CREAM CHEESE FROSTING USING HONEY
A yummy, smooth and thick cream cheese frosting, awesome on banana cake, muffins, cupcakes. Not a yucky 'health-food' recipe! This is good frosting! Try changing the flavoring to 1/2 tsp orange or lemon.

- Add remaining ingredients and whip till smooth and creamy.

- Have ingredients at room temperature. Beat cream cheese smooth and fluffy.
- Beat in honey and vanilla.
- Blend in eggs.
- Pour into a buttered and crumb lined 9 inch springform pan.
- Place in a hot water bath.
- Bake in a 350F oven until set ( about 1 1 /2 hours or less ). Remove from waterbath to cool on rack.
- Chill over night before serving.

Steps:
- Preheat oven to 400ºF.
- Arrange the sliced baguette bread on a baking sheet.
- Brush with olive oil.
- Bake bread until pale golden and crsip, about 10 minutes.
- Rub garlic clove over all the toasts.
- Arrange the cheese on toasts and bake until the cheese is melted, about 3 minutes.
- Drizzle the toasts with honey.
- Place on serving platter and serve immediately.

HONEY SWEETENED CREAM CHEESE BRUSCHETTA
Honey-sweetened cream cheese, sugared strawberries, mint leaves and edible flowers make a bruschetta that's ideal for a bridal shower or ladies' luncheon.

- PLACE bread slices on an ungreased baking sheet; lightly brush with olive oil. Bake for 7-10 minutes or until lightly browned. Remove from heat and let cool.
- BEAT cream cheese with electric hand mixer in a small mixing bowl. Continue mixing and gradually add honey and half-and-half until smooth.
- COMBINE strawberries and sugar in a small saucepan over medium heat. Stir until mixture releases liquid and begins to bubble. The mixture will thicken; approximately 5-7 minutes. Remove from heat and let cool.
- To serve: Spread sweetened cream cheese on bread slices, top with edible flowers, mint leaves and a side of strawberry compote.
- Makes 10 bread slices, 1 cup sweetened cream and 1 cup strawberry compote

- Preheat the oven to 300°. Line a large rimmed baking sheet with parchment paper. In a large bowl, toss the tomatoes with the olive oil, honey, thyme leaves, salt and pepper. Scrape the tomatoes onto the prepared baking sheet and turn them cut side up. Bake the tomatoes for about 1 hour and 25 minutes, until they begin to shrivel and brown. Let cool.
- Preheat the broiler. Spread out the baguette slices on a baking sheet. Broil for about 30 seconds on each side, until the edges are golden brown.
- Spread the ricotta over the baguette slices and top with the slow-roasted tomatoes. Lightly drizzle the tomatoes with the buckwheat honey, sprinkle with the sliced basil and serve with additional buckwheat honey on the side.

- First, dice tomato and add to a medium sized bowl. If too much liquid accumulates, drain the juice or it'll make the bread soggy. Very ripe tomatoes will have a lot of juice.
- Then, add peeled garlic cloves and salt to taste to the tomatoes. Let stand while you complete the rest of the recipe so the tomatoes can pick up the flavor of the garlic.
- Meanwhile, add cream cheese, heavy cream and onion powder to a mixing bowl and mix until well combined. Set aside.
- Next, stack the basil leaves. Roll them from the stem side. Cut from one of the round ends. Basil ribbons will be the result. Set aside.
