3 pints fresh strawberries
½ cup white sugar
2 ¼ cups all-purpose flour
4 teaspoons baking powder
2 tablespoons white sugar
¼ teaspoon salt
⅓ cup shortening
1 egg
⅔ cup milk
2 cups whipped heavy cream

Steps:

  • Slice the strawberries and toss them with 1/2 cup of white sugar. Set aside.
  • Preheat oven to 425 degrees F (220 degrees C). Grease and flour one 8 inch round cake pan.
  • In a medium bowl combine the flour, baking powder, 2 tablespoons white sugar and the salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined.
  • Spread the batter into the prepared pan. Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes or until golden brown. Let cool partially in pan on wire rack.
  • Slice partially cooled cake in half, making two layers. Place half of the strawberries on one layer and top with the other layer. Top with remaining strawberries and cover with the whipped cream.

3 tbsp (38g) granulated sugar
1 tbsp (15g) baking powder
1/4 cup (57g) cold salted butter, cubed
1 cup (250ml) cold milk
1 tsp lemon zest
1 pint (454g) strawberries, sliced
2 tbsp (25g) granulated sugar
1 cup (250ml) heavy cream
1/4 cup (50g) sugar
1/2 tsp (2.5 ml) vanilla extract

Steps:

  • Preheat oven to 425F and line a baking sheet with parchment paper or silicone baking mat.
  • In a large bowl, combine flour, sugar and baking powder. Cut in butter until mixture resembles coarse crumbs. Whisk in the lemon zest. Add in the milk and stir until just combined.
  • Drop the dough by heaping tablespoonfuls into eight mounds onto the prepared baking sheet. Bake at 425° for 12-15 minutes or until lightly browned.
  • While the biscuits are in the oven, stir together strawberries and sugar in a medium bowl. Let stand at room temperature until juices are released, at least 30 minutes.
  • Using an electric mixer, beat the cream, sugar, and vanilla until soft peaks form.

MAKE SURE YOU LET THE STRAWBERRIES SIT IN THE SUGAR LONG ENOUGH TO MAKE THOSE YUMMY JUICES
1 - 1 1/2 lb or 2 - 21/2 cups strawberries, cleaned and sliced
1/2 - 3/4 c confectioners' sugar
CAKE
2 c flour
4 tsp baking powder
1 Tbsp sugar
1/2 tsp salt
5 Tbsp cold butter, sliced into pats
3/4 c milk
WHIPPED CREAM
1 c heavy whipping cream
1 tsp vanilla
1 Tbsp sugar

Steps:

  • 1. Preheat oven to 425 degree F. Spray a 9 inch pie plate with nonstick cooking spray or grease. Set aside.
  • 2. Slice your berries and place in a bowl. Add the confectioners' sugar and let set for 30 - 45 minutes, stirring every once in awhile.
  • 3. Processor method: Place flour, salt, sugar in food processor.. Pulse until mixed. Add the 5 tablespoons of butter and pulse until resembles coarse crumbs. Pour into a medium sized mixing bowl. Bowl method: Stir together flour, salt and sugar. Cut in butter with pastry cutter or two forks, cut butter into flour mixture until it resembles coarse crumbs.
  • 4. Make a well in the center. Pour in the milk.

  • 7. While the shortcake bakes, make your whipped cream. Using a handheld or standing mixer, whip heavy cream 1 tablespoon sugar and vanilla until medium peaks form. ( About 5 minutes )
  • 8. Cut the cake into wedges. Slice each individual wedge in half. Place bottom into a dish, fill with sweetened berries. Place top on the berries...top with another spoonful of berries and whipped cream. Enjoy!

Steps:

  • For the shortcakes: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Whisk the heavy cream, sour cream and vanilla in a small bowl; refrigerate until ready to use. Pulse the flour, granulated sugar, baking powder and salt in a food processor until combined. 6 tablespoons chilled unsalted butter, cut into pieces
2/3 cup plus 2 tablespoons heavy cream
Sanding or granulated sugar (for sprinkling)

Steps:

  • Make the shortcakes:
  • Pulse egg yolks, both flours, baking powder, salt, and granulated sugar in a food processor to combine. Add butter and pulse until only pea-size pieces remain. Transfer half of strawberries to a large saucepan and add 1 Tbsp. water; let remaining strawberries macerate while you bring strawberries in saucepan to a gentle simmer over medium-low. Cook, stirring occasionally and reducing heat if needed to keep at a low simmer, until strawberries are starting to break down and become jammy and liquid is syrupy, 12-18 minutes. Let cool, then stir in 1 tsp. lemon juice. Stir remaining 1 tsp. lemon juice into macerated strawberries.
  • Combine heavy cream, powdered sugar, and a pinch of salt in a medium bowl. Scrape in seeds from vanilla bean; reserve pod for another use. Beat cream until soft peaks form.
  • Split shortcakes and divide strawberry compote, macerated strawberries, and whipped cream among bottoms. Close with shortcake tops.

  • Shortcakes can be baked 1 day ahead. Store airtight at room temperature. Reheat before serving.
