Steps:

  • Mix first 9 ingredients; toss with shrimp. Let stand 15 minutes., Thread shrimp and lime slices onto 4 metal or soaked wooden skewers. Grill, covered, over medium heat until shrimp turn pink, 2-4 minutes per side.

Steps:

  • Heat oil in a large skillet over medium-high heat. Saute onion, garlic, salt, and pepper in hot oil until onion is soft and golden, about 5 minutes.
  • Stir shrimp into onion mixture; saute until shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 2 minutes per side. Season with salt and pepper. Add cilantro and lime juice; toss to coat.

4 skinless, boneless chicken breasts
1/4 cup olive oil
1 lime, juice
1/2 cup cilantro, chopped
1 teaspoon salt
3 cloves garlic, minced
1/2 teaspoon black pepper

Steps:

  • Place the chicken breasts in a large ziplock bag. In a small bowl, whisk together the olive oil, lime juice, cilantro, salt, garlic and pepper.
  • Pour the marinade over the chicken and seal the bag, squeezing out all the air.
  • Move the chicken around in the marinade until it is all evenly coated.
  • Refrigerate and let it marinate for at least 30 minutes and up to 4 hours (see note).
  • You can freeze the chicken in the marinade immediately and let it marinate as it defrosts, or marinate and cook it immediately.
  • Either grill the chicken for 6-8 per side, pan fry for 6-8 minutes per side over medium heat, or bake at 375 degrees F for 20-30 minutes, or until an internal temperature of 165 degrees F has been reached.
  • Let the chicken rest, tented with foil, for 5 minutes before serving.

1 bunch fresh cilantro
8 medium chopped scallions
2 green chilies (optional)
2 teaspoons minced garlic
1 tablespoon lime juice
2 teaspoons ground cumin
1 pinch turmeric
3 lbs large shrimp
coarse salt
fresh ground black pepper
chili powder
lime, quartered
fresh cilantro

Steps:

  • In a blender or food processor place the cilantro leaves and stems, scallions, chilies, garlic, lime juice, cumin, and turmeric.
  • Puree, adding a little water if necessary to achieve the desired consistency.
  • Peel the shrimp, leaving the tail intact.
  • Devein them, place them in a bowl, and toss with the cilantro puree.
  • Marinate for 8-12 hours.
  • Prepare a moderately hot charcoal fire.
  • When ready to cook, scoop up the shrimp so that more of the marinade remains on one side of each one.
  • Place the shrimp marinade-side up pon the grill.
  • Cook until almost done, about 2 minutes.
  • Turn shrimp over and cook quickly on marinade side, about 1 minute.
  • Remove shrimp from grill.
  • Divide shrimp among serving plates.
  • Pass garnishes at table.
  • Each guest should sprinkle the shrimp with coarse salt, pepper, chili powder, a squeeze of lime juice, and a few cilantro leaves.

1 lb shrimp ((peeled with tails left on and deveined / I used the cooked shrimp for this recipe))
3 tbsp unsalted butter
2 tbsp garlic ((minced))
1 lime juice ((+ extra for serving))
½ cup Cilantro ((chopped))
salt and pepper to taste
1 tsp basil leaves (dried) ((optional))

Steps:

  • Using a paper kitchen towel, dab the shrimp dry, add ¼ teaspoon of salt, and a few fresh ground black pepper twists.
  • Take your Microplane and peel off some lime zest, and are set to one side. Using a paring knife, cut the strips of zest in half lengthwise.
  • Preheat your skillet on the stovetop and add a tablespoon of butter. Set two more tablespoons of butter aside for use later.
  • With the butter bubbling gently over medium heat, add the chopped garlic and cilantro. Cook for less than a minute, gently stirring all the time.
  • Add the shrimp, taking care not to stack them too much. Cook them for about one minute, stirring gently every few seconds to ensure that each shrimp cooks until all have turned pink. Note: You can try to cook in batches if needed to avoid over-crowding.
  • The chopped scallions are optional, but if you wish to use them, now is the time to put them into the skillet together with the lime zest.
  • Season with dried basil leaves (or your favorite seasonings). Give a quick stir to ensure that everything is coated in the sauce and cooked evenly.
  • When done, slide the skillet gently off the stovetop.
  • Keeping the skillet off the heat all the time, quickly add in the fresh chopped cilantro, the lime juice, and the two tablespoons of the butter you set aside earlier. Don't forget to add the lime zest.
  • Your skillet will retain the heat long enough to melt the butter as you stir the contents of the pan to amalgamate everything, creating a delicious, silky, buttery sauce.
  • Season to taste and serve with some wedges of lime and a sprinkling of fresh cilantro.

  • Combine all the ingredients in a food processor for less than one minute or until the texture is nice and chunky. Be sure the garlic is fully processed. If you don't have a food processor you can make the marinade by dicing the cilantro, jalapenos and garlic very lightly and then mix the ingredients in a bowl with a fork.
  • For a less spicy version, remove the inside of the jalapeno and wash it under cold water and be sure not to get any of it in your eyes. Store the marinade in the fridge for up to one week.

Steps:

  • Heat broiler. If using an electric oven, place rack on top level and heat to broil/high.

  • Place shrimp in single layer in 12 1/2-by-14 1/2-by-2-inch roasting pan.

2 pounds jumbo or extra jumbo shrimp (16-21 ct) (peeled with tails left on and deveined)
2 tablespoons unsalted butter, (divided)
2 tablespoons olive oil, (divided)
1 tablespoon olive oil
1 tablespoon lime juice
1 tsp EACH chili powder, ground cumin, onion powder
1/2 tsp EACH smoked paprika, ground coriander, salt, pepper
1/4 teaspoon cayenne pepper
3 tablespoons unsalted butter
6 cloves garlic, minced
1 cup fresh cilantro, chopped ((measure before chopping))
3-4 tablespoons lime juice

Steps:

  • Add marinade ingredients to a large bowl and whisk to combine. Add shrimp and marinate at room temperature for 15-30 minutes or in the refrigerator for up to 60 minutes (no more!). Note, this is a wet rub marinade and will be thick without extra liquid.
  • Melt one tablespoon butter in one tablespoon olive oil in a large skillet over medium-low heat. Increase heat to medium-high. Once very hot and sizzling, add half the shrimp in a single layer and cook approximately 2-3 minutes per side, or just until opaque and cooked through. Transfer shrimp to a plate and repeat with remaining shrimp.
  • To the now empty skillet, melt 3 tablespoons butter over medium heat. Once melted, add the garlic and cook until fragrant, about 1 minute. 12 large tiger prawns (21/25 count), peeled and deveined
1 small shallot, finely diced
juice of 2 limes
2 tablespoons fresh cilantro, chopped (30ml)
1 tablespoon honey (15ml)
2 teaspoons Thai red chili, finely chopped (10ml)
1 tablespoon peanut oil (15ml)
salt and pepper to taste
1 tablespoon vegetable oil (15ml)
Fresh cilantro sprigs for garnish, optional

Steps:

  • Place the cleaned shrimp in a large non reactive bowl. In a separate bowl mix shallots, lime juice, cilantro, honey, red chili and peanut oil until evenly combined.
  • Pour liquid mixture over shrimp and cover with plastic wrap. Place bowl in the refrigerator to marinate for 30 minutes to 1 hour maximum.
  • Remove bowl from refrigerator and discard plastic wrap. Season the shrimp with salt and pepper.
  • Place a large skillet over high heat. Add vegetable oil and allow to heat for 30 seconds. The oil should be hot but not smoking.
  • Add the shrimp & the marinade to the pan. Cook shrimp for approximately 1 minute per side or until shrimp are bright pink. Flip and continue to cook until cooked through.
  • Remove shrimp from hot pan and place on a serving platter. Garnish with cilantro sprigs if desired and serve hot.
