PENNE WITH SAUSAGE AND BROCCOLI RABE
Hot Italian sausage with broccoli rabe sauteed and served over penne. You'll love this dish so much and so will your family. Every time I make it I have to double the recipe.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink, reserving 1/2 cup of the water.
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir the sausage pieces, garlic, and red pepper flakes in the hot pan until the sausage is no longer pink on the outside, about 4 minutes. Stir in the broccoli rabe and 2 tablespoons Parmesan cheese. Pour in the reserved 1/2 cup of pasta boiling water. Cover, and cook until the sausage is no longer pink in the center and the broccoli rabe is tender, 5 to 7 minutes.
- Stir the cooked pasta, broccoli rabe, and 1/4 cup Parmesan cheese together until evenly mixed. Season to taste with salt and pepper to serve.

Steps:
- Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sausage and cook until browned, breaking up with a wooden spoon, about 8 minutes.
- Add the broccoli, red pepper flakes, salt, and pepper and stir to combine.
- Add the pasta and chicken stock and bring to a boil. Cook for 10-12 minutes, stirring constantly, until the liquid is absorbed and the pasta is tender. Add the Parmesan and stir to incorporate.
- Divide the pasta between serving bowls and garnish with more Parmesan.
- Enjoy!

- Cook pasta according to package directions, adding broccoli during last 5 minutes of cooking time.
- Drain, reserving 1 cup cooking water.
- Meanwhile, heat 12-inch nonstick skillet over meidum-high heat.
- Add sausage, cook, turning occasionally, until no longer pink, 20 minutes.
- Remove sausage.
- Discard all but 1 T fat from skillet.
- In same skillet over medium heat, cook garlic, stirring 1 minute.
- Add pasta mixture, sausage, reserved water, 1/2 t salt and pepper flakes, heat through, 2 minutes.
- Remove from heat; stir in cheese.
SAUSAGE AND PEPPER PENNE
This recipe is the best when made using farmer's sausage, but any sausage links will do. Add the red pepper flakes at the end for a little kick, or leave them out if spice isn't for you.

- 1. Bring a large pot of water to boil for the pasta. Add a dash of salt, and then the Penne. Add broccoli to the boiling water about 5 minutes before the pasta is done. Cook until both noodles & broccoli are tender. Drain.
- 2. Meanwhile, heat olive oil in pan over medium-high heat. Add crushed red pepper, garlic, peppers and sausage. Saute ingredients until heated through. Turn heat to low until pasta is done.
- 3. After you drain your pasta/broccoli, return it to your big pot. Pour sausage mixture over noodles and stir well to combine. Can serve with shredded cheese over the top!

- Heat a large pot of water to boiling. Once boiling liberally salt the water and then add the pasta-Cook the pasta to al dente (according to the package instructions). During the last two minutes of cooking, add the broccoli florets before draining, reserve 2 cups of the pasta water. Drain the pasta and broccoli, and then set aside.
- Return the pot to the stove and bring the heat to medium-high. Next, add the olive oil. Once hot, add the Italian sausage and break it up as it begins to cook. When the sausage is no longer pink, add the minced garlic and red pepper flakes. Cook until the sausage is browned.
- Reduce the heat to low, and then add the pasta and broccoli back to the pot.
- Next, add 1 1/2 cups of pasta water, grated cheese, and fresh lemon zest to the pot and stir until everything is well combined. The pasta water will help to create a thin sauce that coats the pasta. If you need to, feel free to add the additional half cup of pasta water to create more sauce.
- Serve the pasta with additional grated cheese, red pepper flakes, and fresh lemon zest on top.

PENNE WITH BROCCOLI RABE AND SAUSAGE
It's the combination of bitter broccoli rabe and hot sausage that makes this one of the greatest Italian-American dishes. My mother began making this when my Uncle Joe became a butcher and could provide an unlimited supply of his own handmade pork-and-fennel sausages. It's still one of my favorites of Mama's dishes. Here I use whole-wheat penne and low-fat turkey sausage-but the rest I left just like Mama's.

- Bring a large pot of lightly salted water to a boil. Add the pasta and cook according to the package directions, about 9 minutes. During the last 2 minutes of cooking, add the broccoli rabe. Stir, and continue to cook until both pasta and broccoli rabe are tender. Drain.
- While the pasta is cooking, heat a very large nonstick pan over medium-high heat. Add the sausage and break it up with a wooden spoon. Cook until it is golden brown and just cooked through, about 5 minutes. Transfer the sausage to a colander and set it aside to drain.
- Wipe the pan out lightly and return it to medium-low heat. Add the sliced garlic and cook until it is fragrant and just beginning to turn golden, about 1 minute. Add the crushed red pepper and the chicken broth, and bring to a simmer. Add the cooked pasta and broccoli rabe, and allow the mixture to simmer for about 1 minute to release some of the starch from the pasta and thicken the sauce. Pour the pasta mixture into a large bowl, and toss it with the cooked sausage and the cheese. Season the pasta with salt and pepper to taste, and serve.
