These spinach, feta, and turkey meatballs are quick and easy to make, easy to freeze, and taste great when reheated. My son and I call these "Combine Nuggets." Did you know that a combine is a giant tractor that harvests crops from the field? Well, I most certainly didn't until my 3-year-old told me! Therefore, thanks to the hardworking combines we can put the green things in our nuggets.

1 pound lean ground turkey
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (6 ounce) container crumbled feta cheese
½ teaspoon paprika
½ teaspoon onion powder
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 24-cup mini muffin tin with cooking spray.
  • Mix together turkey, drained spinach, feta cheese, paprika, onion powder, salt, and pepper in a large bowl until well combined. Roll into 24 meatballs and place in the prepared muffin tin.
  • Bake in the preheated oven until meatballs are cooked through, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/4 cup plain dried breadcrumbs
2 tablespoons whole milk
2 large eggs, lightly beaten
3/4 cup grated romano cheese
1 lb ground turkey, preferably dark meat
salt & freshly ground black pepper
1/4 cup extra virgin olive oil
5 cups tomato sauce
1 lb dry penne pasta

Steps:

  • In a large bowl add bread crumbs, milk and mix until well combined.
  • Mix in eggs and 1/2 cup Romano cheese and mix well.
  • Add turkey and gently combine, being careful not to overwork the meat.
  • Season with salt and pepper.
  • Shape into golf-size balls.
  • In a large skillet heat the oil over medium heat.
  • When almost smoking, add meatballs and without moving or turning the meat allow it to brown for about 3 minutes.
  • Turn meatballs and brown other side.
  • Continue to cook until all sides are golden brown.
  • Add tomato sauce and bring to a boil.
  • Lower heat and allow meatballs to simmer for 5 minutes.
  • Turn off heat and keep warm on stove, be careful not to overhandle the meatballs since they are soft and fragile.
  • In a large pot, bring 6 quarts of salted water to boil.
  • Add pasta and cook until al dente, about 8 minutes.
  • Drain pasta, do not rinse pasta with water.
  • Remove meatballs from sauce and place in serving bowl.
  • Pour some tomato sauce over meatballs, leaving 1 cup sauce in skillet.
  • Place the cooked penne into the skillet with the remaining sauce and toss well.
  • Pour pasta into a large serving bowl and serve alongside of meatballs.

A creamy pasta dish with tasty chicken meatballs. Full instructions have been included for freezing this dish. This recipe has been substantially adapted from a recipe in a recent issue of the Australian magazine 'New Idea'. In particular, I have made use of another one of my recipes: Chicken Meatballs Recipe #123018. To reduce the fat content of this recipe, use low fat evaporated milk and low fat feta.

250 g penne pasta
1 1/2 teaspoons olive oil
1 onion, finely chopped
4 garlic cloves, crushed
1 carrot, finely chopped
1 (185 ml) cans evaporated milk
1 cup frozen peas
salt, to taste
fresh ground black pepper, to taste
100 g feta, crumbled
fresh sage leaf, to garnish
500 g ground chicken (Americans) or 500 g ground chicken (Australians)
2 garlic cloves, finely chopped
50 g fresh white breadcrumbs
1 tablespoon fresh chives, finely chopped
1 tablespoon fresh basil, finely chopped
2 tablespoons parmesan cheese, grated
1 egg, lightly beaten
salt, to taste
fresh ground black pepper, to taste
1/2 tablespoon unsalted butter

Steps:

  • Cook pasta in a large pan of boiling, salted water until tender; drain; cover to keep warm.
  • To make the meatballs, combine the chicken, garlic, fresh breadcrumbs, chives, basil, parmesan and egg in a bowl, season to taste with salt and pepper, mix well and with floured hands, and shape the mixture into 12-16 meatballs, depending on the size of meatball you fancy.
  • Place the meatballs on a tray, cover loosely and chill for 30 minutes.
  • Heat the butter in a non-stick pan, over a medium heat, and sauté the meatballs, turning occasionally, for 6-8 minutes, or until they are lightly golden-brown all over and fully cooked; remove from the pan and cover to keep the meatballs to keep them warm.
  • Heat the oil in the pan, add the onion, garlic and carrot, and sauté until they have softened; add the milk and peas and bring to the boil; add the pasta; season to taste with salt and freshly ground black pepper; and cook until the pasta is hot.
  • Serve the pasta topped with the meatballs; sprinkle with the crumbled feta and garnish with sage.
  • To freeze: Make the recipe to the end of step 5. Divide the mixture among four ovenproof, freezer-proof (2-cup capacity) dishes; top with the meatballs and sprinkle with feta; cover tightly with plastic wrap; label and date and freeze for up to 2 months.
  • To serve: Thaw pasta in dishes in the refrigerator; remove the plastic wrap; place on an oven tray; cook in a hot oven (200°C) for about 45 minutes, or until hot, and garnish with sage.
