You just need 3 ingredients and 5 minutes to make this amazing appetizer or snack!

1/2 cup shredded cheddar cheese (or a blend of shredded mozzarella and parmesan.)
12 slices pepperoni
1/4 cup sugar free tomato sauce

Steps:

  • Heat a nonstick skillet over medium heat. Add about 1 tablespoon of shredded cheese in flat piles with a little room between them, about 4-6 piles a time depending on the size of your skillet. Cook for about one minute.
  • When the cheese starts to bubble, add a slice of pepperoni on top of each pile of cheese. Cook for another minute or so, until the cheese begins to brown and get crispy on the edges.
  • Use a spatula to flip each one, pepperoni side down. Cook for around 30 seconds, then transfer to a plate, pepperoni side up, and serve with tomato sauce for dipping. Repeat until you've cooked them all!

Great for game day or any day you are going to have company. One of our favorites. This can be made ahead and frozen for up to 3 months.

1 - 8 oz container soft-style cream cheese with chives and onion
1 1/4 cup(s) shredded muenster cheese (5 ozs)
1 package(s) (3 1/2 oz) sliced pepperoni, finely chopped
1 tablespoon(s) milk
2 teaspoon(s) paprika
1/2 teaspoon(s) ground red pepper
- assorted crackers or melba toast rounds

Steps:

  • In mixing bowl, stir together cream cheese, Muenster cheese, chopped pepperoni, and milk. Shape cheese mixture into a 4 inch ball. Flatten the ball into a wheel shape measuring about 4 1/2 x 1 1/2 inches.
  • On waxed paper combine paprika and red pepper. Roll and pat cheese wheel in paprika mixture till well coated. Cover and refrigerate for 3 hours to 1 week. OR, wrap the cheese wheel in moisture and vapor proof material. Seal, label and freeze for up to 3 months. Before serving, thaw the cheese wheel overnight in the refrigerator.
  • Use sharp knife to score the top of the cheese wheel into diamonds. Serve with crackers or melba toast.

Canola oil
Kosher salt
One 1-pound box rotini pasta
1 medium onion, chopped
1 medium zucchini, chopped
1 tablespoon chopped garlic
One 6-ounce package sliced pepperoni, roughly chopped
One 28-ounce can chopped tomatoes
6 fresh basil leaves, chopped
Freshly ground black pepper
1 cup shredded mozzarella
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 9-by-13-inch baking dish with 1 teaspoon oil.
  • Bring a large pasta pot of water to a boil over high heat. Add a big pinch of salt and the pasta. Cover and return the water to a boil. Remove the cover and cook for 5 minutes. The pasta will not be completely cooked through.
  • Meanwhile, in a large skillet over medium-high heat, add 1 tablespoon oil. When it is hot, add the onions and zucchini and cook until they are softened and brown slightly, about 5 minutes. Add the garlic and pepperoni and cook for another minute. Add the tomatoes and basil and simmer for 5 minutes. Taste and adjust the seasoning with salt and pepper. Reserve 1 cup of the tomato sauce for another use, such as Round 2 Recipe Garlic Bread Pizza.
  • Stir in the pasta and cheese into the skillet. Pour into the prepared baking dish and smooth out the top. Sprinkle the breadcrumbs evenly over the top and drizzle with the 1 tablespoon oil. Bake until the top is browned and the casserole is bubbling, 20 to 25 minutes.

1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 cup pepperoni slice
1/2 cup spaghetti sauce

Steps:

  • On a lightly floured surface, roll dough into a 16 inch X 10 inch rectangle.
  • Sprinkle with cheeses and pepperoni.
  • Roll up jelly-roll style, starting with a long side. Cut into 2 inch slices,.
  • Place cut side down in a greased 15 inch X 10 inch X 1 inch baking pan, lightly press down to flatten.
  • Bake at 400 degrees for 8-10 minutes or until golden brown.
  • Serve with spaghetti sauce if desired.
