My Pesto Alfredo Sauce recipe is creamy, cheesy and amazingly easy to make. Perfect over pastas, chicken and veggies! Makes 3 cups.

4 tbsp butter
2 cloves garlic (minced)
1 1/2 cups heavy cream
2 cups Parmigiano Reggiano or Parmesan (2.5 ounces total, freshly grated)
1/2 tsp salt
1/4 tsp white pepper
1/4 tsp freshly grated nutmeg
1/8 tsp black pepper
1 cup pesto ((See Below))
3/4 cup pine nuts
4 garlic cloves
1/8 tsp salt
1/8 tsp red pepper flakes
3/4 cup Parmesan-Reggiano or Romano cheese (freshly grated)
3 cups fresh basil leaves (packed)
1 cup Extra Virgin Olive Oil

Steps:

  • Add all ingredients except for basil and olive oil to food processor. Blend with pulsing motion for a minute or so to breakdown and form a paste.
  • Next add the basil and with processor running slowly add the oil in a steady stream to blend thoroughly.
  • This makes 3 cups of fresh basil pesto which can be used over hot pasta or as a dipping sauce. You need 1 cup for this Pesto Alfredo Sauce recipe.
  • Melt the butter in a large, deep skillet (cast iron type) over medium heat. Add the garlic and sauté until fragrant, about 30 seconds.
  • To the skillet, whisk in the heavy cream until combined and simmer for 3 to 4 minutes.
  • Whisk in the freshly grated Parmesan cheese, kosher salt, white and black peppers and nutmeg. Cook, whisking occasionally, until the sauce thickens enough to coat the back of a spoon, 3 to 4 minutes.
  • Remove from heat and whisk in 1 cup of the fresh pesto.
  • Serve immediately over fettuccini (or pasta of choice), meatballs, sautéed chicken or as a dipping sauce for, or over, vegetables or breadsticks.

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the chicken, cheese blend, spinach, tomatoes, Alfredo sauce, milk and pesto. Drain pasta and add to chicken mixture; toss to coat., Transfer to 2 greased 8-in. square baking dishes. In a small bowl, combine the bread crumbs, Parmesan cheese and oil; sprinkle over casseroles., Cover and freeze 1 casserole for up to 3 months. 2 tablespoons unsalted butter
3/4 cup heavy cream

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente, adding the spinach during the last 30 seconds of cooking. Reserve 1 cup cooking water, then drain the pasta and spinach.

12-16 oz pasta your choice cooked
2 clove chopped garlic divided
1 lb large frozen shrimp thawed or fresh shrimp with tails removed. may also use chicken breast sliced in 2" wide and thick piecess.
3 1/2 oz your choice. i use a 1/2 container of buitoni pesto with basil( in refrigerated section of store)
3 Tbsp butter divided
1 1/4 c heavy cream
1 Tbsp corn starch
3-5 turns of fresh black pepper
4 Tbsp parmigiano-reggiano, grated
OPTIONAL
2 lb chicken tenders cut up
2-3 c steamed broccoli or asparagus if desired
5-7 add some chopped sun dried tomatoes if desired

Steps:

  • 1. Boil water for pasta. While that is getting ready. In a large non stick fry pan. Melt one tablespoon of butter. Add 1 clove of chopped Garlic and saute for a minute.
  • 2. (Note: if using chicken. Cook chicken until no pink shows. Add Garlic last. Follow same steps for shrimp. Remove from pan and set aside) Add thawed shrimp, or chicken to butter. Saute for a minute to heat. Remove Shrimp , or chicken with Butter and Garlic to a plattter. In to same pan add 2 more tablespoons of butter,and remaining chopped Garlic. Cook for 1 minute. Add in the cream, and corn starch. Cook to boiling stirring constantly.
  • 3. While that is cooking boil pasta with 1 teaspoon of salt. in the boiling water. To the cream in pan. add the of pesto,and cracked black pepper. Cook to boiling. Reduce heat to medium. add the parmigiano-reggiano. Stir until it thickens a bit. Add the shrimp with Garlic and butter to Alfredo sauce. Stir to combine. Remove from heat.
  • 4. Serve over the cooked drained pasta. Add steamed Broccoli or Carrots if desired.

1/3 cup prepared homemade pesto
2 Tbsp butter
2 large clove of garlic
1 1/4 cups heavy whipping cream
½ cup fresh grated Parmesan cheese

2 Tbsp sour cream
Salt and fresh cracked black pepper
1/2 cup Mozzarella cheese
More fresh grated Parmesan for topping

Steps:

  • Cook tortellini in a large pot with some salted water, according to the package. Drain and set aside.
  • In a small sauce pot, melt butter over medium heat and add pressed garlic.
  • Saute until fragrant (just a few seconds) and slowly add heavy cream WHILE whisking. Heat through on medium heat, keep stirring slowly.
  • Add sour cream, Parmesan cheeses, salt and pepper. Keep cooking on medium-low heat for about 5-7 minutes, stirring often, until all smooth.

2 tsp olive oil
4 boneless skinless chicken breast halves (pounded to an even thickness)

1/2 cup butter
8 oz. cream cheese (cut into small cubes)
1 1/3 cup heavy cream (or half and half for a lighter version)
1 cup grated Parmesan Cheese
1/4 tsp salt
1/4 tsp pepper
1/3 cup julienned sun dried tomatoes (in oil, drained)

Steps:

  • Boil the penne in a large pot of water, according to package instructions.
  • Meanwhile heat the 2 tsp of olive oil in a large skillet over medium heat. Season both sides of the chicken breast halves with salt and pepper, then cook in the skillet for 3 to 4 minutes per side, until cooked through. Remove the chicken from the skillet to a plate, cover each chicken breast with 1 tsp of prepared basil pesto, then cover the plate loosely with foil.
  • In the same skillet add the butter and garlic and stir, to loosen any browned bits from the bottom of the skillet. Once the butter is melted add the cream cheese and whisk until the cream cheese is mostly melted. Reduce the heat to medium low and gradually add the cream to the skillet, while continuing to whisk.
  • Once the mixture is smooth add in the parmesan cheese, salt, pepper and sun dried tomatoes. Whisk until melted and smooth again. Drain the cooked pasta and add it directly to the pan with the sauce. Stir to coat and then serve alongside with the basil pesto chicken breasts. Enjoy right away!

Homemade skinny alfredo sauce blended together with either homemade pesto or store-bought pesto make this dish flavorful and surprisingly easy to make. Ready in about 15 minutes!

1 cup homemade pesto (store bought would work fine as well)
1 tbsp butter
1 tbsp minced garlic
4 tsp all-purpose flour
2 cups milk (I used 2%)
1 tsp salt
1½ cups Freshly grated Parmesan Cheese
4 tbsp reduced fat cream cheese (2 oz)

Steps:

  • Melt the butter in a skillet or large sauce pan over medium heat
  • Add the garlic and saute until the garlic is slightly soft, about 1 minute
  • Add in the flour and stir with a wooden spoon for approximately 1 minute
  • Stir/whisk in the milk and salt
  • Stir constantly until slightly thickened - approximately 2-3 minutes
  • Add the cream cheese and Parmesan cheese; stir until well blended and cheese is melted - approximately 2-3 minutes
  • Stir in one cup of pesto
  • Turn heat down to low or a simmer and allow sauce to warm thoroughly
  • Cook pasta according to package instructions, drain
  • Add pasta to the pesto alfredo sauce, or simply serve the sauce on top of the cooked pasta
  • Stir gently so that all the noodles are coated
  • Top with toasted pine nuts, additional Parmanesen cheese, tomatoes or even chicken if desired
  • Serve immediately
  • Enjoy!

Pesto or Alfredo? The summery perfection of basil in olive oil or creamy, cheesy, richness? How about both? This simple recipe came about when I didn't have enough of either sauce to coat a big pan of pasta for a potluck dinner. Its a great change from the usual pasta in marinara and, while simple enough for a family meal, is special enough for guests. Its particularly good for potlucks because you KNOW that there are going to be 3-4 pans of pasta in assorted tomato sauces already. ;)

1 cup milk (or 1/2 cup milk and 1/2 cup cream)
8 ounces cream cheese, softened
1 dash garlic powder (optional)
1 cup basil pesto (see notes)
1/2-3/4 cup parmesan cheese (see notes)

Steps:

  • Heat cream cheese, milk (or milk and cream), and garlic together in a small saucepan. Bring just barely to boiling.
  • Reduce heat and simmer, stirring frequently, until cream cheese is fully melted into the milk.
  • Stir in the pesto and reheat to just barely boiling again.
  • Stir in Parmesan and simmer a few moments until the sauce begins to thicken.
  • Remove from heat and serve over any pasta.
  • Note on Pesto: Best made with a pure basil pesto rather than a basil-and-spinach pesto. Homemade or commercial is fine.
  • Note on Parmesan: I freeze my homemade pesto without the cheese so I use the full 3/4 cup. If your pesto has a generous amount of cheese you will not need as much. Not that plenty of Parmesan is a bad thing. :D.
  • If you toss this together with pasta, chunks of cooked chicken, and broccoli florets then spread it in a baking pan with plenty of shredded Mozzarella on top you get a terrific casserole.

2 garlic cloves
1/3 cup olive oil

  • Finely chop basil, pine nuts and garlic in processor. With machine running, gradually add olive oil through feed tube and process until smooth. Mix in 1/2 Parmesan. Transfer pesto to small jar. (Can be prepared 4 days ahead. Pour enough olive oil over sauce to cover. Cover and refrigerate.)
  • Bring cream to boil in heavy medium saucepan. Whisk in pesto. Season sauce and remaining 1/2 cup Parmesan in large bowl. Toss to coat pasta evenly and serve.

  • Cook penne pasta according to package directions. Once noodles are cooked strain, then immediately rinse under cold water, then set aside.

Let the cream simmer for about two minutes to start thickening it up. Add the remaining one-teaspoon salt, the pepper, one cup of the parmesan cheese, and pesto. Stir to combine, and when the cheese has melted, remove the pan from the heat.
  • Add the pasta and chicken and about ½ cup of the reserved pasta water and stir to combine. If the sauce seems too thick, add additional pasta water, about a tablespoon at a time.
