicken tenders cut up, or whatever chicken you like off the bone cooked
8 ounces cream cheese, softened
1/3 cup sour cream
1/3 cup mayonnaise
1/4 to 3/4 cup hot sauce,
salt and pepper to taste
1/2 teaspoon chili powder
1/2 teaspoon granulated garlic powder
1/4 cup blue cheese dressing or ranch dressing
1 cup freshly grated extra-sharp Cheddar cheese and more for the top saving some for the top around 1/2 cup
1 cup Italian blended mozzarella cheese saving some for the top around 1/2 cup
Mix all filling ingredients together reserving some cheese.
Taco French Bread Filling:
2 cups of cooked chicken or 1 pound cooked ground beef
1 package taco mix
1 can rinse black beans or pinto beans
2 cups shredded extra-sharp cheddar cheese
1/2 cup taco sauce if the ground beef is dry
Optional: 1 small can minced chilies peppers
Cook the meat with taco seasoning to the package mix instructions.
Add the beans, peppers, and sauce if using.
Fill bread and top with cheese.
Note: Bake as directed below.

Steps:

  • For filling the French bread you can do this two different ways:
  • Using a serrated knife, cut French bread in half, and cut each half lengthwise through the center.
  • Hollow out each piece, removing bread and leaving a 1/2-inch shell.
  • Cut removed bread portions into 1-inch pieces, and set aside.
  • Note: use the extra bread for making croutons.
  • Fill with whatever filling you choose, then sprinkle with cheese and bake them both until cheese melts and heated around 25 minutes on 375 degrees.
  • Second Style Whole Loaf Stuffed French Bread:
  • Cut the bread in half lengthwise and scoop out some of the bread on the bottom of just one side of the loaf.
  • Spoon the filling in the hollowed out part and spread a little on the top half.
  • Cover both sides with shredded cheese on top, put it together, and wrap the whole loaf in foil.
  • Place it on a cookie sheet.
  • Bake at 375 degrees until cheese is melted and heated for around 20 minutes.
  • All hot bread is made the same, hollow with bread, fill, bake until cheese is melted. Let sit for around 10 minutes before slicing.
  • Note: The cheeses we use are extra sharp cheddar, try pepper jack, swiss, blue cheese crumbles, gouda, Havarti, provolone, mozzarella, or whatever kind you prefer.
  • If using a cold filling, hollow fill, and slice.
  • Other Filling Suggestions:
  • Try a California Style cold French bread filled with ground taco seasoned beef, diced cucumbers, tomatoes, lettuce, and guacamole
  • Make a Philly style with shaved roast beef, swiss cheese, sauteed onions
  • Fill the French bread with deli corned beef, sauerkraut, thousand island dressing, and swiss cheese for a Reuben
  • Pepperoni jarred meat sauce and shredded mozzarella
  • Sloppy joe filling with cheddar cheese
  • Meatballs, sauce, and mozzarella
  • Sausage, peppers, onions, marinara sauce, and mozzarella

2 teaspoons butter
2 garlic cloves, smashed
½ baguette
¼ cup melted butter
1-2 teaspoons dill, minced
3 garlic cloves, crushed

Steps:

  • Drizzle the meat with olive oil and season with salt and pepper.
  • Heat 1-2 teaspoons of oil in a pan over high heat and add the beef.
  • Fry for 2-3 minutes on each side.
  • Add the butter and garlic cloves, lower the heat, and cook for 1 minute more.
  • Cut off the half baguette's end and scoop out the crumb.

  • Prepare all ingredients. Allow cream cheese to reach room temperature.

cream cheese
choice jelly or jam
butter, melted
powdered sugar

Steps:

  • Cut two slices French bread diagonally, each slice about an inch thick, OR.
  • Cut just one slice French bread diagonally, about 2 inches thick, and carefully open one end and remove some of the bread, making a pocket.
  • Mix cream cheese and preserves.
  • Spread cream cheese/preserve mixture on one side of sliced bread, and top with remaining slice, making a sandwich OR.
  • Stuff pocket in the 2 inch slice of bread with cream cheese/preserve mixture.
  • Spread the outside of bread with melted butter.
  • Place on grill.
  • When browned to your likeness, dust with powdered sugar.

2 (15-inch-long) French baguettes
1 pound bulk breakfast sausage
2 tablespoons chopped jalapenos
1 cup chopped green bell peppers
1/4 cup chopped green onions (green and white parts)
8 ounces cream cheese, at room temperature
8 ounces sour cream
8 ounces grated sharp Cheddar
1 teaspoon Emeril's Original Essence, recipe follows
Chopped fresh parsley leaves, for garnish
Corn or tortilla chips, for dipping, optional
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 350 degrees F.
  • Using a serrated knife, trim the upper quarter off the length of the top of each loaf. Hollow out the center of the loaves, leaving a 1/2-inch-thick shell. Set aside.
  • Brown the sausage in a large skillet over medium-high heat for about 5 minutes, stirring to break up any clumps. Add the jalapenos, bell peppers, and green onions. Cook, stirring, until the vegetables are soft, 3 to 4 minutes. Add the cream cheese, sour cream, and Cheddar and stir until completely melted, about 2 minutes.   • Place 1 loaf Rhodes white bread on a greased baking sheet. Cover with sprayed plastic wrap. Let it thaw slightly without letting it rise too much. Remove the plastic wrap and roll the bread into a longer loaf (the length of the pan). Place the plastic wrap back on top of the bread and let rise at room temperature until double in size. Cut 5 slits diagonally across the top of the loaf with a serrated knife. Bake at 350 degrees Fahrenheit for 15-20 minutes or until golden brown. Remove from oven and allow to cool. (TIP: Thaw loaf in the refrigerator overnight. Take it out of the fridge in the morning, roll it, and continue with the rising and baking instructions.)
  • Whisk the eggs, sour cream, and sliced green onions together. Season with salt and pepper. Melt 1 Tbsp of butter in a skillet and soft scramble the eggs. Set aside (keep warm).
  • Cook and crumble sausage; drain any fat. If using pre-cooked sausage crumbles, heat in microwave until hot (keep warm).
  • Cut the loaf of bread in half width-wise. Flatten the inside of the bread slightly to make room for the fillings, by pressing down with your fist/fingers. Sprinkle 1 cup of cheese inside the bottom half. Top with scrambled eggs, then sausage crumbles. Place the remaining 1 cup of cheese inside the top half of the loaf. Stack the two halves together carefully, so as to not spill the filling.
