My grandma's candied yams are the best candied yams I have ever had! The pineapple is an awesome addition to this sweet dish.

¼ cup unsalted butter
½ cup pineapple juice
½ cup white sugar
½ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 (29 ounce) cans cut yams, drained
1 (8 ounce) can pineapple chunks, drained
1 ½ cups miniature marshmallows

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a saucepan over medium-low heat. Add pineapple juice, white sugar, brown sugar, cinnamon, and nutmeg; stir to combine and cook until sugars have dissolved, 2 to 3 minutes.
  • Meanwhile, place drained yams in a casserole dish. Add pineapple chunks. Pour sauce over top.
  • Bake in the preheated oven for 1 hour. Add marshmallows to the top and continue to bake until golden and melted, 10 to 15 minutes more. Let stand for 15 minutes before serving so sauce can thicken.

2 medium sweet potatoes or yams, peeled and cut into 1/2-inch slices (about 2 cups)
1 can (8 ounces) crushed pineapple in juice, undrained
1 tablespoon packed brown sugar
2 tablespoons chopped pecans
1 tablespoon chopped crystallized ginger
1 teaspoon margarine

Steps:

  • Heat oven to 375°. Spray 1-quart casserole with nonstick cooking spray. Layer yams and crushed pineapple in casserole. Sprinkle brown sugar, pecans and crystallized ginger over top; dot with margarine. Cover and bake about 45 minutes or until yams are tender.

6 sweet potatoes
1 (20 ounce) can crushed pineapple
1 cup packed brown sugar
1 pinch ground cinnamon
1 pinch ground ginger
1 pinch ground nutmeg
1 pinch ground cloves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 9x13 inch baking dish.
  • Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain, and transfer to a large bowl to cool. Peel and quarter.
  • In a sauce pan, combine pineapple, sugar, cinnamon, ginger, nutmeg and cloves. Bring to boil and reduce heat.
  • Arrange potatoes in a single layer in baking dish. Pour sauce over potatoes and bake for 45 minutes.

I had a friend from Maryland many years ago, however, and we enjoyed swapping recipes. This one's a combination of hers and one I already had in my file.

2-1/4 pounds sweet potatoes (about 4 medium), peeled and cut into 1-inch pieces
1 can (8 ounces) pineapple chunks, drained
1 cup pecan halves, chopped
1/4 cup orange juice
1 cup mayonnaise
2 tablespoons half-and-half cream
1 teaspoon curry powder
1 teaspoon grated orange zest
1 teaspoon white vinegar
1/4 to 1/2 teaspoon dried tarragon
Torn mixed salad greens and chutney, optional

Steps:

  • Place sweet potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, covered, 8-10 minutes or just until tender. Drain and place in a large bowl. Add pineapple, pecans and orange juice. , In a small bowl, mix mayonnaise, cream, curry powder, orange zest, vinegar and tarragon; pour over potato mixture and gently toss to coat. Refrigerate, covered, until cold. If desired, serve with salad greens and chutney.

4 yams (small-sweet potatoes can be substituted)
1/4 cup mayonnaise
1 tablespoon mustard
4 celery ribs (sliced 1/4-inch thick)
1 red pepper (small-diced)
1 cup pineapple (fresh or cannned diced)
2 scallions (chopped)
salt & pepper
1/2 cup cashews (coarsely chopped)
1/4 cup chives (chopped)

Steps:

  • Preheat oven to 400, wrap potaotes in foil, bake 40-60 min., unwrap, when cool, cut into 3/4" chucks, check often as salad is best when potatoes are not cooked till soft.
  • In a large bowl mix remaining ingredients (except cashews), gently stir in potatoes, chill covered about 1 hour.
  • Fold in cashews and sprinkle with chives -- enjoy!

1 tablespoon olive oil

  • Drain pineapple, reserving juice. Cut slices in half; set aside. 1 can (20 ounces) unsweetened pineapple chunks
1/4 cup reduced-fat margarine
2 tablespoons lemon juice
1 tablespoon cornstarch
2 tablespoons water
Artificial sweetener equivalent to 2 tablespoons sugar
3 cups chopped apples
2 cups green grapes
2 teaspoon poppy seeds
3/4 cup chopped pecans, toasted

Steps:

  • Drain pineapple juice into a saucepan. Add margarine and lemon juice; cook over medium heat until margarine is melted. In a small bowl, combine cornstarch and water until smooth; stir into juice mixture. Bring to a boil; boil and stir for 2 minutes. Reduce heat; add sweetener. Cool to room temperature, about 30 minutes. In a large bowl, combine pineapple, apples, grapes and poppy seeds. Add the dressing; toss to coat Cover and chill for at least 1 hour. Just before serving, gently toss in pecans.

This is a dish that we make every Thanksgiving and is quite easy and tasty. There usually isn't too much left. And the orange yam color adds some interest to the table. A lot of this recipe is dependent on the amount of yams and 'eyeballing it' so the measurements aren't always exact. This can also be made ahead of time and reheated. Servings are estimated as we make this for about 22 adults and 8 children under 8 yrs of age. Please note that if recipe is to be made ahead of time and reheated, it should be on the moist side since it will need the additional liquid during reheating.

5 lbs yams (or sweet potatoes)
2 (20 ounce) cans crushed pineapple, in its juice
1 -2 cup walnuts or 1 -2 cup pecans (whole, halved, or slightly chopped)

Steps:

  • Peel yams and cut into thirds or quarters.
  • Place into boiling water and cook until soft, approximately 10-15 minutes.
  • Drain water and mash yams.
  • Add 1 can of crushed pineapple and mix well.
  • Continue adding crushed pineapple until mixture is quite moist.
  • Add nut pieces.
  • Note: Depending on the consistency, you may want to add a smaller can of crushed pineapple or pineapple juice instead of or in addition to the second can mentioned above.

Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

4 large sweet potatoes, peeled and cut into 1/4-inch-thick rounds
8 tablespoons (1 stick) salted butter
2 cups granulated sugar
One 20-ounce can crushed pineapple
1 teaspoon ground cinnamon
1 teaspoon ground cloves
Pinch kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
  • Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.
  • Plate and serve immediately. Pour extra sauce from the bottom of the baking dish on top.
