Steps:

  • Mix 2 tablespoons each olive oil, chopped parsley and cilantro, 1 tablespoon lemon juice, 1/2 teaspoon each ground coriander and paprika and 1 smashed garlic clove in a small bowl. Toss 1 pound baby bell peppers with olive oil, salt and pepper. Grill over medium-high heat, turning, until charred, 5 to 8 minutes. Toss with the herb mixture and 1/4 cup chopped toasted walnuts; discard the garlic.

I like to make these spicy peppernuts in quantity so that I can serve them in baskets - like you would salted nuts or candy. They add a wonderful spicy aroma to the air. This is based on a recipe I received many years ago from a Danish friend. Although the mere idea of baking hundreds of nut-sized cookies sounds like an enormous amount of work, I've simplified the procedure.

1 cup (2 sticks) unsalted butter, at room temperature
1 cup light or dark brown sugar, packed
1 large egg
1 cup ground toasted filberts or almonds
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon freshly ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F. In the large bowl, cream the butter with the sugar using an electric mixer. Add the egg and ground nuts. In another bowl, mix the flour with the baking powder, soda, cardamom, cinnamon, cloves, allspice and nutmeg. Blend the dry ingredients into the creamed mixture until a stiff dough forms. Shape the dough into a ball. (At this point, you can wrap the dough in plastic wrap and refrigerate it to develop the flavor, for up to a week). Cut off a portion of the dough at a time and roll between your hands and a lightly floured work surface to make slim, ropes about 1/2-inch thick. Place 4 or 5 ropes on an ungreased cookie sheet. Cut ropes into 1/2-inch pieces using a sharp, small knife. Separate the pieces. Bake for 8 minutes or until the cookies are lightly browned and dry. Remove from the oven; cool on the baking sheet.

ROASTED RED PEPPER AND WALNUT DIP (MUHUMMARA)



Roasted Red Pepper and Walnut Dip (Muhummara) image

2 red bell peppers
1 1/2 cups raw walnuts, halves and pieces
3 cloves garlic, chopped
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon red pepper flakes
1/4 cup fresh lemon juice
2 1/2 tablespoons pomegranate molasses*
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Roast the red peppers. Place each bell pepper over the open flame of a gas burner or grill, cooking until the skin blackens and blisters. Rotate the peppers and blacken all the way around, about 15 minutes. Alternatively, you can roast the peppers in the oven by placing the bell peppers on a baking sheet and placing under the broiler, turning frequently, until the peppers are blackened and blistered all over. Put the blackened peppers in a bowl, cover with plastic wrap, and set aside to steam.
  • Toast the walnuts. Spread the walnuts on a parchment-lined baking sheet. Pop into the oven until light golden brown and aromatic, 10 to 15 minutes. Remove from the oven and set aside to cool.
  • Peel the red peppers using a paring knife. Discard the peels, stem and seeds. Throw the roasted red peppers, walnuts, garlic, paprika, cumin, red pepper flakes, lemon juice, pomegranate molasses and olive oil into a food processor with a teaspoon of salt, and run until the dip is smooth. Taste for seasoning and adjust accordingly. Cool and serve.

2 tablespoons lemon juice
2 teaspoons honey
1 teaspoon fine salt

1/4 cup chopped parsley

  • Pulse the toasted walnuts, olive oil, walnut oil, lemon juice, honey, salt and red pepper flakes in a food processor. Transfer to a bowl; mix in the roasted red pepper and parsley.

I love that this recipe makes a small amount. It's enough to add chopped, better tasting, nuts to a pumpkin or banana bread for instance. Double or triple the amount using full halves to place on guest trays or in bowl's. Easy and quick to make.

1 cup walnuts (whole or coarsely chopped depending on planed use)
1 tablespoon brown sugar
1 tablespoon boiled cider or 1 tablespoon maple syrup
1/4 teaspoon salt
1 pinch cayenne pepper (optional)

Steps:

  • Place a medium skillet over medium heat.
  • Melt the butter and add the walnuts.
  • Cook, stirring occasionally, until the nuts are barely starting to brown; this can happen quickly, so keep an eye on them.
  • Sprinkle the sugar over the nuts and stir; add the boiled cider or maple syrup and stir again to coat the nuts.
  • Sprinkle with salt and a pinch of cayenne if using.
  • When the nuts are coated, remove from the heat and spread on a baking sheet or piece of parchment to cool.

  • In a large nonstick skillet, heat honey, oil, and 1 tablespoon water over medium heat. Add walnuts; toss to coat.

4 tablespoons olive oil, divided
1 ¼ cups raw walnut halves
⅓ cup fresh breadcrumbs
1 cup fire-roasted red bell peppers - peeled, seeded, coarsely chopped
2 garlic cloves, crushed
2 tablespoons lemon juice
2 teaspoons pomegranate molasses
1 teaspoon salt, plus more if needed
1 teaspoon paprika
1 teaspoon Aleppo pepper flakes or other red pepper flakes, plus a pinch or so for garnish
½ teaspoon cumin
½ teaspoon cayenne pepper
1 tablespoon chopped Italian parsley for garnish

Steps:

  • Heat a skillet over medium heat. Add walnuts and drizzle with 1 tablespoon olive oil. Cook and stir frequently until walnuts smell toasted and are lightly browned, about 5 minutes. Remove from heat and transfer walnuts to a plate to cool. Reserve 2 or 3 to coarsely chop and use for garnish.
  • Place the skillet over medium heat; add 1 tablespoon olive oil. Sprinkle in the breadcrumbs; cook and stir frequently until crumbs turn golden brown, 3 or 4 minutes. Remove from heat and sprinkle onto plate with walnuts.
  • Place peppers in bowl of a food processor. Add walnuts, toasted bread crumbs, garlic, lemon juice, pomegranate molasses, salt, paprika, Aleppo pepper flakes, cumin, and cayenne pepper. Drizzle with remaining 2 tablespoons olive oil.
  • Pulse on and off, scraping mixture down occasionally, until mixture is fairly fine and smooth. Transfer to a bowl; cover and refrigerate until chilled, about 2 hours.
  • Transfer to a shallow serving bowl. Use the back of a spoon to swirl indentations on the surface to capture the garnishes. Garnish with reserved chopped walnuts, a drizzle of olive oil, pepper flakes, and chopped parsley.

Old Gourmet recipe. As yet untried by me, but I am a biscotti nut and a pepper nut, so am recording in my files.

Number Of Ingredients 12

2 cups all-purpose flour (unbleached for hard, bleached for more tender)
1/2 teaspoon baking powder
1/2 teaspoon baking soda (1/8 tsp. less if you want paler colour, more if darker)
1/8 teaspoon salt (change to 1/4)
2 teaspoons fresh ground black pepper, fairly fine (changed to 1 1/2 tsp., go easy at first)
1/2 cup unsalted butter
1 cup sugar (changed to 3/4 cup sugar)
2 large eggs
1 tablespoon lemon zest (or combination of all) or 1 tablespoon tangerine zest (or combination of all)
1 1/2 teaspoons vanilla
1 cup walnuts, toasted, cooled and chopped fine (better done by hand)
1/2 cup pine nuts (eliminated, used more walnuts)

Steps:

  • Preheat oven to 350°F.
  • To begin, toast and chop the walnuts, have ready the zests, grind the pepper and bring butter and eggs to room temperature.
  • Line two trays with parchment paper or nonstick liners like Exopat. Have ready a large floured surface, a dough scraper and extra parchment paper.
  • In a medium bowl sift the flours, baking powder, soda, salt and pepper.
  • In a large bowl, cream the butter. Add sugar and beat until light and fluffy. Add the eggs, beating well, and add the zest and vanilla.
  • Stir in the dry mixture into the butter mixture, then add the nuts. Do not over mix but also don't leave streaks of flour either. You will have quite a goopy mess.
  • Tip the dough out onto your work surface. Divide the dough into pieces. Two pieces for large trad. size biscotti, four pieces for smaller, thinner ones.
  • With floured hands and/or your dough scraper, form into logs about 12 inches long and 2 inches wide, quickly place onto trays about 3" apart, brush off excess flour, and put into the middle of preheated oven. (I say quickly because if you bumble about.
  • picking the logs up they will fall back onto the board. If this happens, don't worry, just form into logs and try again.).
  • If you don't want to cook all of the logs, wrap them up in parchment, then saran wrap and freeze.
  • Cook for about 20 mins (small) or 25 mins (large logs) until they are just turning golden.
  • Remove from oven, let cool on baking rack for 10 minutes or so -- longer doesn't hurt.
  • Now put the biscotti logs on a big cutting board, cut them on the diagonal about 3/4" wide, replace on same trays cut side down and place in oven (still 350° F.) for 7-8 minutes or until as hard as you want. I like them like granite so it takes them longer.
  • Let cool on racks and then store in airtight containers.

3 -4 red peppers, roasted (or about 1 1/2 cups canned or jarred roasted red peppers)
1 cup walnuts
1 tablespoon roughly chopped garlic
2 tablespoons extra virgin olive oil
1 lemon (will be using the grated zest and the juice)
1 teaspoon ground cumin
hot paprika or any small dried chili, to taste
salt, to taste

Steps:

  • Make sure the peppers are without seeds. Combine them in a food processor along with the walnuts, garlic, olive oil, the grated zest of the lemon, and the cumin.
  • Pulse to process so the ingredients are pulverized but not pureed; you want a paste, but one with a little texture. (If you are feeling energetic and have a mortar and pestle, you can also process by hand.).
  • Transfer the paste to a bowl and add the juice of the lemon, hot red pepper flakes, and salt. Taste and adjust seasoning.
  • Serve, or cover and refrigerate for a day or two (bring back to room temperature before serving).
