TEXAS COWBOY COOKIES IN A JAR

Steps:
- Layer ingredients in order given in a 1- quart wide mouth canning jar.
- Press each layer firmly in place before adding next ingredient.
- Recipe for Cowboy Cookies (to be attached with the mix):.
- Empty jar of cookie mix into a large mixing bowl,.
- Blend mix together.
- Add: 1 stick butter melted, 1 large egg, slightly beaten, and 1 tsp vanilla.
- Mix until completely blended.
- Shape into balls the size of walnuts; place 2 inches apart on sprayed baking sheets.
- Bake at 350° for 11-13 minutes until edges are lightly browned.
- Cool 5 minutes on baking sheet.
- Remove cookies to racks to finish cooling.
- Makes 3 dozen cookies.

COWBOY COOKIES: A GIFT IN A JAR
A naturally-sweetened and whole grain cowboy cookie mix in a mason jar. Make the mix for a fun gift, or bake the cookies on the spot.

- In a small bowl, whisk together the flour, cinnamon, allspice, baking soda, and salt. Pour the mix into a quart-size mason jar (any quart-size, or slightly larger, wide mouth jar will work). I highly recommend using a funnel to pour the flour and remaining ingredients into the jar. Add the oats and sugar. Gently tap the bottom of the jar on a hard surface to compact the ingredients without compromising the individual layers. Add the cranberries and chopped pecans. Gently tap the bottom of the jar to compact the ingredients again. Finally, add the chocolate chips, tapping the jar if more room is needed. Place a lid on the jar and attach the gift tag instructions (download the printable gift tags, here).
- Preheat the oven to 350F. In a large bowl, using a hand-mixer, beat the softened (to room temperature) butter. Mix in the eggs and vanilla extract. Pour the contents of the mason jar into the bowl, and mix everything together. Scoop the dough onto a baking sheet (I use an ice cream scooper). Bake the cookies for 12-14 minutes.

COWGIRL COOKIES

- Stir all the dry ingredients in a large mixing bowl.
- Add egg, butter and vanilla
- Mix wet ingredients into dry ingredients. Use the back of a large spoon to work it all together. You may even need to use your hands to get everything incorporated.
- Then roll the cookie dough into 1-1/2 inch balls, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350 degree oven. I got about 26-28 cookies out of these.
COWGIRL COOKIES
These cookies are reminiscent of a white chunk macadamia nut cookie but better. Using slivered almonds instead of macadamia nuts is a more economical alternative. Follow baking directions. The cookies can be a little tricky to get right on the first pan. Unless the oven is preheated, they might not turn out. Note that these cookies don't bake well on airbake pans.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease two cookie sheets.
- Cream the margarine together with the white sugar and brown sugar in a mixing bowl until light and fluffy. Beat in the eggs, one at a time until thoroughly blended. Mix in the vanilla and almond extracts.
- Stir the flour, baking soda, salt, and rolled oats together in a mixing bowl until well blended. Stir the flour mixture into the sugar mixture. Mix in the coconut, white chocolate, and macadamia nuts until evenly blended. Drop by tablespoonfuls 1 inch apart on prepared cookie sheets.
- Bake in preheated oven until centers are set and edges are golden brown, about 15 minutes. Cool 3 minutes on baking sheets before removing to cool on a rack.

- Layer the ingredients in a 1 quart jar in the order given. Press each layer firmly in place before adding the next layer.
- Include a card with the following instructions: Cowboy Cookie Mix in a Jar 1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. 2. In a medium bowl, mix together 1/2 cup melted butter or margarine, 1 egg, and 1 teaspoon of vanilla. Stir in the entire contents of the jar. You may need to use your hands to finish mixing. Shape into walnut sized balls. Place 2 inches apart on prepared cookie sheets. 3. Bake for 11 to 13 minutes in the preheated oven. Transfer from cookie sheets to cool on wire racks.

- Wash and thoroughly dry a 1-quart wide-mouth canning jar.
- Layer the ingredients in the jar as listed above starting with the flour, salt, baking powder, sugar, brown sugar and then chocolate chips - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
- Secure the lid and decorate as desired; attach the instructions for making these cookies found below.
- CHOCOLATE CHIP COOKIE CUPCAKES GIFT TAG:
- Additional ingredients to be added by the recipient: 1 cup butter, softened, 3 eggs, 1/3 cup milk and 1 tsp vanilla extract.
- CHOCOLATE CHIP COOKIE CUPCAKES INSTRUCTIONS:
- Preheat oven to 375.
- In a large bowl, combine the butter, eggs, milk and extract; blend with electric mixer set on low speed.
