Pepper Slaw image

This is served at most restaurants in the Pennsylvania Dutch area. It's really good! Vegetables should be chopped very fine. Prep time is based on using my food prossessor.

3 cups finely shredded cabbage
1/4 cup green pepper, cut fine
1/4 cup red pepper, cut fine (optional)
1 teaspoon salt
2 tablespoons sugar
1/3 cup vinegar (more if desired)
1 teaspoon celery seed

Steps:

  • Dissolve the sugar and salt in the vinegar and pour over the cabbage and peppers.
  • Taste for seasoning and add more if desired.
  • Add celery seed last.

Fried sausages or hot smoked sausages are placed on top of this hot slaw. Serve them with plenty of mashed potatoes. Yummy! Prep time is approximate.

3 tablespoons butter
4 cups shredded cabbage, well packed
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon pepper
2 tablespoons cider vinegar
1/2 cup sour cream

Steps:

  • Melt butter in a large frying pan.
  • Add cabbage and stir until well coated with fat.
  • Cook 5-8 minutes over low heat, stirring often.
  • The cabbage should be softened, but not fried.
  • Place in a warm bowl.
  • Add remaining ingredients and toss together until thoroughly blended.

This is my grandmother's recipe for sweet and sour cabbage slaw that couldn't be simpler to make! My family loves it as a side dish for grilled burgers and hot dogs, but it works equally well in winter time with roast pork, or beef.

1 medium head green cabbage, shredded
2 green bell peppers, diced
salt to taste
1 cup vinegar
1 ½ cups sugar
2 tablespoons celery seed

Steps:

  • Toss the cabbage and bell pepper together in a large bowl. Season the mixture liberally with salt; stir. Allow to sit 45 minutes; drain and return to the bowl.
  • Bring the vinegar and sugar to a boil together in a saucepan. Immediately remove from heat and stir into the cabbage mixture. Add the celery seed; mix thoroughly. Chill completely before serving.

1 medium head green cabbage, shredded (about 8 cups)
1 cup shredded red cabbage
4 to 5 carrots, shredded
1 cup mayonnaise
2 tablespoons cider vinegar
1/2 cup sugar
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine cabbage and carrots; set aside. In a small bowl, combine all remaining ingredients; pour over cabbage mixture. Toss well and refrigerate overnight.

  • Cut the cabbage into 4 quarters, remove the core from each quarter. Grate by hand on the coarse holes of a hand grater OR cut the quarters in pieces that will fit the feed tube on your food processor. With a shredding blade, process the cabbage until completed.
  • Transfer cabbage to a large baking pan that has been lined with parchment paper and a few layers of paper towels and refrigerate for about an hour to drain OR press firmly with paper towels to remove water. Set aside
  • Dice the bell peppers into roughly 1/4 inch dice by hand. Place them on a layer of paper towel to drain while preparing the dressing.
  • In a bowl, stir together the vinegar, water, sugar, celery seed, salt and pepper. Stir until the sugar is dissolved. Start with 3/4 cup water, mix then taste; add additional water if it is too tangy for your preference.
