3 ripe bananas
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg (room temperature)
6 tbsp butter (softened)
1/2 tsp vanilla extract
1 tsp rum extract
1 1/2 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 cup pineapple tidbits
1 cup sweetened shredded coconut
1/2 cup powdered sugar
2 tbsp pineapple juice
1 tsp rum extract
1/2 cup toasted coconut

Steps:

  • Preheat oven to 325F. Grease a loaf pan and set aside.
  • Peel and mash the bananas in a large bowl. Stir in the sugar, egg, butter, and extracts until well combined. (Can use all vanilla extract if preferred.)
  • Combine the dry ingredients in a small bowl and stir into the wet ingredients until just combined.
  • Stir in the pineapple and coconut and pour into prepared loaf pan.
  • Bake for 60-70 minutes or until an inserted toothpick comes out clean.
  • Let cool in pan.
  • Whisk together the powdered sugar, pineapple juice, and rum extract and drizzle over the top of the bread. Sprinkle with toasted coconut.

Anyway the kefir is an odd ingredient I know but it really balances this drink and makes it especially smooth. But if you don't have any, feel free to use a scoop or two of ice cream instead.

1 (16 ounce) container non-dairy whipped topping, divided

1 (11 ounce) box vanilla wafer cookies

1/3 cup flaked coconut, for topping (sweetened or unsweetened)

Steps:

  • Preheat your oven to 350°F Line a 12-cup muffin pan with muffin cups, and grease the cups.
  • In a large bowl, beat together the butter, sugar, vanilla, and coconut or rum flavor. Add the bananas, honey, eggs, baking soda, baking powder, nutmeg, and salt, beating until smooth. Stir in the flour, then the dried fruit. Spoon the batter into the muffin cups. Sprinkle each muffin with coconut.
  • Bake the muffins for 25 to 28 minutes, until a cake tester inserted into the center of one comes out clean.

  • Tip: In choosing your backing pan, keep in mind that glass cooks more quickly than metal, dark metal cooks more quickly than light metal.

  • Thinly slice the bananas and arrange on a parchment-lined quarter sheet pan in an even layer. Cover with plastic wrap and place in the freezer for at least 2 hours, or until frozen.
  • Blend the coconut milk in a food processor until smooth (this will take a couple of minutes). Add ⅓ of the frozen bananas and pineapple and blend, then add another ⅓ of each fruit and blend, then add the final ⅓ of each fruit, plus the lime zest, and blend until smooth.
  • Place the mixture in a freezer-safe bowl or loaf pan and freeze for at least 2 hours, or until frozen.
