1 tablespoon olive oil
1 clove garlic, crushed
2 cups broccoli florets
1 medium carrot, julienned
2 cups vegetable broth
1 (8 ounce) package penne pasta
½ cup frozen peas
½ cup freshly grated Parmesan cheese

Steps:

  • Heat the olive oil and garlic in a large skillet over medium heat. When garlic is tender, remove from skillet and set aside. Place the broccoli and carrot in the skillet, and cook 2 minutes, just until heated through.
  • In a pot, bring the vegetable broth to a boil. Stir in the penne pasta and heated crushed garlic clove. Cook for 5 minutes, or until pasta is almost al dente. Remove and discard garlic clove.
  • Transfer the partially cooked pasta and broth to the skillet. Mix in the peas. Cover skillet, and continue cooking 10 minutes over medium heat, or until pasta is al dente and vegetables are tender. Toss with the Parmesan cheese to serve.

4 cups Cooked Shredded Chicken
3 cups Broccoli Florets, (small)
2 cups Shredded Mozzarella Cheese

Steps:

  • Preheat the oven to 350°F.
  • Cook the penne according to the package directions in a large pot of boiling water. Drain.
  • Meanwhile, in a medium saucepan, over medium heat, melt the butter.
  • Add the garlic and cook, stirring, for about 30 seconds, until fragrant.
  • Whisk in the flour, and cook, whisking constantly, until it is lightly browned, about 1 minute.
  • Slowly whisk in the milk, stirring until it is incorporated and smooth.
  • Add the thyme, oregano, salt, pepper, and 1/2 cup of the parmesan cheese, and whisk continuously for 3-4 minutes, or until the sauce has thickened slightly.
  • Reduce the heat to a low simmer until the pasta is ready.
  • Toss together the cooked penne, chicken, broccoli, and Alfredo sauce, and transfer everything to a 9x13 inch baking dish.
  • Sprinkle the mozzarella cheese, and the remaining 1/2 cup parmesan cheese on top of the pasta.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbling.

1 bunch broccoli (about 1 1/2 pounds), stalks cut off, florets trimmed into 1-inch pieces
12 ounces penne pasta

1 medium onion, minced
6 medium garlic cloves, finely minced or pressed through a garlic press
1 teaspoon dried thyme
1/4 cup all-purpose flour
2 cups low-sodium chicken broth
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 pounds boneless skinless chicken breasts (about 3), trimmed and cut into bite-size pieces
3 ounces smoked mozzarella, shredded
8 ounce jar oil-packed sun-dried tomatoes, drained and chopped into pieces

Steps:

  • In a small bowl, combine the bread crumbs and butter and set aside. Lightly grease a 9X13-inch baking dish and set aside. Preheat the oven to 400°F and make sure the oven rack is placed in the middle of the oven. In a large pot, bring the water for the pasta to a boil. Stir in one tablespoon salt and the broccoli. 1 1/2 cups dry small shaped pasta
3 cups fresh broccoli florets
2 Tbsp. olive oil
1 lb. chicken tenders, cut into bite size pieces
1 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. onion powder
3/4 - 1 cup chicken broth
4 oz. cream cheese, cut into cubes
1 1/2 cups shredded mozzarella cheese, divided
2 Tbsp. shredded Parmesan cheese
Kosher salt and fresh black pepper

Steps:

  • Cook pasta in salted water one minute shy of al dente according to package instructions. Last 2 minutes of cooking, stir in broccoli florets. Drain and set aside.
  • In a bowl, toss chicken with paprika, garlic powder, onion powder, and salt and pepper. Heat olive oil in a large sauté pan over medium-high heat and cook chicken for few minutes until no longer pink on the outside.
  • Add chicken broth and let it come to a simmer. Once simmering, add cream cheese and stir until melted. It's okay to have small speckles of cream cheese. It will incorporate when baked. Stir in 3/4 cup mozzarella until melted. The sauce will slightly thicken.
  • Turn off heat and gently fold in cooked pasta and broccoli. Transfer to a baking dish, cover with foil, and bake in a preheated 375 degree F oven for 15 minutes.
  • Top with the remaining mozzarella cheese and Parmesan cheese. Bake, uncovered, for about 3 minutes or until cheese is melted. Let rest for 5 minutes before serving.

1 teaspoon onion powder
1 teaspoon garlic powder

4 teaspoons chicken bouillon
4 cups water
2 cup half 'n' half
4 tablespoons cornstarch (dissolved in 4 tablespoons of water)
24 ounces fresh broccoli florets
16 ounces wide egg noodles (cooked and drained)
4 cups cooked chicken (diced or shredded)
1 cup Colby jack cheese (grated)

Steps:

  • Preheat the oven to 350°F. Spray a 9x13 casserole dish with non-stick cooking spray and set aside.
  • In a large stockpot or Dutch oven, heat butter over medium until melted.
  • Add onion powder, garlic powder, salt, pepper, and bouillon to the butter and saute for 1 to 2 minutes.
  • Whisk in water and the half and half cream.
  • Dissolve 4 tablespoons cornstarch in 4 tablespoons of water to make a slurry, and then whisk this slurry into the filling mixture in the pot.
  • Whisk and cook over medium heat until the mixture comes to a simmer and begins to thicken.
  • Stir in broccoli florets and cook 1 to 2 minutes longer.
  • Spread cooked noodles and diced chicken evenly in the prepared casserole dish.
  • Pour the broccoli/sauce mixture over the top and stir to combine everything evenly.
  • Bake, covered with aluminum foil, for 30 minutes or until broccoli is fork-tender. Remove from the oven.
  • Stir the casserole to redistribute sauce. Sprinkle with cheese. Place foil loosely over the casserole and leave to set for 5 minutes. For a browned cheese, you can return the casserole, uncovered, to the oven for 5 to 10 minutes instead of setting it for 5 minutes.

Steps:

  • In a food processor, pulse the bread, 2 cloves of minced garlic, ½ cup of Asiago cheese and melted butter until coarsely ground. Set aside. Preheat the oven to 400℉ (200℃). Bring 4 quarts water to the boil in large pot. Add 1 tablespoon salt and the pasta to boiling water and cook until nearly tender but still slightly firm. Drain in colander and rinse under cold water until cool. Melt the remaining butter in empty pot over medium heat. Cook onion until softened, about 5 minutes. Add remaining garlic and pepper flakes and cook until fragrant, about 30 seconds. Stir in flour and cook until golden, about 1 minute. Slowly whisk in wine and cook until liquid is almost evaporated, about 1 minute. Slowly whisk in milk and broth and bring to boil. Add chicken and simmer until no longer pink, about 5 minutes. Off heat, stir in remaining cheese until melted. Steam the broccoli until bright green and nearly tender, 2 to 4 minutes. Stir cooked broccoli and drained pasta into the pot and season with salt and pepper. Transfer to 13x9 inch baking dish . Sprinkle with bread crumb mixture and bake until sauce is bubbling around edges and topping is golden brown, 20 to 25 minutes. Cool 5 minutes. Serve. The casserole can be assembled, without the bread crumbs, 24 hours in advance. Bring to room temperature before adding bread crumbs and baking.
