1 garlic clove, minced (optional)
2 Tbs. onion, chopped (optional)
1 c. carrots, cut into small bite-sized pieces (optional)
1 1/2 - 2 c. potatoes, cut into bite sized chunks
1 c. green peas (optional)
1/2 tsp. salt
3/4 tsp. seasoning salt
1/2 tsp. black pepper
1 - 2 c. chopped, cooked chicken
1 1/2 - 2 Tbs. flour and enough water to make a paste
2 large eggs, beaten
1/2 c. water
1 tsp. salt
2 c. flour

There are so many PA Dutch recipes, but I think Chicken Pot Pie (Bot Boi) would be at the top of the list for yumminess & popularity. This is how I make mine. 1 roaster chicken
5 yukon gold potatoes (i don't peel them)
1 onion
2 celery stalks
2-3 bouillon cubes
1 container chicken base (i use knorr's homestyle stock)
12-16 oz pot pie noodles
3 pinches of saffron threads
salt & pepper
1 bunch fresh curly parsley
1 can cream of chicken soup (optional)
1 pinch nutmeg

Steps:

  • 1. I roast my chicken the day or night before with onion & celery stalks & about 1 cup of water, then I keep adding more water. Then, I refrigerate the broth & chicken separately until next day. Remove the broth & skim any fat off the top.
  • 2. In a large stockpot, add the broth & fill the pot up with water until it's a little over half-way full. Add 2 bouillon cubes, some salt & pepper, pinch of nutmeg, & saffron pinches. I put the onion back in to the broth to continue adding flavor, too. Add the chicken base or stock and heat this over medium for about an hour.
  • 3. Add the can of cream of chicken soup (this is not pure PA Dutch, but my friend did this one time & it made the broth amazing, so now I always do). Heat some more & then taste the broth. I will add more water or more bouillon, or pepper, as I see the need. I don't add more salt until the very end if it needs, as it normally does not.
  • 4. Discard the onion. Add the potatoes & carrots. Keep cooking over medium heat for about another hour. Get your chicken ready by removing skin & pulling meat off the bone. I use all the dark meat & one breast & save the other breast for later. When the carrots & taters are getting fork tender, add the chicken. Get this to a low boil now.
  • 5. When boiling, add the pot pie noodles. Cook on boiling with lid on for about 10-15 minutes. Stir in chopped parsley. Then turn off heat & just leave the lid on until you're ready to dig in! Use a fork or a spoon or both & make sure you drink that yummy broth leftover in your bowl. Enjoy!!!
  • 6. If you want to make your own pot pie noodles, there are recipes all over the web. This is one from an old PA Dutch cookbook: 1 1/4 cups of flour; 1 egg shell of broth or water; 1/2 tsp. of baking powder; 1 egg; pinch of salt. Mix the dry ingredients. Then add egg & water (or broth). Roll this out & cut into squares. Drop into boiling broth for 20 minutes.

3-4 lb pounds chicken thighs
10 c chicken stock
3-4 stalk(s) celery diced
12 oz baby carrots
4-5 potatoes peeled and quartered
1 large onion diced
TO MAKE THE DOUGH SQUARES
4 c flour
2 eggs
3/4 c milk
salt and pepper to taste

Steps:

  • 1. Boil chicken thighs and onion in chicken broth in large covered pot until chicken is cooked and tender, about an hour. When finished remove chicken and remove skin and take off bone. While chicken is cooking cut vegetables and make dough.
  • 2. To make dough: Mix flour, eggs and milk and a table spoon of salt in a stand mixer. Add extra flour or milk if dough is too sticky or too dry. Dough should be a little sticky but still come away from mixing bowl. On floured surface roll out dough to about 1/8 inch thickness. Use a pizza cutter and cut into 2 inch by 2 inch squares.
  • 3. Add pepper and 1 tablespoon of salt to broth. (Add more or less salt to taste at this point). Remove pot lid. Add celery to broth and sprinkle the dough with a small amount of flour. Add squares to broth a few at a time to avoid sticking. Bring to a boil and then reduce heat to medium and cook uncovered for 25 minutes on medium heat. Add potatoes and cook for another 20 minutes. Gently stir stew during cooking time occasionally to make sure squares don't stick to bottom. Add cut up chicken and carrots to pot. Cook covered on low heat until carrots are tender. Broth should be thick like a stew when done. You can add small amounts of water if it becomes to thick while cooking.
  • 4. Serve with Italian bread for dipping.

4-5 chicken breasts or thighs if you prefer
1 c chopped onion
1 tsp celery seed
3 large potatoes, peeled and cut into bite sized chunks
4 carrots, peeled and sliced into 1/4 inch slices
1/2 tsp garlic powder
2 Tbsp chopped fresh parsley or dried parsley flakes
5 chicken bouillon cubes
2 1/2 c flour
3/4 stick butter, softened
1/3 c (approximately) milk
salt and pepper to taste
1 egg

Steps:

  • 1. For the stock: Fill a large Dutch oven with about 2 quarts of water. Add the chopped onion, celery seed, garlic powder, parsley, bouillon cubes and the chicken.
  • 2. Bring to a boil, cover with lid, and then turn down to simmer for about an hour, or until chicken can be easily removed from the bones.
  • 3. When chicken is done, remove from the pot, reserving all of the stock.
  • 4. Turn off the burner until after the noodles are made (recipe follows). Remove chicken from bones and cut into small chunks and set aside.
  • 5. For the noodles: Pour flour into a good sized mixing bowl and add softened butter and egg.
  • 6. Add about 1/2 teaspoon of salt and 1/4 teaspoon pepper (or to taste). Begin mixing using your hands, and then add milk.
  • 7. Completely mix dough with your hands until you reach desired consistency (you may need to add a little flour or a little more milk, depending...dough should not be sticky to the touch. If too sticky, add a little flour until just right).
  • 8. Flour your surface, then roll out dough with rolling pin to about 1/4 inch thick.
  • 9. Using a sharp knife, cut slices the entire way across, and then the other direction, to form square noodles about 1-1/2" square.
  • 10. Bring stock to a rolling boil, add potatoes and carrots, and a handful of the noodles at a time. Stir soup after each addition of noodles to help keep them from sticking together.
  • 11. Cover again with lid, and let cook for about a half hour to 45 minutes, or until noodles are cooked completely through and the vegetables are done.
  • 12. When all is finished, add the chicken once again, to heat through, and serve. (Your broth will thicken up a little after you add your noodles.)

1 large egg
2 tablespoons water
1 cup unbleached white flour
1/2 teaspoon salt
1 medium onion, diced
2 medium carrots, diced
1 large celery rib, diced
1 large potato, peeled and diced
7 ounces vacuum-packed corn
1 1/2 quarts vegetable broth
2 cups water
1 tablespoon chicken flavor vegetable bouillon granules
12 ounces chicken seitan strips, julienned
3 tablespoons minced fresh parsley

Steps:

  • Noodles: In bowl whisk the egg and water. Add your flour and salt then stir until dough gathers into a ball. Knead 5 to 6 minutes. You want smooth and elastic. Cover and let rest.
  • In a dutch oven combine the onion, carrot, celery, potato, corn, broth, water, bouillon and seitan. Bring to a boil, cover and simmer for 10 minutes.
  • Roll out the noodle dough. Cut into pot pie squares about 1 1/2 inch wide and 1/8 thick. Drop into soup. DO NOT SHAKE OFF THE FLOUR. In fact if the soup isn't thick enough to please you dump some more from the mixing bowl inches Now close the lid.
  • Cook for about 10 minutes and like the dumpling recipe do not peek. Adjust the seasonings [salt, pepper, Mrs Dash] when done. Serve.
  • For PA Dutch "Chicken" and dumplings use the sauerkraut dumpling recipe I posted under Philocrates.
  • For Vegan omit the egg noodles and use eggless. Sorry I don't know of a sauerkraut dumpling that can be made without it. You could try the recipe I posted and omit but no promises.

This is a family favorite passed down from generation to generation. I have tweaked it slightly because I prefer a thicker pot pie. This recipe is also great with turkey!

1 1/2-2 lbs whole chickens
1 (16 ounce) bag pot pie square noodles
5 chicken bouillon cubes
5 bay leaves
1 medium onion
5 medium potatoes, diced
1/4 teaspoon garlic, chopped
1 teaspoon parsley
pepper
1/4 cup butter
1/4 cup olive oil
1/3 cup flour (slightly more if needed)

Steps:

  • Place whole chicken in stock pot, fill water so that it just covers the top of chicken (about 3 1/2 quarts). Add bay leaf and bouillon cubes. Cook on medium heat for about 1.5 hours. Dice onion and cut potatoes while chicken cooks.
  • Once chicken starts to fall off bone, remove from pot and add potatoes, noodles, onion, garlic, parsley and pepper. Piece chicken and begin roux (instructions below), set chicken aside.
  • Cook potatoes and noodles until tender and being careful not to cook off to much of broth.
  • Add chicken once potatoes and noodles are tender; add roux to thicken.
  • ROUX:.
  • Heat small skillet on high, remove from heat.
  • Add butter and brown; be careful not to burn butter (butter should completely melt and brown within seconds).
  • Add olive oil, then flour and whisk until smooth (if needed add slightly more flour until thickened).

This recipe is my great grandmother's. An authentic Pennsylvania Dutch recipe. It is not a stew and not covered with crust. The recipe can be made with beef or chicken. I cannot think of a better comfort food recipe. Very simple to prepare. Dad fondly called this recipe "Tire patches".

1 stewing chicken or 1 beef chuck roast
1 egg
1 cup flour
1 teaspoon salt
1 bay leaf
1 cup sliced celery
1 cup chopped carrot

Steps:

  • Cover meat with water. Add bay leaf, celery, carrots and salt and pepper. Stew until the meat falls apart. Shred meat and return to pot. If using chicken, remove bones and skin and return meat to pot.
  • To make pot pie noodles: MIx one cup of flour with one egg and one teaspoon of salt. Mix till soft ball forms. Roll out on a floured table. Cut in to 2" squares. Allow to dry for several hours.
  • Add pot pie noodles, salt and pepper to taste and cook till desired texture. (al dente). Serve over mashed potatoes.

a 3 1/2 pound chicken
2 cups all-purpose flour
1 tablespoon cold vegetable shortening
1 teaspoon salt
1 large egg, beaten lightly
2 carrots, sliced thin
1 rib of celery, sliced thin
1 onion, minced
1 pound boiling potatoes (about 4)
1/3 cup finely chopped fresh parsley

Steps:

  • Season the cavity of the chicken with salt and pepper, put the chicken in a kettle just large enough to hold it, and add 14 cups water. Bring the water to a boil, simmer the chicken, covered, skimming the froth, for 45 minutes or less, or until it is tender, and transfer it to a large bowl. When the chicken is cool enough to handle, discard the skin and bones, cut the meat into bite-size pieces, and chill it, covered. Measure the stock remaining in the kettle and boil it until it is reduced to about 10 cups. Strain the stock through a sieve into a bowl, let it cool, uncovered, and chill it, covered, overnight.
  • In a bowl blend together the flour, the shortening, and the salt. In a small bowl whisk together the egg and 2/3 cup cold water, add the mixture until it forms a soft but not sticky dough. Halve the dough, keeping half of it under an inverted bowl, roll out the other half on a heavily floured surface into a 12- by 10-inch rectangle, and cut it with a pastry wheel into 2-inch squares. Transfer the squares to a lightly floured baking sheet and roll and cut out the remaining dough in the same manner.
  • Discard the fat from the stock, return the stock to the kettle, and bring it to a boil with the chicken, the carrots, the celery, the onion, the potatoes, peeled and sliced thin, and salt and pepper to taste. Add the noodle squares, a few at a time, stirring gently, simmer the mixture, covered, for 20 to 30 minutes, or until the vegetables and noodles are tender, and stir in the parsley.
