I made this one up, and my husband says, "You need to put this one in your online recipe stuff". Well, that's a very nice compliment from him, so here it goes! It can be modified with your favorite marinade, to create a different favor to compliment any meal. We serve this over white rice. Time listed does not include marinating time.

4 boneless skinless pheasant breasts
1/4 cup soy sauce
2 garlic cloves, sliced
1/4 cup onion, diced
2 tablespoons honey
1/4 cup rice vinegar
1/2 cup flour
2 -4 tablespoons butter
1/2-1 cup chicken broth
1/4 cup cilantro

Steps:

  • Marinate the pheasant breasts over night (or for as long as possible) in your favorite marinade, or mix together the soy sauce, garlic, onion, honey and vinegar for a yummy asian-inspired marinade.
  • Remove pheasants from marinade, and coat in flour. We do not rinse off marinade, or allow to drip off, so that the flour makes a nice coating on the pheasant.
  • Heat a frying pan with butter, and place coated pheasant in pan.
  • Allow to brown on each side, then add 1/4 cup of chicken broth, or enough to create some liquid on the bottom. Add cilantro.
  • Cover and allow pheasant to cook for 4-6 minutes per side, until cooked through. Don't let all the chicken broth cook off, or it could burn. Add more if necessary.
  • Once done, take pheasant out of pan, and add chicken broth, a little at a time, scraping the bottom of the pan to create a gravy.
  • Serve with rice, or noodles.
  • Variations:
  • instead of chicken broth, use chicken noodle soup and some water! Or,
  • use your favorite marinate. Or,
  • after browning, and adding liquid (or soup with some water), put it in a 350 degree oven for 20-30 minutes - then proceed as directed.

1 tablespoon vegetable oil
1 -2 pheasant, trussed
salt
fresh ground black pepper
14 fluid ounces chicken stock
1 1/2 tablespoons wine vinegar
1/4 teaspoon cayenne or 1/4 teaspoon red pepper
1 tablespoon butter
1 tablespoon all-purpose flour
2 -3 tablespoons dry sherry
white pepper

Steps:

  • Melt the first butter with the oil in a heavy, lidded pan.
  • Brown the pheasants on all sides.
  • Season lightly with the salt and black pepper.
  • Add the stock, vinegar, cayenne or red pepper and bring to simmering point.
  • Cover and cook gently for 50-60 minutes, until tender.
  • Transfer the pheasants to a heated serving dish and keep hot while you finish the sauce.
  • Work the butter and flour together and gradually whisk small pieces into the stock, stirring constantly until it has all been absorbed.
  • Stir in the sherry and adjust the seasoning.
  • Simmer for 2 minutes, then spoon over the pheasants and serve.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (4 ounces) sliced mushrooms, drained
1/2 cup apple cider
1/3 cup chopped onion
4 teaspoons Worcestershire sauce
1/2 teaspoon salt
1 garlic clove, minced
1/4 teaspoon dried tarragon
Paprika

Steps:

  • Place pheasant in an ungreased 11x7-in. baking dish. Combine the next eight ingredients; pour over pheasant. Sprinkle generously with paprika. Bake, uncovered, at 325° for 1-1/2 hours until a thermometer inserted in thickest part of thigh reads 170°-175°, basting occasionally. Sprinkle again with paprika before serving.

This recipe uses wild pheasant. It came from my grandmother to my mother to me. We traditionally served this recipe at Thanksgiving (during pheasant season). During cooking, it forms a sauce or gravy that thickens best if stirred just a little when the sherry is added.

1 pheasant, cleaned and cut up
1 1/2 cups water
1 clove garlic
1 medium-size onion, sliced and separated into rings
1 (4 ounce) can mushroom pieces (can also use buttons)
6 pieces rosemary
1/4 teaspoon dry parsley flakes
2 ounces cooking sherry

Steps:

  • Roll cut-up bird pieces in flour and brown in hot oil.
  • Place browned pieces in baking dish and add remaining ingredients, except sherry, in order listed.
  • Simmer in 300 degree oven for 2 to 2 1/2 hours or until tender.
  • Pour cooking sherry over bird about the last hour of cooking.

The original of this is in The Encyclopedia of Creative Cooking edited Charlotte Turgeon. I only had one chance to try cooking pheasant, and this is the recipe I used. While the original recipe calls for clear stock, and that's what I have written in my "family cookbook" I think I may have used chicken broth instead. I have to admit that I'm not sure, as it was so long ago. I served the pheasant with peas and pearl onions, mashed potatoes, and we had baked Alaska for dessert.

1 pheasant
2 tablespoons flour
1/2 cup clear stock
1/2 cup white wine
seasoning

Steps:

  • Melt butter or margarine in a heat-proof Dutch oven.
  • When hot, sauté the pheasant gently all over until it's golden brown.
  • Remove the bird.
  • Add flour, stock and wine, blend smoothly.
  • Bring to a boil and add seasoning.
  • Return bird to the Dutch oven and cover.
  • Cook in preheated 350 degree oven, turning bird while cooking, for 35 to 40 minutes, or until bird is tender.

Posting this per a request. I haven't tried it, but it comes from a much loved book-The Poultry and Game Cookbook. It's supposedly a Bavarian recipe.

1 -2 pheasant
10 slices fatty bacon, rinds removed
2 tablespoons butter
2 tablespoons vegetable oil
1 cup dry white wine
12 peppercorns
2 bay leaves
750 g sauerkraut, rinsed and drained
1 cup beer
250 g kransky sausage or 250 g cabana sausage

Steps:

  • Wrap the pheasants with the bacon, securing it with string.
  • Loosely tie the legs together.
  • Melt the butter and oil in a heavy pan over moderate to high heat and fry the pheasants on all sides until the bacon fat starts to run.
  • Drain the excess fat from the pan, reduce the heat and pour the wine over the pheasants.
  • Add the peppercorns and bayleaves and bring the wine to simmering point.
  • Cover the pan tightly and cook for 30-40 minutes, or until the birds are almost tender.
  • Pack the sauerkraut around the sides of the birds and pour the beer over.
  • Cover and simmer for 10 minutes, then add the sausage, cover and heat through.
  • To serve, carefully lift the pheasants from the pan.
  • Snip the string and remove without disturbing the bacon.
  • Place the birds on a warmed serving dish and keep hot.
  • Remove the sausage and set aside for a moment.
  • Adjust the seasonings of the sauerkrat before arranging it around the pheasants.
  • Discard the bayleaves and peppercorns if you find them.
  • Quickly cut the sausage into 1cm slices and lay over the sauerkraut.
  • Using snips or poultry shears, cut into halves or quarters to serve, trying not to disturb the bacon slices.

1 cleaned, ready-to-cook pheasant (about two pounds), cut in serving pieces (must check weight)
Salt to taste, if desired
Freshly ground pepper to taste
2 tablespoons butter
2 whole cloves garlic, peeled
1 bay leaf
2 sprigs fresh thyme or 1/2 teaspoon dried
3/4 cup dry white wine
3 tablespoons cold butter
2 tablespoons finely chopped parsley

Steps:

  • Sprinkle the pheasant pieces with salt and pepper.
  • Heat the butter in a skillet and add the pieces skin side down. Cook about two or three minutes until skin is golden brown. Turn the pieces and continue cooking about three minutes more.
  • Add the garlic, bay leaf, thyme and wine. Cover and cook 20 minutes or until the pheasant is tender.
  • Transfer the pheasant pieces to a serving dish. Swirl the three tablespoons of cold butter into the pan sauce. Pour and scrape the sauce (including garlic and thyme sprig) over the pheasant and serve sprinkled with chopped parsley.

2 pheasants (about 2 1/2 pounds each), each cut into 8 serving pieces
Salt and freshly ground pepper to taste
4 tablespoons finely chopped shallots
1/2 cup finely diced carrots
1/2 cup finely diced celery
16 small white mushrooms
16 small white pearl onions
1 teaspoon finely chopped garlic
6 juniper berries
2 whole cloves
1 tablespoon butter
2 tablespoons flour
2 tablespoons Cognac
4 cups cabernet wine
1 cup fresh or canned chicken broth
1 bouquet garni consisting of 4 parsley sprigs, 1 bay leaf and 4 sprigs of fresh thyme or 1 teaspoon dried

Steps:

  • Heat the oil in large casserole or heavy cast-iron skillet over medium-high heat. Add the pheasant pieces skin side down. Sprinkle with salt and pepper to taste. Cook, stirring occasionally, until the meat is golden brown. Add the shallots, carrots, celery, mushrooms, pearl onions, garlic, juniper berries and cloves. Cook, stirring, until the vegetables are wilted, about 2 to 3 minutes.
  • Drain the fat and add the butter and flour; stir and blend well. Pour the Cognac over the pheasant pieces and let it ignite.
  • Add the wine, chicken broth and bouquet garni. Stir and blend well. Bring to a boil, cover and simmer about 30 minutes, or until tender. Remove the bouquet garni and serve hot.

2 teaspoons paprika
2 teaspoons butter
1/2 cup finely chopped onions

1/4 cup dry white wine
1/3 cup heavy cream
1/3 cup sour cream

Steps:

  • Sprinkle the breasts with salt, pepper and paprika.
  • Melt the butter in a heavy nonstick skillet large enough to hold the pheasant breasts in one layer. Add the breasts and cook over medium-high heat for 3 minutes or until they are lightly browned. Turn the breasts and cook for 3 minutes more. Add the onions and thyme. Stir and cook until the onions are wilted. Add the wine to dissolve the brown particles that cling to the bottom of the pan. Continute cooking until most of the wine evaporates.
  • Add the heavy cream and cook until the liquid is reduced by half. Add the sour cream, blend well and bring to a boil, stirring until smooth. Taste and adjust the seasonings and serve very hot.
