Making any ice cream at home is simple once you master one very important step: knowing when to stop cooking the custard. It should be thick enough to coat the back of the spoon. Test it by drawing a line with your finger. The edge of that line should stay straight for a few seconds without dripping. If you are at all nervous, keep an ice bath near the stove. That way you can plunge the pot into the water and stop the cooking quickly if it comes close to curdling. The recipe includes an optional bittersweet chocolate swirl that adds a sophisticated edge to this refreshing ice cream, but purists can feel free to leave it out.

8 large egg yolks
1 cup sugar
1/4 teaspoon kosher salt
3 cups heavy cream
1 cup whole milk
1 1/2 teaspoons peppermint extract
1/2 cup finely crushed candy canes
5 ounces bittersweet chocolate, melted
4 teaspoons vegetable oil

Steps:

  • In a medium saucepan, whisk together the egg yolks, sugar and salt until pale yellow. While whisking, slowly add the cream and the milk. Heat the mixture over medium-low heat, stirring constantly with a wooden spoon, until the mixture is thick enough to coat the back of the spoon or about 170 degrees on an instant-read thermometer, 10 to 12 minutes.
  • Transfer the mixture through a fine-mesh sieve into a bowl to cool at room temperature. Stir in the peppermint extract. Cover and chill at least 4 hours or overnight. Set a 9-by-5-inch loaf pan in the freezer to chill.
  • If adding the chocolate chunks, stir together the chocolate and vegetable oil and set aside. Churn the ice cream mixture in an ice cream machine according to manufacturer's instructions. During the last few minutes of processing, add the candy cane pieces and very slowly drizzle in the chocolate mixture. (If added too quickly, the chocolate will clump; when the ice cream has been fully churned, use a pair of kitchen shears to cut any pieces that are too large.) Transfer the ice cream to the prepared loaf pan, cover well with plastic wrap and freeze until firm.

3/4 cup sugar
1/4 teaspoon salt
4 egg yolks
2 cups heavy whipping cream
4-1/2 to 6 teaspoons vanilla extract
1 to 1-1/4 cups crushed peppermint candy

Steps:

  • In a large saucepan, heat half-and-half cream to 175°; stir in sugar and salt until dissolved. Whisk a small amount of the hot mixture into the eggs. Return all to the pan, whisking constantly. Cook over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. Remove from heat immediately., Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in cream and vanilla. Press plastic wrap onto surface of custard. Refrigerate several hours or overnight., Fill cylinder of ice cream freezer; freeze according to the manufacturer's directions. Transfer ice cream to freezer containers, allowing headspace for expansion. For each batch, stir in some of the peppermint candy. Freeze 2-4 hours or until firm.

18 chocolate-peppermint candies, such as peppermint patties
2 3/4 cups heavy cream
One 14-ounce can sweetened condensed milk
2 cups mini marshmallows
1/2 cup crushed peppermint puffs

Steps:

  • Put a 9-by-5-by-3-inch metal loaf pan in the freezer to chill. Put the chocolate-peppermint candies and 3/4 cup of the heavy cream in a medium saucepan over medium heat and cook, stirring frequently, until the candies are melted, about 5 minutes. Cool completely.
  • Meanwhile, whip the remaining 2 cups heavy cream in a large bowl with an electric mixer on medium high until firm peaks form, about 2 minutes. Pour the condensed milk into a medium bowl and fold in 1 cup of the whipped cream with a rubber spatula until combined, then fold the lightened mixture back into the whipped cream until well blended. Gently fold in the marshmallows.

1/2 cup granulated sugar
1 tablespoon McCormick Vanilla Extract
1/2 teaspoon McCormick Peppermint Extract
1/4 cups peppermint candy, crushed to mostly powder, plus more for topping
1 pinch salt

Steps:

  • Peppermint Crunch Ice Cream
  • In a medium bowl, whisk together milk, heavy whipping cream, granulated sugar, salt, and McCormick Vanilla and Peppermint Extracts until sugar has dissolved.
  • Pour in crushed candy cane, mixing until mostly dissolved. It's okay if the candy clumps - the ice cream maker will slowly separate them.
  • Remove ice cream bowl/attachment from freezer and attach/place it per your ice cream maker's instructions. Pour prepared ice cream mixture into the chilled bowl/attachment.
  • Churn ice cream for 30-35 minutes or until desired consistency is reached.
  • If you'd like soft ice cream, serve peppermint crunch ice cream immediately with additional crushed peppermint candy on top. 2 1/2 cups heavy cream
1 1/2 cups milk
8 large egg yolks
3/4 cup sugar
1/4 teaspoon salt
1 1/2 teaspoons peppermint extract
1/2 cup crushed candy canes or 1/2 cup hard peppermint candy

Steps:

  • In a saucepan over medium heat, warm the milk, sugar, and salt. Make sure the sugar and salt completely dissolve.
  • In a separate bowl, whisk together the egg yolks. Slowly pour the warm milk mixture into the egg yolks, whisking constantly. (Make sure you do this slowly, or the eggs will be cooked from the heat of the milk mixture).
  • Scrape the egg-and-milk mixture back into the saucepan over medium heat. Stir the mixture constantly scraping the bottom as you stir, until the mixture thickens and coats the spatula. This should take 5-7 minutes.
  • Pour the heavy cream into a bowl. Then, slowly pour the custard into the chilled heavy cream. Cool for about half an hour in the refrigerator.
  • When the mixture is chilled, add peppermint extract. You may need more depending on your tastes and the strength of the extract you use.
  • Freeze in your ice cream maker according to the manufacturer's instructions.
  • Near the end of the freezing process, add in the crushed peppermint candy.
  • Store in an airtight container in your freezer.

1/2 cup plus 3 tablespoons unsalted butter
1 2/3 cups semisweet chocolate
2 (9-ounce) packages chocolate wafer cookies (about 80 cookies)
3/4 cup heavy cream
1/4 cup plus 3 tablespoons light corn syrup
1/2 cup semisweet chocolate
8 cups vanilla ice cream, slightly softened
1 1/2 cups coarsely crushed red and white striped hard peppermint candies (about 10 ounces)
2 teaspoons peppermint extract
Candy Brittle, recipe follows
2 1/4 cups sugar
3/4 cup water
2 tablespoons plus 2 teaspoons light corn syrup
2 cups assorted candies (hot cinnamon candies, after dinner mints, candy cane pieces, sliced spice drops)

Steps:

  • For the crust: In a small heavy bottom saucepan over low heat, melt the butter and chocolate. Remove from the heat. Finely crush the chocolate wafers in a plastic bag with a rolling pin, or use a food processor. In a large bowl, combine the wafer crumbs with the melted chocolate and blend until the crumbs are moistened. Reserve 1 1/4 cups crumb mixture in a small bowl. Press the remaining crumb mixture onto the sides and bottom of a 9-inch diameter springform pan with 2 3/4-inch high sides. Freeze for 1 hour. For the glaze: In a large heavy bottom saucepan, bring the cream and corn syrup to a boil. Remove from heat, add the chocolate, and whisk until it is melted and smooth. Let stand until cool but still pourable, about 1 hour. For the filling: In a large bowl, working quickly, mix the ice cream, crushed candies, and extract until blended. Spoon half of the ice cream into the crust, spreading it evenly. Put the remaining ice cream mixture in the bowl in the freezer. Sprinkle the reserved 1 1/4 cup cookie crumb mixture over the ice cream in the springform pan, press the crumbs down gently. Pour 1 1/4 cup of the chocolate glaze over the ice cream in the springform pan. Freeze for 1 hour. Top with the remaining ice cream, and spread evenly. Freeze until firm, about 4 hours. Stir the remaining glaze over low heat, just enough so that it is pourable but not warm. Pour the glaze over the ice cream, and spread evenly. Freeze overnight. Run a sharp warm knife between the pan sides and the crust to loosen the cake. Release the pan sides and transfer the cake to a platter. Garnish the cake with Candy Brittle.;
  • In a heavy bottom small saucepan over medium-low heat, cook the sugar, water, and corn syrup until the sugar dissolves. Increase the heat and boil, without stirring, until a candy thermometer registers 300 degrees F, about 15 minutes. Place a 24-inch long sheet of foil on your work surface. Be extremely careful, the syrup is extremely hot. Pour the boiling syrup in wide zigzag lines across the foil. Working quickly and using an oiled offset metal spatula, spread the syrup evenly onto the foil, leaving a 1-inch border. Immediately sprinkle with all the candies, pressing the larger pieces into the syrup to make sure they stick. Be careful not to touch the syrup. Cool completely. Break off irregular pieces of the brittle and peel off the foil as you go. Press the brittle upright, candy side out, onto the top and sides of cake and freeze.;

3 ounces individually wrapped green-and-white or clear peppermint hard candies (about 1/2 cup)
1/2 teaspoon peppermint extract
1 or 2 drops green food coloring if using clear peppermint candies

Steps:

  • Make chocolate chunks:
  • Line a baking sheet with wax paper.
  • Chop chocolate. In a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolate, stirring until smooth. Remove top of double boiler or bowl from heat and cool chocolate. Chop mints (largest pieces should be about 1/4 inch) and stir into chocolate. Spread chocolate mixture 1/4 inch thick on wax-paper-lined baking sheet. Chill chocolate mixture until firm, about 30 minutes. Coarsely chop chocolate mixture and chill, wrapped in plastic wrap. Chocolate chunks may be made 1 week ahead and chilled.
  • In a heavy saucepan whisk together cream, milk, cornstarch, and salt until smooth and add mints. Bring mixture to a boil over moderate heat, stirring constantly, and simmer, stirring constantly, 1 minute, or until mints are dissolved and mixture is thickened. Pour mixture through a sieve into a bowl and cool. Stir in extract and, if using clear mints, food coloring. Chill mixture, its surface covered with plastic wrap, at least 3 hours, or until cold, and up to 1 day.
  • Freeze mixture in an ice-cream maker. Transfer ice cream to a bowl and fold in chilled chocolate chunks. Transfer ice cream to an airtight container and put in freezer to harden. Ice cream may be made 1 week ahead.

It includes the crucial ingredient of peppermint extract and it's a custard-style ice cream, meaning it has more body and less tendency to get icy in the freezer. This is a David Leibowitz recipe via the website Simply Recipes.

  • One the mixture is thoroughly chilled, add peppermint extract, a 1/4 teaspoon at a time, tasting the mixture after each addition, until you reach the desired level of peppermintiness. (Different peppermint extracts vary in strength. This recipe uses 2 teaspoons of McCormick peppermint extract.).
  • Once chilled, freeze in your ice cream maker according to the manufacturer's instructions.
  • Once the ice cream has been formed in the ice cream maker, it will be fairly soft. Fold in the crushed peppermint candy. Put in an airtight plastic container and place in the freezer for at least an hour, preferably several hours. If it has been frozen for more than a day, you may need to let it sit at room temperature for a few minutes to soften it before serving.

  • Combine 1 1/4 c 2% milk and egg yolks in heavy saucepan over medium heat.
  • Cook until mixture is slightly thick and coats the back of a spoon (about 8 minutes), stirring constantly (do not boil). Cool egg mixture slightly.
  • Combine egg mixture, 1 1/4 c 2% milk, vanilla and condensed milk in a large bowl. Cover and chill completely.
  • Stir in crushed candies.

MARY'S 'FAMOUS' PEPPERMINT ICE CREAM DESSERT

This is made by our friend Mary for New Years annually, and I started making it when we would not be at Mary's house because it's DH's favorite. I made some of my own changes, but still think of it as Mary's recipe (I note where Mary's directions differ from mine in the ingredients list.). I also have never timed myself making this, but will the next time I make it and then update the time estimate. Peppermint ice cream is easier to find (IMO) in December.

11 ounces vanilla wafers (Mary's directions actually call for 2 small boxes, but my store only has one size. This seems to wor)
3/4 cup butter (Mary's recipe calls for margarine, but I don't keep that in the house)
4 tablespoons powdered sugar
4 ounces German sweet chocolate (Mary's recipe says 1 bar, I've only ever seen a 4 oz size for sale)
12 ounces milk chocolate chips
4 eggs (separated)
1 cup crushed nuts (not specified, I usually use walnuts)
1/2 gallon peppermint ice cream (pink looks great, softened)

Steps:

  • Crush vanilla wafers.
  • Melt butter.
  • Mix wafers, butter, and powdered sugar together. Spread 2/3 of mixture in bottom of 9X13 (or slightly larger) pan.
  • Melt sweet and milk chocolate in a double boiler.
  • Beat egg yolks, add to melted chocolate and remove from heat.
  • Beat egg whites until stiff, add to chocolate mixture.
  • Pour 2/3 of chocolate sauce over wafer mixture.
  • Sprinkle with chopped nuts.
  • Carefully spread softened ice cream (Mary's recipe says to cut in sticks and lay on top of nuts, but that kind of box is hard to find anymore). I use a wide spoon and put fairly thin chunks across the surface, then smooth it out a little to make sure all the chocolate is covered.
  • Pour rest of chocolate sauce over the ice cream.
  • Sprinkle with remaining wafer mixture.
  • Freeze at least overnight or for a few days. Remove from freezer shortly before serving to make it easier to cut.
