Want a cozy cup of holiday coffee? Whip up a batch of this easy peppermint mocha creamer for a no-fuss coffee mixer. You'll get all of the peppermint and chocolate flavors but a lot fewer calories than a full mocha!

½ cup water
½ cup sugar
2 tablespoons cocoa powder (unsweetened)
1 teaspoon peppermint extract
½ teaspoon vanilla extract
½ cup milk (any kind)
¼ cup half-and-half (or heavy cream)

Steps:

  • Pour the water and sugar into your saucepan. Heat over medium for about 3 minutes. You want the sugar to dissolve completely.
  • Remove from the heat and mix in the peppermint extract, vanilla extract, and unsweetened cocoa powder. Let the mixture cool for 3 minutes.
  • Add the milk and cream. Stir thoroughly and then transfer to your airtight container.
  • Your peppermint mocha creamer is ready to drink! It will keep for up to 2 weeks in the refrigerator.

¾ cup powdered non-dairy coffee creamer
¾ cup confectioners' sugar
½ cup unsweetened cocoa powder
½ teaspoon peppermint extract

Steps:

  • Combine coffee creamer, confectioners' sugar, and cocoa powder in the bowl of a food processor; pulse until blended. Pour peppermint extract in slowly, with the processor running, until evenly distributed.
  • Transfer into small jars and seal with lids. Attach instructions that say "Add 2 tablespoons to a cup of hot coffee, hot chocolate, or steamed milk."

Simple, creamy, peppermint treats you can make with just a handful of ingredients. They make a tasty homemade gift for anyone with a sweet tooth

250g icing sugar
1 egg white
few drops of peppermint essence
dark chocolate (optional)

Steps:

  • Sieve the icing sugar into a large bowl. Add a little of the egg white and a few drops of the peppermint essence and mix really well. You want the mixture to come together as a soft dough, so keep adding a little egg white until this starts to happen (you might not need to use all of it). Taste the mixture and add more peppermint essence if desired.
  • Divide the mixture into 20 small balls, then flatten them gently with your fingertips into discs.
  • Place baking parchment on a large board or tray and space out the discs. Meanwhile, tip the chocolate into a microwavable bowl and heat in 30 second intervals in the microwave until melted, stirring after each blast. Once melted, leave the chocolate to cool for 5-10 mins then carefully dip the peppermint creams in the melted chocolate until they are half coated. Lay them back on the baking parchment to set for 3-4 hours or overnight.
