up to 1 3/4 cups (425 mL) reduced sodium chicken broth
1 can (284 mL) Turkey Gravy
3 bay leaves
2 shallots, minced
1 tbsp (15 mL) finely chopped fresh rosemary

Bring to a boil, then immediately reduce to a simmer over medium-low heat. Cook about 15 min., until thickened to desired consistency. Remove bay leaves. HERBY TURKEY GRAVY

Herby Turkey Gravy image

Provided by Alex

Time 15m

Number Of Ingredients 9

4 cups of broth and/or pan juices (see note*)
2 tbsp unsalted butter (or ghee)
2 cloves garlic (minced)
1 tsp fresh sage leaves (minced)
1 tsp fresh rosemary (minced)
1 tsp fresh thyme leaves (minced)
4 tbsp cassava flour (sub regular flour)
½ cup white wine
salt (to taste)

Steps:

  • In a large saucepan over medium heat, melt the butter. Once melted, add the garlic, sage, rosemary and thyme and cook, stirring until the garlic is softened and fragrant.
  • Add the cassava flour to the saucepan and continue to cook, stirring, until the cassava is well combined with the butter, at least 2 minutes to cook off the raw flour taste.
  • Next, add the white wine and whisk to combine. Note that this will immediately thicken with the flour.
  • Continue to whisk and slowly pour in 1 cup of the broth until smooth. Then, while continuing to whisk, pour in the remaining 3 cups of broth.
  • Increase the heat and bring the gravy to a rapid simmer. Once at a simmer, cook, whisking often until the gravy thickens; about 5 minutes. Remove from heat, cover and keep warm until ready to serve. Taste and add salt, as desired.
  • If your gravy gets too thick and you want to thin it out, simply whisk in ½ cup of broth at time. If you refrigerate it and have leftovers, it'll definitely get thicker in the fridge. I heat mine in a saucepan over medium heat and whisk in ½ cup broth until hot and reach my desired consistency.

HERBED PAN GRAVY

Provided by Food Network

Time 1h35m

Yield 12 servings

Number Of Ingredients 7

Giblets and neck from turkey
6 cups water
2-3 cups reduced-sodium chicken broth, divided
1/4 cup all-purpose flour
3/4 cup deglazing liquid, such as white wine, vermouth or brandy
1 tablespoon minced fresh herbs (optional)
Salt & freshly ground pepper to taste

Steps:

  • The giblets and neck from a turkey make a great flavorful stock that helps ensure a rich, tasty gravy, but you may substitute more chicken broth if you prefer.;
  • To make giblet stock: Place giblets (except liver), neck and water in a large saucepan. (Reserve the liver for another use or discard.) Bring to a boil over high heat. Reduce heat and simmer, skimming and discarding any foam, for 1 hour. Strain through a fine-mesh sieve.
  • To make gravy: After removing the turkey from the roasting pan, pour any pan juices and fat into a large glass measuring cup and place in the freezer so the fat rises to the top, about 10 minutes. Skim the fat off with a spoon and discard. (Alternatively, pour the pan juices and fat into a fat separator then pour the defatted juices into a large measuring cup.) Add any accumulated juices from the resting turkey to the defatted pan juices; add the reserved giblet stock plus enough chicken broth so the combined liquids measure 5 cups total.
  • Whisk 1/2 cup chicken broth and flour in a small bowl until smooth.
  • Set the roasting pan over two burners on medium-high heat. Add deglazing liquid; bring to a boil and cook, scraping up the browned bits from the pan, until the liquid is reduced, about 3 minutes. Add the 5 cups of liquid from Step 2. Increase the heat to high and return to a boil, whisking often and scraping up any remaining browned bits. Boil until reduced to 2 3/4 cups, 8 to 12 minutes. Whisk the reserved broth-and-flour mixture into the roasting pan. Boil, whisking constantly, for 2 to 3 minutes. Remove from the heat and pour the gravy through a fine sieve into a large measuring cup. Stir in herbs, if using. Taste and season with salt (if needed) and pepper.

HERB ROASTED TURKEY WITH PAN GRAVY

Herb Roasted Turkey with Pan Gravy image

Here's an easy, reliable way to ensure a moist and flavorful turkey...simply baste the turkey with herb-seasoned chicken stock during roasting. When the turkey is done, use a bit more stock to make a quick and savory gravy.

Provided by Swanson®

Categories     Trusted Brands: Recipes and Tips     Swanson®

Time 3h25m

Yield 12

Number Of Ingredients 8

1 (12 pound) turkey
1 tablespoon olive oil
¼ teaspoon kosher salt and freshly ground black pepper
1 (26 ounce) carton Swanson® Chicken Stock (Regular or Unsalted)
3 tablespoons lemon juice
1 teaspoon dried basil leaves, crushed
1 teaspoon dried thyme leaves, crushed
¼ cup all-purpose flour

Steps:

  • Remove the package of giblets and neck from the turkey cavity. Rinse the turkey with cold water and pat dry with a paper towel. Tie the ends of the drumsticks together.
  • Place the turkey, breast-side up, on a rack in a roasting pan. Brush the turkey with the oil. Season with the salt and black pepper. Insert a meat thermometer into the thickest part of the meat, not touching the bone.
  • Stir the stock, lemon juice, basil, thyme and 1/8 teaspoon additional black pepper in a large bowl. Reserve 1 3/4 cups stock mixture for the gravy. Pour the remaining stock mixture over the turkey.
  • Roast at 325 degrees F for 3 hours or until the thermometer reads 165 degrees F., basting occasionally with the pan drippings. Begin checking for doneness after 2 1/2 hours of the roasting time.
  • Remove the turkey from the pan, cover and keep warm. Spoon off any fat and pour off all but 1 1/2 cups pan drippings.
  • Stir the reserved stock mixture and the flour in a medium bowl until the mixture is smooth. Add the flour mixture to the pan. Cook and stir over medium heat until the mixture boils and thickens, scraping up the browned bits from the bottom of the pan. Season, if desired. Serve the gravy with the turkey.

Yield Makes 10 servings

Number Of Ingredients 11

3/4 cup butter, room temperature
3 tablespoons chopped fresh parsley plus 3 whole sprigs
2 tablespoons chopped fresh sage plus 3 whole sprigs
2 tablespoons chopped fresh thyme plus 3 whole sprigs
3/4 teaspoon salt
1/2 teaspoon coarsely ground black pepper
1 15- to 16-pound turkey, rinsed, patted dry
1 1/2 pounds shallots, peeled, halved lengthwise through root end
3 cups (or more) canned low-salt chicken broth
1 cup dry white wine
2 tablespoons all purpose flour

Steps:

  • Mix butter, chopped parsley, chopped sage, chopped thyme, 3/4 teaspoon salt and 1/2 teaspoon pepper in medium bowl to blend. (Can be prepared 3 days ahead. Transfer herb butter to small bowl; cover and refrigerate. Bring butter to room temperature before using.) Position rack in bottom third of oven and preheat to 350°F. Sprinkle main cavity of turkey with salt and pepper. Place whole parsley, sage and thyme sprigs and 4 shallot halves in cavity. Starting at neck end, carefully slide hand between skin and breast meat to loosen skin. Spread 3 tablespoons herb butter over breast meat under skin. Tuck wing tips under; tie legs together to hold shape. Place turkey on rack set in large roasting pan. Rub 4 tablespoons herb butter over turkey. Cover only breast area of turkey with sheet of heavy-duty foil. Scatter remaining shallots in pan around turkey.
  • Roast turkey 30 minutes; baste with 1/2 cup broth. Continue roasting turkey for 1 1/2 hours, basting with 1/2 cup broth every 30 minutes. Remove foil from over turkey breast. Continue to roast turkey until golden brown and thermometer inserted into thickest part of thigh registers 180°F, basting with pan juices every 20 minutes, about 1 hour longer. Transfer turkey to platter. Brush with 1 tablespoon herb butter. Tent loosely with foil; let stand 20 minutes.
  • Using slotted spoon, transfer shallots from roasting pan to plate. Pour pan juices into medium bowl; spoon off fat and discard. Add wine and 1 cup chicken broth to roasting pan. Set pan directly over 2 burners and bring broth mixture to boil, scraping up any browned bits. Continue to boil until reduced by half, about 3 minutes; pour into large glass measuring cup. Add degreased pan juices. Add enough broth if necessary to equal 3 cups liquid.
  • Blend flour into remaining herb butter. Pour broth mixture into heavy medium saucepan and bring to boil. Gradually whisk in herb butter mixture. Add any accumulated juices from turkey platter. Boil until gravy thickens enough to coat spoon lightly, whisking occasionally, about 6 minutes. Add shallots to gravy; simmer 1 minute. Season gravy with salt and pepper. Serve turkey with gravy.

Herb-Brined Turkey with Pear Gravy image

A simple brine and pear gravy make this a must-have for Thanksgiving.

Categories     Herb     turkey     Roast     Thanksgiving     Pear     Fall     Brine     Bon Appétit

Yield Makes 8 servings

Number Of Ingredients 16

Turkey
3 gallons water
1 3-pound box coarse kosher salt
1/2 cup whole black peppercorns
1/3 cup fresh thyme sprigs
1/3 cup fresh marjoram sprigs
1/3 cup fresh sage sprigs
12 Turkish bay leaves
1 13-pound turkey
1/2 cup butter, room temperature pear gravy
1/4 cup (1/2 stick) butter
1/2 cup all purpose flour
2 cups low-salt chicken broth
1 cup pear juice
2 tablespoons dark rum
3 tablespoons chopped fresh marjoram

Steps:

  • For turkey:
  • Stir 3 gallons water and salt in large pot until salt dissolves. Stir in peppercorns and next 4 ingredients. Add turkey to brine. Place large plate atop turkey to submerge. Place in refrigerator. Soak turkey 8 to 10 hours. Remove turkey from brine; rinse and pat dry. (Can be prepared 1 day ahead. Store uncovered in refrigerator.)
  • Preheat oven to 450°F. Place turkey on rack in large roasting pan. Rub butter over turkey. Sprinkle with salt and pepper. Place turkey in oven. Reduce temperature to 325°F. Roast turkey until thermometer inserted into thickest part of thigh registers 175°F, about 2 1/2 hours. Transfer turkey to platter; tent with foil. Let stand at room temperature 30 minutes before carving (internal temperature will rise 5 to 10 degrees).
  • For pear gravy:
  • Spoon off fat from drippings in pan, reserving 1/4 cup fat. Measure 2/3 cup pan juices. Melt butter and reserved 1/4 cup fat in heavy large saucepan over medium heat. Mix in flour. Stir until light brown, about 2 minutes. Gradually add chicken broth, pear juice, and 2/3 cup pan juices. Simmer until thickened, stirring frequently, about 10 minutes. Stir in rum. Season with salt and pepper. Sprinkle turkey with marjoram; serve with gravy.
  • Storage solutions:
  • No room in the fridge to brine a turkey? No problem. Put a turkey-sized oven bag in a large cooler, then place the turkey in the bag. Pour in the brine and seal tightly. Place ice over and around turkey, close the lid tightly, and let it brine 8 to 10 hours, adding ice periodically to keep temperature at 40° or below.

Strain broth mixture through a fine mesh sieve to remove any gizzard solids. Measure 1/2 cup of the broth mixture; stir in 1 cup chicken broth. Save any remaining giblet broth for another use. If desired, coarsely chop gizzard and set aside.
  • Meanwhile, preheat oven to 425 degrees F. Peel away the dry outer layers of skin from the garlic head, leaving inner skin and the cloves intact. Cut off the pointed top portion (about 1/4 inch), leaving the bulb intact but exposing the individual cloves. Place the garlic head, cut side up, in a custard cup. Drizzle with olive oil. Cover with foil and bake about 20 minutes or until the cloves feel soft when pressed. Set aside garlic head just until cool enough to handle. Squeeze out the garlic paste from individual cloves and place in a small bowl; mash lightly with a fork. Set aside.
