This was one of my mother's recipes for Christmas cookies. These moist and crisp cookies are fun and easy to make. These cookies get better over time when the flavors blend together. Enjoy.

1 cup butter
1 1/2 cups sugar
2 eggs
2 tablespoons milk
4 cups Rice Krispies
2 cups dates, chopped
1 teaspoon salt
1 cup pecans, chopped
1 teaspoon vanilla
0.5 (14 ounce) package flaked coconut

Steps:

  • Melt butter and sugar carefully.
  • Add chopped dates and cook until it boils. Take off heat and allow to cool slightly.
  • Add milk and salt into well beaten eggs and stir into hot date mixture.
  • Boil mixture 2 minutes.
  • Add vanilla and nuts.
  • Let cool, then add Rice Crispies and stir.
  • Butter hands, and shape into well rounded tablespoon size balls and roll in coconut.
  • Store in air-tight container.

These things are great! The dates add natural sweetener - no sugar added! They come from the Biggest Loser Cookbook and are probably the best recipe in there! Note: These taste great with natural peanut butter, which avoids having sugar added because of the sugar added to regular peanut butter.

Healthy Date Balls image

This is very similar to already-posted recipes, but with healthier ingredients. I experimented with my favorite no-bake cookie recipe and was delighted to find that there's almost no difference in taste!! I can't keep my hands off these! By the way, the dates I use are whole pitted dates, that I "dice" with a scissors. I'm not sure if the pre-chopped, flour coated version would work.

1/2 cup brown rice syrup
1/2 cup butter
1 pinch salt
8 ounces dates, chopped
3 cups brown Rice Krispies
1 cup unsweetened dried shredded coconut

Steps:

  • In a medium saucepan, combine syrup, butter, salt, and dates.
  • Heat to boiling; boil and stir constantly for five minutes.
  • Remove from heat; gently stir in cereal.
  • Immediately (you need to work it while warm) begin to roll into 1 1/2 inch balls; butter your hands to prevent sticking.
  • Roll each ball in coconut and cool on wax paper.

I have got this recipe in a cookie exchange party. One of my favorite Christmas events. These no-bake cookies are amazing even if you don't fancy dates you will enjoy them. They are buttery little crunchy and easy to make.

1 cup butter
1 cup dark brown sugar
1 cup finely chopped dates
1 egg
3 cups Rice Krispies
1 cup coconut
1/2 cup maraschino cherry, chopped
1 tablespoon vanilla extract
2 1/2 cups coconut, for rolling

Steps:

  • In a large pot melt butter and when it starts to clarify - smells good add sugar, dates, egg mix well bring to full boil and cook for 1 minute.
  • Stir in cereals, 1cup coconut, cherries, vanilla.
  • Stir with wooden spoon until all ingredients comes together.
  • Let it sit for 10 minutes.
  • Moisten your hands with little bit of water and make small balls.
  • Roll in coconut.
  • Keep in refrigerator in covered container.
  • Can be made one week ahead.

My mom always had these cookies on our Xmas cookie trays. It is an absolute must every year! Everyone loves these! (I believe that Mom cut this recipe from a magazine but I don't know its origin.) The preparation time includes chilling time in the fridge.

1 cup peanut butter
1 cup icing sugar
2 tablespoons butter
1 cup dates, chopped
1 cup peanuts, chopped fine (unsalted)
2 tablespoons butter
8 ounces semi-sweet chocolate chips

Steps:

  • Soften the peanut butter by microwaving for about one minute on Power Level 3.
  • In a medium bowl, cream peanut butter and butter.
  • Stir in icing sugar, dates and peanuts and mix well.
  • Roll the peanut butter mixture into 1" balls or whatever size you like, if dough is sticky, refrigerate for 30 minutes or so before rolling.
  • Place on waxed paper lined baking trays and refrigerate until firm, about 1 hour.
  • Place butter and chocolate chips in microwave safe bowl and melt the chocolate at 30 second intervals until smooth (I usually do this at Power Level 6 so that it doesn't overcook).
  • Dip the balls into the chocolate and place back onto the wax paper lined trays and pop into the fridge again for an hour or so.
  • These freeze beautifully - I place balls into tupperware and put wax paper between the layers.
