CHICKEN PEPIAN
Steps:
- Preheat the broiler. Remove papery outer layer from tomatillos then rinse them in warm water to remove some of their natural stickiness. Pat dry, then cut into quarters. Toss tomatillos and poblano with 2 teaspoons of the oil, place on a baking sheet and broil until charred, about 10 minutes.
- Heat a large saute pan over medium heat. Add pumpkin seeds, peppercorns, allspice, and cumin and toast until pumpkin seeds are fragrant, 3 to 4 minutes. Transfer to a plate.
- In same saute pan, heat 2 teaspoons oil over medium heat. Add onions and cook until soft and translucent, about 5 minutes, add the garlic and cook for 1 minute more.
- Place tomatillos, poblano, onions and garlic, cilantro, chicken broth, jalapeno, toasted seeds and spices and salt in a blender and blend on high until totally smooth, about 30 seconds.
- Heat the remaining 2 teaspoons olive oil in skillet and cook the chicken until browned on both sides and nearly cooked through, about 5 minutes per side. Add pepian sauce to skillet, covering chicken pieces. Bring to a simmer and cook an additional 3 to 5 minutes, until chicken is cooked through. Serve chicken topped with sauce and garnished with cilantro and lime wedges.

- In a large skillet, combine first five ingredients. Bring to a boil; boil for 1 minute. Add chicken; stir to coat. Reduce heat to medium; cover and simmer for 20 minutes. , Uncover; simmer for 45 minutes or until a thermometer reads 180°.

PEPSI CHICKEN & RICE
about 8-9 years ago, my daughter and I overheard a fireman telling the butcher about this recipe, sounded so easy and quick, we promptly made it and it's been a favorite since. HOWEVER, my hubby doesn't care for the rice so I always make him some plain rice seperate. The best part about this recipe is you can increase or decrease it depending on your needs.

Steps:
- In a skillet, cook the chicken until no longer pink.
- Put the rice in a 4 quart casserole.
- Spoon the chicken over this.
- Mix equal parts BBQ sauce and Pepsi.
- I always keep plenty as depending upon how much rice you use, will need to add more.
- Pour this mixture over the rice/chicken.
- Put into oven and slow cook at 250 for 3-5 hours.
- Keep checking and ADDING MORE LIQUID as needed, otherwise the rice will not be tender.
- Make sure to stir occasionally.
- Serve with a salad and breadsticks for an easy meal.

- Put Pepsi, margarine, and ketchup into a 6-quart saucepan.
- Stir and heat until margarine melts.
- Add chicken and cook over medium heat for 45 minutes or until meat is done.

- I saw lots of other "cola chicken" recipes, but none with barbecue sauce the way we make it! Most of them seemed complicated and long. My mom's recipe is quick, easy, and a huge crowd-pleaser! (I TOTALLY impressed my future-inlaws when my husband and I were still dating.) Here's how we make "Pepsi Chicken" in our house:
- -Heat electric skillet to 350.
- -Coat bottom of skillet with barbecue sauce (by pouring a little, nothing too fancy)
- -Place bone-in chicken in skillet (not recommended for boneless, skinless chicken breasts, they dry out too much)
- -Cover chicken in barbecue sauce and one can of soda (we usually use a little more than half a bottle of BBQ sauce)
- -Cover skillet and cook 20-30 minutes, turning halfway through (20 is enough for most medium-sized pieces of chicken).
- -Serve with rice and vegetables!
- Tips:
- -Any kind of soda will work--this is a great way to use up icky generic-brand sodas from large parties
- -Be careful when opening skillet lid--it will be steamy!
- -Always cut into chicken before serving to make sure it's cooked through
- -Use two cans of soda when cooking more than 6-7 servings, and a little more BBQ sauce. This will require closer to 30 minutes
- Makes 4 servings as listed, can be increased to any number!
