2 tablespoons chopped fresh thyme
2 tablespoons chopped fresh rosemary
1 tablespoon chopped fresh tarragon
2 garlic cloves, minced
2 teaspoons salt
1 1/2 teaspoons ground black pepper
2 1 1/2-pound flank steaks
1 tablespoon olive oil
Tomatoes
2 cups halved cherry tomatoes
1 cup chopped fresh Italian parsley
1/4 cup coarsely chopped pitted Kalamata olives or other brine-cured black olives
1/4 cup coarsely chopped pitted brine-cured green olives
1/4 cup chopped fresh basil
1/4 cup extra-virgin olive oil
2 tablespoons Sherry wine vinegar

Steps:

  • For steak:
  • Mix first 6 ingredients in small bowl. Place steaks in large glass baking dish. Brush steaks with olive oil. Rub with herb mixture. Cover with plastic wrap and refrigerate at least 1 hour and up to 8 hours.
  • For tomatoes:
  • Mix all ingredients in large bowl. Season tomatoes to taste with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature.)
  • Prepare barbecue (medium-high heat). Grill steaks until cooked to desired doneness, about 4 minutes per side for medium. Transfer steaks to cutting board. Cover with foil. Let stand 5 minutes.
  • Cut steaks across grain into 1/2-inch-thick slices. Arrange steak slices on large platter. Spoon tomatoes with juices over steaks and serve.

1 teaspoon black peppercorns
1 teaspoon fennel seed
1 teaspoon dried rosemary
1 garlic clove
1 tablespoon olive oil
2 cups cherry tomatoes
1 red onion, finely chopped
1 tablespoon olive oil
1 tablespoon balsamic vinegar
fresh cilantro
1 head lettuce, separted into leaves
1 parsnip
2 tablespoons sour cream
salt and pepper

Steps:

  • Crush the black peppers, fennel seeds, rosemary and the garlic with a pestle and mortar. Mix with the olive oil
  • Rub the meat with the mixture and place everything in a plastic bag for a couple of hours.

  • While the meat is marinating, put together the tomato salad by slicing the tomatoes in half and adding the other salad ingredients. Season with salt and pepper.
  • Dry the meat a bit by patting it with a paper towel and put in a frying pan sizzling with butter and oil. Continue to fry (or heat in an oven) until its core temperature reaches 130 F (55 C). At that time, take it away from the heat and let it sit.
  • Cut the parsnip in small pieces and boil them soft in salted and peppered water. Drain the parsnip and mix in the sour cream and make a puree.
  • To serve:.
  • Lay 10 salad leaves on a serving plate. Cover them with the tomato salad. Slice the meat and lay it on the top. Add the parsnip puree. Give it a couple of twists of fresh ground pepper before serving.

2 yukon gold potatoes, scrubbed and thinly sliced
12 ounces cherry tomatoes, broken into smaller clusters if on the vine
1 garlic clove, smashed
1 tablespoon chopped fresh oregano
4 teaspoons olive oil, divided
1 teaspoon coarse salt, divided
fresh ground black pepper
2 prepared whole trout, about 9 ounces each
6 thin lemon slices

Steps:

  • Preheat oven to 425 deg F. Toss together the potatoes, tomatoes, garlic, oregano, 1 tbl oil and 1/2 tsp salt. Season with salt.
  • Layer the potatoes in a 9x13 pan, overlapping as necessary and top them with the tomatoes. Roast until tomatoes are juicy and potatoes are tender, about 25 minutes. Remove from oven.
  • Rub fish with the remaining 1 tsp oil. Season with the remaining 1/2 tsp salt and tuck 3 slices lemon into each cavity. Move tomatoes towards the side of pan and arrange the trout on top of the potatoes.
  • Roast until the fish is done, about 20 minutes. Serve immediately.

1 lb round steak
2 tablespoons soya sauce
1 tablespoon wine
salt
1 onion, sliced thinly
1 clove garlic, minced

1 1/2 tablespoons cornstarch, dissolved in 1/2 c. water

Steps:

  • Carefully slice beef into thin bite size pieces about 1x1".
  • Be sure you slice beef across the grain, otherwise the beef will become tough after cooking.
  • Marinate meat in soya sauce, wine, salt for a few minutes.
  • In the meantime slice tomatoes, green peppers, onion; mince garlic.
  • Make up corn starch solution.
  • Have sugar on hand.
  • Heat oil up in wok until smoking.
  • Stir fry beef quickly in it for no longer than 3 minutes.
  • Remove beef to a platter.
  • Reserve.
  • (If beef is allowed to remain cooking in wok with other ingredients, it will become hard and tough.) Add green peppers and tomatoes to wok.
  • Add sugar, cook tomatoes down until juice forms in bottom of wok (about 3-5 minutes cooking time).
  • Add beef back into wok.
  • Stir all ingredients up so that it is mixed.
  • Add corn starch solution, cook 1 minute.
  • Shut burner off, serve dish immediately.

3 tablespoons dry breadcrumbs
3 tablespoons fresh parsley, minced

1 cup nonfat sour cream
2 tablespoons prepared horseradish
1 teaspoon fresh lemon rind, grated
1/2 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 400F°.
  • Trim fat from tenderloin; fold under 3 inches of small end.
  • Rub the tenderloin with oil.
  • Combine the breadcrumbs, parsley, pepper, and 1/2 teaspoon salt.
  • Rub the tenderloin with crumb mixture; coat with cooking spray.
  • Place tenderloin on the rack of a broiler pan or roasting pan.
  • Insert a meat thermometer into thickest portion of tenderloin.

  • Bake an additional 10 minutes or until the thermometer registers 140° (medium-rare) to 155° (medium).

I found several stuffed tomato recipes online and mixed-and-matched a bit to make this one for Thanksgiving 2015. In general it's pretty easy, but be careful with the tomatoes. I used cocktail (a bit larger than cherry tomatoes), cut the thinnest of slips in the bottom to make them stand up; I cut off the tops and used a paring knife to loosen the membrane, then picked out the insides with my finger. I prepared the tomatoes and the cheese filling the night before and left them in the fridge overnight, filling in the morning with a piping bag. I left the cooking time out as this recipe could be done with out the roasted garlic, depending on the time you have and flavors you want.

1 head garlic
olive oil
salt and pepper
25 cocktail tomatoes
300 g oz cream cheese, softened
green onions or chives
1 teaspoon fresh lemon juice (to taste)
chives, sweet paprika for garnish (optional)

Steps:

  • Remove outer husk of garlic head, cut off top with stem so that tops of bulbs are exposed. Place on aluminum foil, drizzle with olive oil and salt and pepper. Close aluminum foil packet and place in 325F preheated oven for 45-60 minute When bulb is soft, remove from oven and allow to cool.
  • Wash tomatoes. Cut a tiny sliver off of the bottom of each one, just to ensure they stand up (be careful not to pierce the tomato). Cut off top of each tomato and clean out insides. If you have time you can sprinkle the insides with salt and place upside down on a rack to drain, but it's not necessary.
  • In a bowl, combine cream cheese, green onions or chives (or any other herb that goes well with roasted garlic) and lemon juice. Take roasted heaad of garlic and squeeze paste from bulbs directly into bowl. Mix well (I use the whisk attachment on a stand mixer, gets it blended nicely in no time).
  • Use the piping bag to fill each tomato. Garnish as desired (sweet paprika and chives shown in picture). Note: if storing overnight in fridge, you may want to remove the cheese a few minutes before filling the tomatoes to soften it up and make it easier to squeeze out with the piping bag; however, I found that there was still a lot of condensation which dripped on the plate and tomato, so I wrapped a paper towel around the tip to catch any dripping.
