Steps:
- Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides., In a large bowl, mix flour, brown sugar and salt; stir in 1 cup melted butter. Press onto bottom of prepared pan. Bake until light brown, 12-15 minutes. Cool 10 minutes on a wire rack. Reduce oven setting to 325°., In a large bowl, whisk the first 7 filling ingredients until blended; stir in 3 cups coconut. Pour over crust; sprinkle with remaining coconut. Bake until light golden brown, 25-30 minutes. Cool in pan on a wire rack. Lifting with parchment, remove from pan. Cut into bars.

- Place coconut shreds or flakes in a food processor or high powdered blender and process until a smooth, runny butter forms. It will take about 15 minutes in a food processor and about 2 minutes in high powered blender. (I've found that my Vitamix works best for this.) You may need to scrape the sides of your food processor or blender mid-way through the processing.

Coconut butter is a fantastic spread made from dried coconut flakes. If you have a high-speed blender or food processor, you can make your own coconut butter at home in under 10 minutes!

- Fill your food processor with 3 cups of dried coconut flakes.
- Secure the lid and process the coconut flakes until they grind into a creamy butter.
- Use a spatula to scrape the sides of the food processor down and continue to process until the coconut butter is smooth, 5-10 minutes depending on how powerful your food processor is.
- Pour coconut butter into an air-tight container or jar, and store at room temperature for 2 weeks.
- In cool temps the coconut butter may be too hard to scoop out. When this happens, I place the jar of coconut butter in the microwave and warm up for 20-30 seconds or until it softens up.

This Creamy Coconut frosting was made to fill and ice my Almond Joy Cake. Then when done frosting you can press into the sides of the cake with some shredded toasted coconut.

- Cream butter, salt, and extracts, beating until light and fluffy.
- Add sugar gradually, beating after each addition.
- Add 3 tablespoons milk, beating until smooth. Beat in more milk until desired spreading consistency is reached.
COCONUT BUTTER COOKIES
Steps:
- In a mixer with a paddle attachment, whip the butter until very light and fluffy. Add the sugar and continue whipping, then add the rum and vanilla and mix. Toss together the coconut, flour and salt then add to the butter mixture and mix until blended. Butter a small sheet pan (9 by 12-inch), and line it with plastic all the way up the sides. Spread the dough evenly into the pan, cover it with plastic and freeze. Cut frozen dough into 2-inch strips and roll in flour. Wrap and freeze or cut into1/8-inch bars and place on parchment or silpat-lined sheet pan. Bake in a conventional oven at 250 degrees F for about 30 minutes until crisp but barely colored.

- Mix until a creamy butter forms - sometimes up to 10 minutes - scraping down sides as needed. Mine usually takes about 8-10 minutes, and I scrape down the sides 2-3 times to ensure the coconut is getting processed well.
- Once it's gone liquid and creamy, you can add things such as salt, vanilla extract, or stevia. But it doesn't need anything at all in my experience! If you still don't have coconut butter at this point, it's likely you either a) didn't add enough coconut flakes to the food processor ,or b) your food processor likely isn't designed for this type of recipe or isn't powerful enough. The main issue with making coconut butter tends to be an issue of equipment rather than method.
- Store at room temperature up to 2 weeks (sometimes more). Depending on the temperature of your home, it will likely harden once cooled. To use, you can either heat it up in the microwave, or place in a shallow pot of very hot water and it will soften. Alternatively, if placing on hot food, scoop out and it should melt quite easily on the food.

I find this is the best way to stir it and mix up the separated coconut meat and oil and totally smooth, as well as storing it this way for future use. After adding it to the container, heat a few more seconds if needed to soften it just until you can stir it a bit until it all comes together, is runny and smooth. See pic in post. Be very careful about overheating coconut butter or it will burn it and make it mealy.
- Add the liquid coconut butter to a separate bowl, then the room temperature syrup, almond butter, vanilla and stir until very smooth and well mixed. It is important that the other liquids are at room temperature, because if they are cold, it can cause the coconut butter to separate.
