Steps:
- Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Cook and stir ground beef and Italian sausage in a skillet until browned and crumbly, 8 to 10 minutes. Transfer to a bowl using a slotted spoon. Drain excess grease, reserving 1 tablespoon in the skillet.
- Cook and stir zucchini and yellow squash in the reserved grease until slightly softened, about 5 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Spread 3/4 cup pasta sauce in the bottom of a 9x11-inch casserole dish.
- Pour remaining pasta sauce into a Dutch oven over medium heat. Stir in zucchini and yellow squash, whole olives, and sliced olives. Cook and stir until pasta sauce is heated through, about 10 minutes.
- Layer half of the ground meat mixture, penne, hot pasta sauce, Cheddar cheese, and mozzarella cheese over the pasta sauce in the casserole dish. Repeat layers once more.
- Bake in the preheated oven until cheese is melted and layers are heated through, about 30 minutes.

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs; reserve 1 cup cooking water, then drain.
- Meanwhile, heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the squash, 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until golden and tender, about 5 minutes. Transfer to a plate and set aside.
- Add the remaining 1 tablespoon olive oil, the mushrooms, 1/4 teaspoon salt and a few grinds of pepper to the skillet. Cook, stirring occasionally, until lightly browned, about 5 minutes. Add the garlic, shallot and red pepper flakes. Cook, stirring, until the shallot softens, about 2 minutes.
- Add the pasta, squash and 1/2 cup of the reserved pasta cooking water to the skillet. Cook, stirring, until heated through,1 to 2 minutes. Stir in 1/2 cup parmesan, then stir in enough of the remaining cooking water to loosen. Stir in the oregano and season with salt and pepper. Top with the remaining 1/2 cup parmesan.

You can vary this recipe to your own tastes. I most always add onions to the garlic when frying and skip the minced green onions. I have used baby portobello mushrooms also. I always use fresh garlic! This is hubby's favorite meal.

- 1. In a large saute pan or skillet, heat oil and add minced shallot and garlic. Stir and cook until fragrant but not brown. Add ground chuck and Italian sausage, broken into small bite sized pieces and saute until browned. Add remaining ingredients except sugar, salt and pepper, and olives. Mix well, stir occasionally and let simmer on medium low for about 20 minutes. Add olives and taste to adjust seasoning with salt and pepper. Add as much or as little of the sugar as you like, per your preferences. Simmer until sauce is thick enough for your taste. (I like mine really thick)
- 2. While sauce is simmering, cook the pasta according to package directions, drain and keep warm.
- 3. To serve, place a portion of penne on the plate, top with 1/4 of the meat sauce and sprinkle with grated Asiago Cheese. Pass more cheese at the table if desired.

- Meanwhile, set a large heavy skillet over high heat. Add a heaping tablespoon of olive oil - enough for a thin coat on the bottom of the pan. When smoking hot, add your first batch of zucchini (just enough to cover the bottom of the pan. You don't want too much overlap). Cook without moving until the zucchini coins are beginning to brown, 1-2 minutes. Carefully flip/stir once. When the coins are golden brown and very soft, remove to a large mixing bowl with a slotted spatula, shaking excess oil back into the pan. Repeat with the additional zucchini, adding more oil as necessary. It should take you 3 to 4 batches depending on the size of your pan.
- Reduce the heat to medium-high and add the chickpeas and olives. Saute until the chickpeas are beginning to brown and the olives are very fragrant, 2 minutes. Add to the bowl with the zucchini mixture and stir in the vinegar and 1/2 teaspoon salt.
- Meanwhile, combine the basil, parsley, garlic, lemon zest and juice, 2 tablespoons olive oil and 1/2 teaspoon salt in a small food processor. Puree until smooth and add to the mixing bowl. Alternatively, you can finely chop everything by hand.
