1 (16 ounce) package whole grain penne pasta
1 pound lean ground beef
1 pound bulk Italian sausage
2 zucchini, diced
2 yellow squash, diced
2 (24 ounce) jars pasta sauce, divided
1 (4 ounce) can whole black olives
1 (4 ounce) can sliced black olives
2 cups shredded Cheddar cheese
2 cups shredded mozzarella cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Cook and stir ground beef and Italian sausage in a skillet until browned and crumbly, 8 to 10 minutes. Transfer to a bowl using a slotted spoon. Drain excess grease, reserving 1 tablespoon in the skillet.
  • Cook and stir zucchini and yellow squash in the reserved grease until slightly softened, about 5 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Spread 3/4 cup pasta sauce in the bottom of a 9x11-inch casserole dish.
  • Pour remaining pasta sauce into a Dutch oven over medium heat. Stir in zucchini and yellow squash, whole olives, and sliced olives. Cook and stir until pasta sauce is heated through, about 10 minutes.
  • Layer half of the ground meat mixture, penne, hot pasta sauce, Cheddar cheese, and mozzarella cheese over the pasta sauce in the casserole dish. Repeat layers once more.
  • Bake in the preheated oven until cheese is melted and layers are heated through, about 30 minutes.

12 ounces whole-wheat or multigrain penne
2 tablespoons extra-virgin olive oil
2 cups diced peeled butternut squash (about 8 ounces)
Freshly ground pepper
12 ounces cremini mushrooms, trimmed and sliced
4 cloves garlic, minced
1 medium shallot or 1/2 small red onion, minced
1/4 to 1/2 teaspoon red pepper flakes
1 cup grated parmesan cheese (about 2 ounces)
3 tablespoons fresh oregano

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs; reserve 1 cup cooking water, then drain.
  • Meanwhile, heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the squash, 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until golden and tender, about 5 minutes. Transfer to a plate and set aside.
  • Add the remaining 1 tablespoon olive oil, the mushrooms, 1/4 teaspoon salt and a few grinds of pepper to the skillet. Cook, stirring occasionally, until lightly browned, about 5 minutes. Add the garlic, shallot and red pepper flakes. Cook, stirring, until the shallot softens, about 2 minutes.
  • Add the pasta, squash and 1/2 cup of the reserved pasta cooking water to the skillet. Cook, stirring, until heated through,1 to 2 minutes. Stir in 1/2 cup parmesan, then stir in enough of the remaining cooking water to loosen. Stir in the oregano and season with salt and pepper. Top with the remaining 1/2 cup parmesan.

  • Shred zucchini on the large holes of a box grater. (You should have about 4 cups.) Toss with 1/2 teaspoon salt in a colander set over a bowl. Let stand 10 minutes.

1 to 2 Tbsp vegetable or olive oil
1 large shallot minced
1 clove garlic minced
1/2 lb ground chuck
1/2 lb italian sausage, sweet, casings removed
1/2 medium red sweet bell pepper, diced
1/2 medium zucchini squash, diced
1 can(s) rosemary and basil flavored diced tomatoes
2 Tbsp tomato paste
2/3 to 1 can(s) 12 oz can v-8 juice (approximate)
2 to 3 Tbsp minced italian parsley
1 to 2 tsp each oregano, thyme, and marjoram, minced
1/4 tsp celery salt
1 to 2 tsp sugar
salt and pepper to taste
1/2 c roughly chopped green olives
2 to 3 oz grated asiago cheese for serving

Steps:

  • 1. In a large saute pan or skillet, heat oil and add minced shallot and garlic. Stir and cook until fragrant but not brown. Add ground chuck and Italian sausage, broken into small bite sized pieces and saute until browned. Add remaining ingredients except sugar, salt and pepper, and olives. Mix well, stir occasionally and let simmer on medium low for about 20 minutes. Add olives and taste to adjust seasoning with salt and pepper. Add as much or as little of the sugar as you like, per your preferences. Simmer until sauce is thick enough for your taste. (I like mine really thick)
  • 2. While sauce is simmering, cook the pasta according to package directions, drain and keep warm.
  • 3. To serve, place a portion of penne on the plate, top with 1/4 of the meat sauce and sprinkle with grated Asiago Cheese. Pass more cheese at the table if desired.

On the baking sheet, toss the whole cherry tomatoes and sliced zucchini and squash with 2 tablespoons olive oil. Sprinkle with salt and pepper and arrange in a single layer (or as close to a single layer as possible). Roast for about 25 minutes, tossing halfway, until the cherry tomatoes have burst and the squash is tender.
  • Meanwhile, bring a pot of salted water to boil and cook the pasta until al dente, according to package directions. Before draining the pasta, reserve about 1 cup of the pasta cooking water. Drain the pasta and return it to the pot.
  • While the pasta is hot, add the lemon juice, butter, goat cheese, garlic and red pepper flakes to the pot. Add about 1/4 cup of the reserved pasta cooking water and gently toss the pasta until the ingredients are evenly mixed together and the pasta is coated in a light sauce (add more reserved cooking water if the pasta seems dry).
  • Once the tomatoes and squash are out of the oven, add them to the pot along with all of the tomato juices. Gently toss once again to combine. Season to taste with salt (I added more than 1/2 teaspoon) and freshly ground pepper, then sprinkle chopped basil over the pasta and divide into individual serving bowls. Serve immediately.

Cook without moving until the zucchini coins are beginning to brown, 1-2 minutes. Carefully flip/stir once. When the coins are golden brown and very soft, remove to a large mixing bowl with a slotted spatula, shaking excess oil back into the pan. Repeat with the additional zucchini, adding more oil as necessary. It should take you 3 to 4 batches depending on the size of your pan.

  • Meanwhile, combine the basil, parsley, garlic, lemon zest and juice, 2 tablespoons olive oil and 1/2 teaspoon salt in a small food processor. Puree until smooth and add to the mixing bowl. Alternatively, you can finely chop everything by hand.
