Awesome Apple Bread image

This bread is so moist and flavorful that my kids even eat the ends, which for most quick breads I usually have to throw away. At Christmas, I make the mini loaves and give as gifts to my neighbors. The oil can be replaced with 1 cup of unsweetened applesauce. Still flavorful but not quite as moist. If possible, don't skip the walnuts, they really add to it.

1 cup oil
3 eggs
2 cups sugar
1 teaspoon vanilla
3 cups apples, diced
3 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup walnuts, chopped (optional)

Steps:

  • Combine and set aside the oil, eggs, sugar, and vanilla.
  • Sift flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually.
  • Add apples and nuts.
  • Bake in 2 regular loaf pans or 3 foil loaf pans for 1 1/2 hours at 300 degrees.
  • Cool 10 minutes in the pan.
  • Sprinkle with sugar, if desired.
  • Note: I bake it at 325 degrees for about 70 minutes.

4 c apples, peeled , cored and chopped
4 large eggs, beaten
1 c canola oil
2 tsp pure vanilla extract
2 tsp baking soda
2 tsp salt
2 tsp cinnamon
3 c all purpose flour
2 c white sugar
TOPPING
3/4 c all purpose flour
1/4 c sugar
2 tsp cinnamon
1/2 c butter, room temperature

Steps:

  • 1. Preheat oven to 350°. Lightly grease two standard bread loaf pans and set aside. Peel, core and slice the apples. Cut into good-sized chunks, about 1 inch in size
  • 2. In a large bowl, beat the eggs with an electric mixer until fluffy.
  • 3. Add the oil and beat until combined.
  • 4. Add the VANILLA EXTRACT, baking soda, salt and CINNAMON. Beat until thoroughly mixed
  • 5. Next, add the flour and sugar and mix on low just to blend. Turn the mixer to high and beat until mixture is smooth. The batter will be very thick, almost like cookie dough.
  • 6. Fold in the chopped apples, mixing by hand with a spoon so the apples do not get broken up. Divide the mixture between the two pans. Since the batter is so thick, it is easiest to spoon the batter into the pans
  • 7. To prepare the topping, combine flour, sugar and PENZEYS CINNAMON in a small bowl.
  • 8. Cut the butter into the mixture with a fork until all ingredients are moist and crumbly. If you don't mind a little mess, it is faster to use your hands.
  • 9. Sprinkle equal amounts of topping on each loaf. Bake for about 1 hour on the center rack of the oven.
  • 10. The loaf should feel fairly firm when touched in the middle; if not, bake an extra 5 minutes
  • 11. Remove from the oven and place on a cooling rack. Let cool for 5 minutes before removing from the pans. It is easier to slice the bread if you can wait until it is at least mostly cool.

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Prepare 2 loaf pans (8 1/2x4 1/2-inch loaf pans) with cooking spray.
  • Mix flour, baking soda, salt, walnuts, and apples in a large bowl. Whisk oil, sugar, eggs, and cinnamon together in a small bowl; add to flour mixture and mix until just moistened. Evenly divide mixture between prepared loaf pans.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, about 90 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Steps:

2 cups green apple (peeled & shredded)
2 large eggs
½ cup white sugar
½ cup brown sugar
2 tsp vanilla extract
¼ cup melted butter (melted and cooled)
¾ cup applesauce (unsweetened)
2 cups all purpose flour
½ tsp salt
¼ tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
½ tsp ground nutmeg

Steps:

  • Preheat oven to 375 degrees. Grease a loaf pan and set aside.
  • In a small mixing bowl add the eggs, vanilla extract, melted butter and applesauce. Stir until completely combined. Mix in the sugars. Stir until combined.
  • In a large mixing bowl add the flour, salt, baking powder, baking soda, cinnamon, and cloves. Stir with a fork to combine. Pour the wet ingredients into the dry ingredients and stir to combine. Add in the shredded apple and stir.
  • Pour dough into prepared loaf pan. Bake at 375 degrees for 50-60 minutes, top will be golden brown. Check that it's cooked by inserting a toothpick in the center, once it's done cooking the toothpick will come out clean, no dough will be stuck on it.
  • Allow bread to cool in pan for about 5-10 minutes. Turn upside down and remove bread loaf from pan and allow to continue cooling on wire rack.
  • Store covered at room temperature for 3-4 days.

This lovely apple bread has generous cinnamon swirl and crisp sugared top.

Number Of Ingredients 11

½ cup light brown sugar (packed)
1½ teaspoons ground cinnamon
2 large eggs
½ cup granulated sugar
½ cup (1 stick) unsalted butter, melted and slightly cooled
½ cup milk
2 teaspoons vanilla extract
1½ cups all-purpose flour, spooned into measuring cup and leveled-off
½ teaspoon salt
1½ teaspoons baking powder
1 cup peeled, cored, and finely diced tart baking apples, from 1 apple (preferably Granny Smith)

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Spray an 8.5 x 4.5-inch loaf pan lightly with nonstick cooking spray. Line the long side of the pan with a parchment paper "sling" and spray lightly with nonstick cooking spray again.
  • In a small bowl, mix the brown sugar and cinnamon until evenly combined. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment or beaters, beat the eggs and granulated sugar on medium speed until pale and creamy, about 2 minutes.
  • With the mixer on low, gradually add the melted butter followed by the milk and vanilla, and mix just until evenly combined.
  • Add the flour, salt, and baking powder to the batter and mix on low speed until evenly combined.
  • Add the apples to the batter and fold with a rubber spatula until evenly incorporated.
  • Spoon about ⅔ of the batter into the prepared pan. Sprinkle about ⅔ of the brown sugar-cinnamon mixture on top of the batter. Spoon the remaining batter over top, followed by the remaining brown sugar-cinnamon mixture. Using a butter knife, swirl the layers by making a zig-zag motion through the batter once in each direction (don't overdo it!).
  • Bake for about 50 minutes, until the bread is golden brown and a cake tester or toothpick inserted into the center comes out clean. Let the bread cool on a rack for about 30 minutes, then use the parchment sling to lift the bread out of the pan and onto the rack. Let cool completely before slicing, a few hours or overnight. Store loosely covered with aluminum foil on the countertop for up to 4 days.

2 cups low-fat (1%) milk
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • Lightly butter 9-inch-diameter glass pie dish. Cut each bread slice into 4 squares. Arrange half of bread squares in single layer in prepared dish. Melt 2 teaspoons butter in large nonstick skillet over medium heat. Add apples; sauté 5 minutes. Sprinkle with 2 tablespoons sugar; sauté until apples are golden, about 6 minutes. Arrange apples atop bread in dish. Sprinkle with currants. Top with remaining bread squares in single layer.
  • Bring milk to simmer in small saucepan. Whisk eggs and remaining 6 tablespoons sugar in medium bowl to blend. Gradually whisk in hot milk, then vanilla and cinnamon. Pour over bread and apple mixture. Let stand until milk mixture is almost absorbed, occasionally pressing down on bread with spatula to submerge, about 30 minutes.
  • Preheat oven to 350°F. Place pie dish in roasting pan. Add enough hot water to roasting pan to come halfway up sides of pie dish. Bake bread pudding until top is golden and custard is set, about 40 minutes. Remove from water. Serve warm or at room temperature.
