1 cup bulgur
1 cup boiling water
1/4 cup plain yogurt
2 tablespoons lemon juice
2 teaspoons curry powder
16 cherry tomatoes, halved
1 small red onion, finely chopped
2 celery ribs, finely chopped
1/4 cup coriander leaves, finely chopped
1/4 cup mint leaf, finely chopped
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1 1/2 cups cooked chicken, shredded

Steps:

  • Place bulgur in a large bowl and stir in water, set aside until water is absorbed and bulgur has cooled.
  • Combine yoghurt, lemon juice and curry powder.
  • Fluff the bulgur with a fork, add tomatoes, onion, celery, herbs & seasonings and stir well.
  • Add yoghurt dressing & chicken and toss evenly to coat.
  • Cover & refrigerate for an hour at least to allow the flavours to mingle.
  • Will keep up to 3 days in the fridge.

400g can chickpeas , drained (or 85g dried chickpeas soaked in 500ml cold water overnight, then drained)
1 tsp ground cumin
1 tsp ground coriander
¼ tsp cayenne pepper
½ small red onion , quartered
1 garlic clove
1 tbsp sesame seeds
½ tsp baking powder (gluten free if you like)
small pack parsley , stalks and leaves separated, leaves chopped
1 tbsp olive oil
½ small cauliflower , cut into florets
½ small pack mint , leaves chopped
1 lemon , juiced and ½ zested
200g frozen peas
½ medium, ripe avocado
30g feta
2 handfuls rocket

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a baking sheet with baking parchment. Tip the chickpeas, ½ tsp ground cumin, ½ tsp ground coriander, cayenne pepper, red onion, garlic, sesame seeds, baking powder, parsley stalks and ½ tbsp water into a food processor. Blitz until everything is combined but not mushy - you want the falafel to have some texture, rather than being like hummus. Season to taste, then roll into 18 even-sized balls. Flatten each ball into a disc shape and put them on the baking sheet (the more surface area the crisper they will become). Brush them with ½ tbsp oil. Bake for 20 mins, turning halfway, until golden and crisp.
  • Meanwhile, clean the food processor. Briefly pulse the cauliflower until you have a couscous consistency. Mix the cauliflower with the remaining ground spices, olive oil and seasoning. Tip onto a baking tray and roast for 10-12 mins, stirring occasionally, until slightly toasted. Once cool, mix through the chopped parsley, mint and a squeeze of lemon juice. Season to taste.
  • Put the frozen peas in a microwavable bowl, cover and cook on high for 2-3 mins. Drain off all the water, then roughly mash. Add the avocado and mash again to combine. Crumble in the feta, mix, then add the lemon zest and another squeeze of lemon juice, and seasoning to taste.
  • Toss the rocket leaves in a final squeeze of lemon juice, then serve with the falafel and cauliflower tabbouleh, rocket and the pea and avocado smash.

100g dried quinoa
75g parsley , roughly chopped
300g tomatoes , cut into 1cm dice (no need to remove the seeds)
100g cucumber , cut into small dice
1 tbsp olive oil
2 tbsp balsamic vinegar
juice and zest 0.5 lemon
drop of vanilla extract
1 tsp rice syrup or agave
pinch of Himalayan pink salt
½ garlic clove , crushed
50g salad leaves , to serve

Steps:

  • Cook the quinoa following pack instructions, then set aside to cool.
  • Make the dressing by adding the olive oil, vinegar, lemon juice, vanilla extract, rice syrup, pinch of salt and garlic into a jug and whisk until smooth. Mix this into the quinoa and mix together with all the other ingredients. Serve on a bed of salad leaves.

250g couscous
4 vine-ripened tomatoes
half a cucumber
1 bunch spring onions , sliced
2 x 20g packs fresh parsley
grated zest of a lemon
6 tbsp olive oil
2 tbsp lemon juice
1 crushed garlic clove

Steps:

  • Prepare the couscous: Put the couscous into a large bowl. Pour over the boiling water or stock and stir. Cover with a plate or cling film and leave to stand for 5 mins until all the liquid has been absorbed. Separate the grains by roughing them up with a fork.
  • Finely dice the vine-ripened tomatoes and the cucumber. Slice the spring onions and finely chop the parsley, then add everything to the couscous with the grated zest of a lemon.
  • Whisk the olive oil, lemon juice and the garlic with plenty of seasoning and drizzle over the couscous. Toss well and serve with some grilled fish, meat or chicken.

1 large cauliflower (about 650g/1lb 7oz trimmed weight)
1 tsp allspice
1 tsp ground cinnamon
2 tbsp olive oil
25g flaked almonds , toasted
1 red onion , finely chopped
200g pack feta , crumbled
110g tub pomegranate seeds
juice 1 lemon
½ small pack parsley , finely chopped
½ small pack mint , finely chopped, plus a few leaves to garnish

Steps:

  • Heat oven to 200C/180C fan/gas 6. Remove the outer leaves from the cauliflower and the hard inner core, then roughly chop up the florets (don't worry about how they look, they are going to be blitzed). Put the cauliflower in the large bowl of a food processor, blitz for 30 secs until it resembles couscous grains, then tip into a large bowl.
  • Mix the spices and olive oil into the cauliflower and season to taste. Spread the cauliflower 'couscous' out on a large baking tray in an even, thin layer. Roast for 12 mins, mixing halfway through so that it is evenly toasted, then set aside to cool slightly.
  • Once at room temperature, stir through the remaining ingredients and season to taste, then sprinkle over the mint leaves.
