These are hard to buy here, and expensive, so I thought I would give it a go! Ridiculously easy, and very tasty! I used a 400gr can of red kidney beans, so did not take the time used for preparing dried beans, however, I'm putting down the original recipe here. I used these beans in Shannon W's "Saturday Night Chicken, Cheese and Refried Bean Enchiladas". 'Zaar Recipe# 222838. Refried Beans from 'Cooking Class Cookbook'.

8 ounces pink beans or 8 ounces pinto beans
4 1/2 cups cold water
1/3 cup vegetable shortening, divided, plus
1 tablespoon vegetable shortening
1 small white onion, sliced
1 1/2 teaspoons salt
1 small white onion, finely chopped
1 small garlic clove, minced

Steps:

  • Rinse beans thoroughly in sieve under cold running water, picking out any debris or blemished beans.
  • Place beans, water, 1 tblspn shortening and sliced onion in 3Ltr saucepan. bring to a boil over high heat. Reduce heat to low. Cover and simmer one and a half hours or just until beans are tender, not soft. (Not necessary with canned beans, here is where you save time). The onion cooks properly even in the shorter time, I cooked the beans like this for about 30 minutes.
  • Stir in salt, Cover and simmer over very low heat 30 to 45 minutes until beans are very soft. Do not drain.
  • (Flavour is improved if beans are prepared to this point, then refrigerated, covered, overnight before completing recipe.).
  • Heat remaining 1/3 cup shortening in heavy large skillet over high heat until very hot. Add chopped onion and garlic. Reduce heat to medium. Cook and stir 4 minutes or until onion is softened.
  • Increase heat to high. Add 1 cup undrained beans. Cook and stir, mashing beans with bean or potato masher.
  • As beans begin to dry, add another 1 cup undrained beans. Cook and stir, mashing beans with bean or potato masher. Repeat until all beans and cooking liquid have been added and mixture is a coarse puree. adjust heat as needed to prevent beans from sticking and burning. Total cooking time will be around twenty minutes.
  • Beans may be served as a side dish, or used as an ingredient in another recipe.

2 tablespoons olive oil or bacon drippings
2 teaspoons whole cumin seeds
1 large onion, finely chopped
1 to 2 large cloves garlic, minced
4 cups soft-cooked beans, such as pinto or kidney
Approximately 1 cup bean cooking liquid, vegetable stock, or water
Dash cayenne pepper
1 to 2 teaspoons cider vinegar, optional
3/4 teaspoon salt, or to taste

Steps:

  • In a large skillet, heat the oil. Add and sizzle the cumin seeds for 10 seconds while stirring. Add the onion and garlic and saute until the onions are soft and lightly browned, about 3 to 4 minutes. Reduce the heat to medium, add about one third of the cooked beans and 1/3 cup of the liquid, mashing the beans with the back of a spoon or if beans are already pureed, stir them into the liquid to create a coarse mash.
  • While the mixture is simmering and the liquid is being absorbed into the bean puree, continue adding beans and liquid in two more batches. Add cayenne, vinegar, and salt to taste. Serve immediately.

1 tablespoon vegetable oil
1 small onion, diced
1 garlic clove, minced
2 cups black beans, (see recipe below)
1 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon cayenne pepper or to taste
Salt
1/2 cup grated Jack cheese

Steps:

  • Heat vegetable oil in a medium ovenproof skillet and saute onion and garlic until translucent. Add beans with cooking liquid and mash with a fork or potato masher, or process in food processor. Stir in chili powder, cumin, cayenne pepper. Season with salt. Top with cheese and place under the broiler for about 3 to 5 minutes or until cheese is melted and bubbling.

400g can black, pinto or kidney beans
1 tbsp sunflower oil
1 onion, finely chopped
2 garlic cloves, finely chopped
1 green chilli, chopped (optional)
1 tsp cumin seeds
½ tsp dried oregano
½ tsp smoked paprika
chopped coriander, to serve (optional)

Steps:

  • Lightly drain the beans, reserving the juice from the tin, but do not rinse (you want the beans in about half the liquid from the can). Depending on the texture you prefer, either mash them roughly in a bowl or blitz them using a blender until smooth. Set aside.
  • Heat the oil in a large frying pan or casserole and cook the onions for 8-10 mins until soft and golden. Scatter in the garlic, chilli and cumin seeds, and sizzle everything for 2 mins more. Tip in the beans, oregano, paprika and a pinch of salt. Cook everything together for 5 mins until the beans have heated through adding more reserved bean juice if it's too thick. Serve straightaway with a sprinkling of coriander, if you like, or leave to cool and keep chilled. Will keep chilled for up to three days or frozen for a month. Reheat with a splash of water mixed in.

  • Soak beans in a bowl or pot overnight in 2 quarts cold water (I just soak them in the slow cooker pot so I don't have to clean two pots).
  • Drain and rinse beans after soaking. Place beans in a slow cooker, cover with 2 quarts hot water. Cover with a lid and cook on high for 4 1/2 hours or low for 9 hours (my slow cooker lids fits snugly but if yours doesn't just keep an eye on the water level to make sure they stay covered).
  • Once cooked (they should be fully tender when pierced with a fork), laddle out 1 3/4 cups of the water and reserve. Strain remaining water by pouring beans into a colander. Place beans, 1 cup reserved water, butter, lard, chili powder, onion powder, garlic powder, cumin and pepper in a blender or food processor (for safest method blender should be no more than halfway full of hot ingredients, so if necessary process in two batches). Cover blender with lid and blend on low speed for about 1 minute or until well blended. Add more water up to 3/4 cup to thin as desired. Pour mixture into a large bowl, stir in shredded cheeses. Serve warm with tortilla chips.
