- Cover with cold water to where eggs are just immersed.
- Cook to boiling, immediately remove and cover with lid; let stand 20 minutes.

SOFT BOILED EGGS

Steps:
- Fill a medium sized saucepan with water and bring to a rolling boil.
- Make sure your eggs aren't fridge cold. By having the eggs at room temperature, it will be less of a shock for the egg reaching the hot water and therefore less likely to crack. You can also use an egg pricker to make a very small hole in each egg before boiling, which will also reduce the chances of it cracking in the heat. Slowly lower the eggs into the water using a spoon.
- Set your timer for 4-5 mins for runny/dippy eggs to serve with soldiers, or 6-7 mins for soft-boiled eggs for a salad. If serving in a salad, plunge the eggs into a bowl of cold water as soon as the timer goes off - this will stop them cooking and cool the shells quickly for peeling.

PERFECT BOILED EGGS
If your goal is perfectly smooth, blemish-free boiled eggs that jump out of their shells every single time, I've got bad news: No technique in the world can promise that level of perfection. But armed with data from scientific tests done with more than 90 testers and more than 700 boiled eggs, this technique for boiled eggs - technically steamed, as they cook in just an inch of water - will maximize your odds. Fresher eggs will take slightly longer to peel, but they should peel just as cleanly as older eggs. The eggs in this recipe should be cooked straight from the refrigerator; reduce cooking times by 1 minute if using room-temperature eggs.

Steps:
- Find a lidded saucepan large enough to allow your eggs to comfortably fit on the bottom in a single layer. Add 1 inch of water, cover, and bring to a boil.
- Gently lower eggs into the saucepan using a slotted spoon or a steamer basket. (It's O.K. if the eggs are partly submerged on the bottom of the pot, or elevated on a steamer rack and not submerged at all.) Cover pan and cook eggs, adjusting the burner to maintain a vigorous boil, 6 minutes for a warm liquid yolk and firm whites, 8 1/2 minutes for a translucent, fudgy yolk, or 11 minutes for a yolk that is just barely firm all the way through.
- Drain eggs, then peel and eat immediately, or transfer them to a plate and allow them to cool naturally before storing in the refrigerator for up to a week directly in their shell. (A small dot made with a permanent marker on the top of each cooked egg will ensure you don't mix them up with the raw eggs.) Do not shock them in an ice bath after cooking; this makes them more difficult to peel.

Steps:
- Take a saucepan and half fill it with cold water from the tap. Gently lower the eggs into the saucepan.
- Place the pan over a medium heat. When the water reaches a simmer, start the timer so you can precisely time the cooking process. If you gently stir the eggs in a clockwise direction, the movement of the water will help centre the yolks.
- Simmer the eggs in the saucepan for the length of time that suits your boiled eggs preference. Steps:
- Bring a large pot of water to a boil. Once the water is boiling, gently place the eggs in the water (I use a large slotted spoon to lower them in the pot). Make sure the eggs are in a single layer in the pot... they shouldn't be stacked. And the boiling water should come up over the egg.
- For soft boiled eggs, cook 6-7 minutes, for hard boiled eggs cook for exactly 11 minutes. See chart on this page for cooking times.
- Once the time is up, bring the pot over to the sink, drain some of the hot water out, and run cold tap water over the eggs. Let the eggs sit in the water for a few minutes until they start to cool all the way through.
- You can either peel them now under the cold water, or put them directly in the fridge and peel later. Either way, your eggs will come out perfectly. Every. Single. Time.

Steps:
- Place eggs in a large pot of cold water, with enough water to completely cover the eggs.
- Turn the stove on high. Raise to a boil. Add salt and vinegar. While this is going on, prepare a bowl of the ice water large enough to immerse the eggs after boiling.
- Cook for eight minutes, if you want a hard boiled egg. Soft boiled eggs are done in six minutes.
- Immediately remove eggs using a slotted spoon, and place in an ice water bath. This stops the cooking process, and keeps them from becoming overcooked.

Place the eggs onto the rack, creating an even layer across the bottom. (You don't want them to be stacked on top of each other.)
- Place eggs in a single layer in the bottom of a pot. Cover completely with cold water. Cover with lid and place on stove.

- Set a Timer for 6 Minutes. 6 minutes will give you a perfect soft boiled egg if you want hard boiled egg set the timer to 8 minutes.
- Cover With the Lid and Start the Timer. The reason this method works is because we are cooking the eggs with the steam, not the water. Steam is a constant 212f or 100c, this lets the eggs cook quickly and evenly with out giving the yolk time to set.
- Now That the Timer Has Gone Off Take the Pot Off the Heat Straight Away. Run cold water over the eggs under the water doesn’t heat up. This will stop the eggs from overcooking.

- Use the right eggs. It is best to use eggs that are just past peak freshness, though not expired or bad. The outer membrane in a fresh egg tends to cling to the shell more than in an older egg, making the peeling process more difficult.
- Place the eggs in a pot. Place the eggs in a pot, cover completely with cold water, and put the pot on the stove. Add in a small splash of white vinegar, if desired.
- Bring the cold water to a boil over high heat. After your eggs, water and a tiny splash if vinegar are in your pot, bring the cold water to a boil over high heat, leaving the pot uncovered.
- Give the eggs an ice bath. When the timer goes off, remove the eggs from the hot water and place them in a large bowl of ice-cold water to halt the cooking process and lower the temperature of the eggs.
- Peel the eggs. Roll the egg under your palm on the counter so that the shell is broken and cracked all over, and then submerge the egg in your bowl of room-temperature water.

- Remove your eggs from the fridge about 10 minutes prior to boiling them if possible to allow them to warm up a bit – this will limit the shells from cracking when you place the cold eggs in the boiling hot water
- Add cold water to a saucepan – fill it 3/4 of the way full. You want to choose a saucepan that is large enough to allow the eggs to lay in a single layer once added to the pot
