1 (3 ounce) package lime Jell-O®
1 (8 ounce) can crushed pineapple, drained
1 (8 ounce) package cream cheese, softened
½ cup mayonnaise
½ cup chopped pecans
1 (3 ounce) package cherry or strawberry Jell-O®

Steps:

  • Prepare lime gelatin according to package directions. Refrigerate until partially set, about 1 hour. Stir in pineapple. Pour into an 8-cup bowl or mold coated with nonstick cooking spray. Cover and refrigerate until firm, about 3 hours.
  • In a small mixing bowl, beat cream cheese and mayonnaise until smooth; stir in pecans. Spread over lime gelatin. Refrigerate until firm, about 2 hours.
  • Prepare strawberry gelatin according to package directions; cool slightly. Carefully spoon over cream cheese layer. Refrigerate until firm about 3 hours or overnight.

A creamy lime gelatin and yogurt mixture is topped with a layer of strawberry gelatin and strawberries in this refreshing easy-to-make dessert.

2 cups boiling water, divided
1 pkg. (4-serving size) JELL-O Lime Flavor Sugar Free Gelatin
1/2 cup cold water
1 cup vanilla low-fat yogurt
1 pkg. (4-serving size) JELL-O Strawberry Flavor Sugar Free Gelatin
1 pkg. (10 oz.) frozen strawberries in light syrup (not thawed), undrained
1/2 cup thawed COOL WHIP LITE Whipped Topping

Steps:

  • Stir 1 cup of the boiling water into dry lime gelatin mix in medium bowl at least 2 min. until completely dissolved. Stir in cold water. Refrigerate 45 min. or until slightly thickened (consistency of unbeaten egg whites). Stir in yogurt with wire whisk until well blended.
  • Pour into 2-qt. serving bowl. Refrigerate 15 min. or until gelatin mixture is set but not firm (gelatin should stick to finger when touched and should mound). Stir remaining 1 cup boiling water into dry strawberry gelatin mix in medium bowl at least 2 min. until completely dissolved. Add frozen strawberries; stir until strawberries are separated and gelatin is thickened (spoon drawn through leaves definite impression). Spoon over lime gelatin layer.
  • Refrigerate 2 hours or until firm. Top with the whipped topping. Store leftover dessert in refrigerator.

2 tablespoons sliced frozen sweetened strawberries, thawed
1 1/2 ounces pineapple juice
1 1/2 ounces papaya nectar
1 1/2 ounces apple juice
1 1/2 ounces club soda
1 fresh strawberries (to garnish)

Steps:

  • Fill a 14-ounce glass with ice. Pour strawberries with syrup, and juices into a shaker and shake well.
  • Pour drink over the ice, and add a fresh strawberry to the rim of the glass.
  • Splash the soda over the top and serve with a straw.
  • (Use the frozen, sweetened strawberries that come in boxes in the freezer section for this one. Be sure to thaw 'em first.).

When local strawberries are in season, they are best served with a very simple presentation - like this one. Smaller varieties of strawberries are generally better. Our local pick-your-own farmer is very frank: "The big ones are in this field, the good ones are in that field." I am always amazed that plenty of people will settle for the big ones, just because they are faster to pick. Fuggedaboudit! Life is too short to pick strawberries fast. Get the good ones.

2 cups ripe small strawberries
2 tablespoons honey
1 the lime, juice of
1/4 teaspoon finely grated lime zest
1/2 teaspoon grated fresh ginger

Steps:

  • Wash the strawberries, and hull them, and cut them in half if they are large.
  • (Which they are not, right? See above.) Put them in the bowl from which they are to be served.
  • Grate the zest from the lime, and put it in a small saucepan (or a small microwaveable bowl) with the honey, the lime juice, and the ginger.
  • Heat the mixture, stirring constantly, and as soon as the honey is dissolved and the syrup is hot, pour it over the strawberries.
  • Mix them gently.
  • Chill them, and serve them cold.
  • Cream is nice but by no means required.

2 cups orange sherbet
12 fresh strawberries

Steps:

  • Add boiling water to gelatin mixes in medium bowl; stir 2 min. until completely dissolved.
  • Stir in sherbet until melted. Pour into 1-1/2-qt. mold.
  • Refrigerate 2 hours or until firm. Unmold onto plate; top with strawberries.
