4 ounces almonds
1 pound sliced bacon

Steps:

  • Preheat the broiler.
  • Slit dates. Place one almond inside each date. Wrap dates with bacon, using toothpicks to hold them together.
  • Broil 10 minutes, or until bacon is evenly brown and crisp.

8 thick slices applewood-smoked bacon, halved crosswise
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven to 400 degrees F. Cut a slit in each date. Place almonds inside slits. Press together the dates to close slits. Wrap each date with a piece of bacon.
  • Line a shallow baking pan with Reynolds Wrap® Aluminum Foil. Add a roasting rack; place the dates on rack. Roast for 15 to 20 minutes or until bacon is crisp. Serve immediately with toothpicks. Dates will be hot inside.

70 to 80 salted roasted almonds
2 pounds thin bacon, cut in half

Steps:

  • Preheat the oven to 425 degrees F.
  • Stuff each date with 1 to 2 almonds. Wrap each date with half a piece of bacon and secure with a toothpick.
  • Bake, turning the dates halfway through so the bacon is evenly cooked, 15 to 18 minutes. Serve warm or at room temperature.

2 tablespoons sour cream, room temperature
1 tablespoon mascarpone, room temperature
1 teaspoon lemon zest
2 tablespoons lemon juice
3 tablespoons chopped fresh basil
1/4 teaspoon kosher salt
12 Medjool dates
2 links hot Italian sausage, casings removed
6 slices bacon (about 4 ounces), cut crosswise in half

Steps:

  • For the crema: Whisk together the sour cream, mascarpone, lemon zest, lemon juice, basil and salt. Cover, and refrigerate for at least 1 hour to let the flavors marry.
  • For the dates: Preheat the oven to 400 degrees F.
  • Make a small lengthwise slit down the center of each date. Remove the pits and open the dates slightly; make sure they stay intact. Stuff each date with 1 teaspoon of the sausage. Close the dates up and around the sausage¿they won't close completely¿leaving some of the sausage exposed. Wrap each date in a piece of bacon and place on a baking sheet.
  • Bake for 8 minutes. Flip the dates, and bake until the bacon is crisp, another 8 to 10 minutes. Serve warm, with the crema on the side.

  • Put one or two almonds inside date and wrap with 1/2 slice of bacon.
  • May need to use toothpick.
  • I used a deep fryer at 350º and fried them for a couple minutes.
  • You could also pan fry (or Wok) until bacon cooked.
  • Some have tried baking at 425º until bacon cooked – but this method takes longer and bacon not cooked as evenly.

When I catered I always told my customers to order 2-3 times more of these than anything else. Most people expect scallops but are pleasantly surprised by the sweet wonderful flavor inside. A combination of sweet, crunchy, salty and smoky is a real winner! You won't be sorry you went out on a limb to try these. You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

1 lb pitted dates
1 (4 ounce) package whole almonds, blanched
1 1/2 lbs smoked bacon, thin sliced

Steps:

  • Stuff each date with one almond.
  • Cut bacon into half or thirds.
  • Wrap bacon around date and secure with a round toothpick.
  • Preheat oven to 400 degrees.
  • Place dates on a foil lined (they are messy and this makes them much easier to clean up) baking pan and cook until bacon is crispy (around 15 minutes).
  • Drain on paper towel and serve warm or room temperature.

A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

16 medium Medjool dates, pitted
Black pepper (optional)

Steps:

  • Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
  • Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
  • Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.
