PEPPERY LAMB WITH SHELL BEANS AND CHERRY TOMATOES
One of the great joys of summer cooking is the availability of just-picked green beans, Romano beans and yellow wax beans, as well as tender, creamy fresh shell beans. They make a delicious colorful main-course salad complemented with sweet cherry tomatoes. To accompany it here, boneless lamb leg is coated generously with coarsely ground pepper and coriander, and roasted in the oven or in a covered grill until medium-rare. The peppery lamb pairs beautifully with the salad. Dressed with an assertive vinaigrette, this room-temperature dish is perfect for an al fresco lunch or supper. Use the method as a template for making similar salads all summer long, using other meats (or fish) if you wish. If shell beans are not available, you may substitute cooked dried beans or chickpeas.

- Season the lamb on all sides with salt. Place in a roasting pan and coat with crushed peppercorns and coriander. Set aside for 10 to 15 minutes to allow meat to absorb seasoning. (You may do this up to 2 hours ahead.)
- Put shell beans in a small saucepan and cover with 1 inch of water. Add a teaspoon of salt, bring to a boil, then lower heat and simmer gently for 20 to 25 minutes, until tender. Leave to cool in their cooking liquid.
- Bring a larger pot of well-salted water to a boil and cook green beans until firm-tender, 3 to 4 minutes, then remove and spread out on a baking sheet to cool. (If using an assortment of beans, cook each type separately in the same pot. Taste a bean after 2 minutes to gauge doneness. They should be firm but not crunchy.)
- Heat oven to 400 degrees, or prepare a grill. Roast lamb, uncovered, for about 30 minutes, until medium-rare or until an internal thermometer reads 125 degrees. If grilling, brown meat over hot coals, then move to the side, cover grill and finish cooking with indirect heat. Remove from heat and let rest for at least 10 minutes before carving.
- As lamb cooks, make the vinaigrette: In a small bowl, combine garlic, a pinch of salt and pepper, anchovy (if using), mustard, vinegar and thyme. Whisk in oil. Taste and adjust seasoning.
- Put shell beans, green beans and cherry tomatoes in a large bowl, sprinkle lightly with salt and add vinaigrette. Toss well to coat, then transfer mixture to a serving platter.
- Cut lamb into 1/8-inch slices and arrange over the top. Garnish with basil leaves and cilantro sprigs. Serve at room temperature.
GREEN BEANS WITH CHERRY TOMATOES
This makes for a pretty dish and is easy to assemble. If you don't have the fresh vegetables on hand, you can easily adapt with canned goods. I get requests for the recipe all the time.

- Cook beans in water, until tender.
- In a fry, melt butter and add garlic salt, sugar, basil, salt and pepper.
- Swish cherry tomato halves around until barely soft and heated, but not squishy.
- Add the drained beans and mix well.
- (TO SAVE TIME, you can use drained canned green beans instead of fresh green beans and canned stewed tomatoes instead of fresh cherry tomatoes. Just add the canned vegetables to the butter/basil mixture and heat through. I do this frequently and it works o).

- Bring a pot of salted water to a boil and cook the orecchiette according to package instructions.
- Meanwhile, heat the oil in a large, heavy-bottomed skillet over medium-high heat. Add the sausage and cook, breaking it up with the back of a spoon, until it starts to brown, 4 to 5 minutes. Remove the sausage to a bowl with a slotted spoon, leaving all the oil in the skillet.
- Add the onions to the oil and cook until they start to soften and turn translucent, about 2 minutes. Add the garlic to the skillet and cook, stirring, for 30 seconds. Add the tomatoes and red pepper flakes and cook, stirring occasionally, until the tomatoes start to blister and split, about 4 minutes. Add salt and pepper.
- Add the beans and return the sausage to the skillet. Cook until warmed through. Add the pasta and toss until it is completely coated. Add the Parmesan in batches, stirring to incorporate and letting it melt before more is added. Stir in the basil.
- Plate the pasta and top with more Parmesan and basil. Serve immediately.

- Heat the oil in a large frying pan over a medium high heat.
- Add the diced lamb and cook until the meat is browned.
- Stir in the trimmed beans and onion. Cook for approx 10 minutes, stirring occassionally.
- Stir in the passata sauce, water, salt and pepper to taste and the chopped mint.
- Reduce the heat to low. Cover and simmer for 3/4 hour to one hour -- until the meat is cooked through and the beans are tender.

GREEK LAMB STUFFED BELL PEPPERS AND TOMATOES
From a Greek Orthodox church's food festival. I always enjoyed it, and I hope you will. The lamb makes this different from normal stuffed peppers. NOTE: If you don't like the tomatoes, use 8 bell peppers and substitute a 14.5 oz can of stewed tomatoes for the pulp (you will still have to mash them).

- Slice tops from tomatoes and peppers and clean, save them.
- Remove pulp from tomatoes and reserve.
- Put tops in baking dish and place veggies on top of them (keeps them from burning).
- Sprinkle 1/4 teaspoon sugar in each.
- Heat 1/2 cup butter in large frying pan and saute onion till transparent.
- Add meat and stir.
- Add rice, spices**, and 1 cup tomato pulp (mashed).
- Cover and cook 15 mins, allow to cool.
- Mix breadcrumbs into meat mixture.
- Fill vegs and remainder of tomato pulp (mashed) on top of stuffing.
- Pour tomato sauce and enough water to bring fluid level to 1/2.
- Bake in oven at 350 deg for 2-1/2 hours.
- Check periodically to see that water hasn't dried up in pan, add more water if needed.
- ** If you don't have Greek spices combine 1 tablespoon plus 1 teaspoon oregano, 1 teaspoon parsley, and 1 teaspoon mint. This will be close, adjust the parsley and mint to taste.

- Put the kettle on to boil and tip both packets of couscous into a heatproof bowl. Melt the garlic butter in a frying pan over a medium heat with a tablespoon of the oil. Add the lamb steaks and fry for 4 minutes on each side. Pour 400ml/14fl oz boiling water over the couscous, stir in the remaining oil and set aside to absorb.
- Tip the peppers and olives into the pan with the lamb. Roughly chop the herbs, add and continue cooking until the lamb is cooked. Squeeze in the lemon juice, season.
- Toss the almonds into the couscous and spoon on to serving plates. Top with the lamb, peppers, olives and juices, and serve.

- Preheat oven to 400^.
- Spray a jellyroll pan with non-stick cooking spray.
- Toss potatoes in a zip-top bag with 2 T. olive oil.
- Scatter on pan and sprinkle with salt and pepper.
- Roast until tender, approximately 50 minutes, turning occasionally.
- In the meantime, cook the green beans in a large saucepan of boiling salted water for 3 minutes.
- Drain beans and pat dry.
- Place beans, tomatoes, and garlic in another zip-top bag.
- Add 2 T. olive oil and shake to mix.
- When potatoes are tender, add the bean mixture and roast another 8 minutes.
MARINATED SHELL BEANS WITH CHERRY TOMATOES AND OREGANO
Steps:
- Wrap the onion, garlic, and sage in a doubled piece of cheesecloth and tie it into a closed bundle with kitchen twine. Put each type of bean in a separate small or medium saucepan and add enough water to each pan to cover the beans by 1 1/2 inches. Place one bouquet in each pan, stir in the olive oil, bring the water to a boil over high heat, and salt the water to taste like the ocean. Add approximately 1 tablespoon of salt for each quart of water. Reduce the heat and simmer the beans until they are tender and creamy, but not mushy, adding more water as needed, but never covering them by more than an inch and a half, 25 to 35 minutes. (Cooking them in this way yields richer tasting, creamier beans than if you were to just boil them in tons of water.) Turn off the heat and allow the beans to cool in the cooking liquid. Remove and discard the cheesecloth bundles. The beans can be prepared to this point up to one week in advance. If you are using the beans now, drain them, reserving the cooking liquid to use as a hearty, bean-flavored base for vegetable soup. To use them later, transfer the beans and the cooking liquid to an airtight container and refrigerate until you are ready to use them or up to 24 hours. Drain and bring the beans to room temperature before dressing them.
- Combine the various beans in a large mixing bowl. Add the tomatoes, parsley, and oregano. Drizzle with the vinaigrette, season with salt and pepper, and stir gently to combine the ingredients, taking care not to crush the beans. Taste for seasoning and add more salt, pepper, or vinaigrette, if desired. Serve at room temperature.

- Heat small skillet over medium-high heat. Add coriander and caraway seeds to dry skillet; toast until aromatic and slightly darker in color, stirring frequently, about 3 minutes. Finely grind in mortar with pestle or in spice mill. Transfer spice mixture to medium bowl. Add mint, salt, turmeric, crushed red pepper, and 1 tablespoon oil; mix to paste. Add lamb; toss to coat. Cover and chill at least 8 hours or overnight.
- Heat remaining 2 tablespoons oil in large pot over medium heat. Add lamb mixture and onions; sauté until outside of meat is no longer pink and onions begin to soften, about 8 minutes. Add crushed tomatoes, garlic, cinnamon stick, and bay leaf. Bring to simmer. Add carrots, then cabbage; sprinkle with coarse salt and pepper. Add 1 1/2 cups water and 2 tablespoons lemon juice to pot; stir to combine. Bring to boil. Reduce heat to low; cover and simmer until meat and cabbage are tender, stirring occasionally, 1 1/2 to 1 3/4 hours.
- Meanwhile, place fresh beans, if using, in small saucepan. Add pinch of coarse salt and just enough water to cover beans. Simmer uncovered until just tender, 10 to 30 minutes, depending on kind of bean. Drain.
- Remove cinnamon stick and bay leaf from stew. Add cooked beans (or canned beans, if using) and remaining 1 tablespoon lemon juice. Simmer 5 minutes to allow flavors to blend. Season to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Refrigerate uncovered until cool; cover and keep chilled. Rewarm over medium heat, stirring occasionally.
- Stir parsley into stew. Divide stew among bowls. Sprinkle with ground cumin.
