CREAMY MUSHROOM MEATLOAF
This technique keeps the meatloaf moist, while fortifying the sauce with its flavorful drippings. Regardless, this technique will work with just about any meatloaf recipe out there.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Melt butter in an oven-safe skillet over medium-high heat. Stir in mushrooms and a pinch of salt; cook and stir until mushrooms begin to brown, about 5 minutes.
- Stir in fresh rosemary. Add flour and stir to coat the mushrooms; cook and stir for about 3 minutes.
- Whisk in beef broth, 1/2 cup at a time, whisking constantly to prevent lumps.
- Turn heat to high and bring the sauce to a simmer. Simmer a few minutes until sauce starts to thicken. Season with salt and pepper to taste.
- Remove from heat and stir in heavy cream.
- Slide prepared meatloaf into the sauce. Spoon sauce over the top of the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Remove pan from the oven and gently remove meatloaf to a serving platter.
- Skim off any extra fat from the surface of the sauce.
- Bring the sauce to a boil over medium-high heat to reduce until thick, about 5 minutes.

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Combine the meatloaf mix, mushrooms, breadcrumbs, provolone, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.
- Stir together the brown sugar, remaining 1/4 cup ketchup and remaining 1 teaspoon Worcestershire in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

- For the loaf: Over a gas burner or under an electric broiler, char the eggplants until the skin is black, turning as needed to cook all sides evenly. Wrap in foil and set aside to steam for 20 minutes. Remove from the foil and gently brush the skin off or rinse under warm water.
- Preheat oven to 400 degrees F.
- Pulse the walnuts in a food processor until finely ground. Transfer to a large bowl. Pulse the eggplant, tofu, and mushrooms into small pieces. Add mixture to the walnuts along with the remaining loaf ingredients. Mix together until evenly combined. Transfer the mixture into a 1 1/2-quart loaf pan or casserole dish and bake for 1 hour.

Once I varied the ingredients a little bit, it turned out awesome.if you have a Magic Bullet (60 bucks at Wal-mart, use it to make bread crumbs instead of tearing, the bread, it comes out a lot nicer. - Preheat oven to 350*F.
- chop mushroom and onion to approximately 1/4 inch pieces.
- If you are using RAW onion heat the onion in the olive oil over medium heat until the onion is soft/tender. let cool.
- In large mixing bowl add milk, egg, parsley, Worcestershire sauce, salt, and pepper together then beat well.
- Next add the bread and blend into the mix.
- Then add the beef, cooled onions, mushrooms, and garlic and blend that in as well (I just use the same fork I blended the egg with to blend everything together).

- Preheat the oven to 375°F.
- Spray a lined baking sheet with the cooking spray.
- In a large bowl, combine the beef, pork, onion, breadcrumbs, ½ cup tomato sauce, eggs, Worcestershire sauce, 2 tbsp balsamic vinegar, thyme, parsley, cheese, salt, and pepper.
- Mix all the ingredients with clean hands until fully mixed.
- Rinse a loaf pan (8" x 4") with water and then pack the meat mixture into the wet pan.
- Invert the pan over the greased baking sheet and gently transfer onto the sheet.

MUSHROOM SWISS MEATLOAF

- Preheat the oven to 350 1.
- In a fry pan, begin to sauté the mushrooms in the butter, over med high heat. Add salt to help draw out the water from the mushrooms. The goal here is to remove as much liquid from the mushrooms as possible. Half the way through sautéing the mushrooms, add the onions.
- Add the garlic. Careful not to add the garlic at the beginning as it may burn and become bitter.
- When the mushrooms have wilted and reduced, remove from the pan and allow to cool.
- Prepare the gravy mix according to the package directions and set aside.
- In a large bowl, combine the hamburger, eggs, and panko. Mix REALLY well.
- Add the ½ of the cooled mushroom and onion mix.
- Pack the meatloaf mix into an 8x8 cake pan lined with parchment paper. (or choose any other baking dish you prefer. You can use a loaf pan, but keep in mind to adjust the cooking time as it will be considerably thicker and take longer to roast.) Pack the mixture in, and then turn it out onto a parchment lined baking sheet to hold its shape.
- Bake the meatloaf for approximately 1 hour. Be sure to check the temperature with a thermometer, as the cooking time may need to be adjusted according to the thickness of the loaf. Always be safe and cook the loaf to an internal temperature of 160F.
- 15 minutes before the cooking time is complete, take the remaining mushroom and onion mixture and mix it with 2 - 3 tablespoons of the gravy mixture. The consistency should be thick, spreadable, but not runny.
- Spread this mixture over the top of the meatloaf evenly and then top that with the 4 - 5 slices of Swiss cheese. Overlap them to make them fit over the top of the loaf if you need to.
- Continue roasting the meatloaf until the cheese has melted.
- Remove from the oven and let rest 5 minutes. Slice to serve and use the remaining prepared gravy to top the meatloaf.

- Place the butter in a frying pan over medium-high heat; add in the thyme sprigs.
- When the pan is hot and the butter has melted, add in the mushrooms.
- Sauté until browned and until the mushrooms have given off their water; season with salt and pepper.
- Set aside to cool and discard the thyme sprigs.
- Preheat your oven to 375.
- In a large mixing bowl pour some Luke warm water over the bread slices and let the bread soak in the water; leave enough water to cover the bread.
- After the bread has completely softened and absorbed the water, drain the water out of the bowl and gently squeeze the excess water out of the bread.
- When you're left with soaked bread only, add the onion, ground beef, egg, garlic, Dijon mustard, the 1 tsp of salt and the ½ tsp of pepper to the bowl; mix well using your hand, stop mixing when everything has come together smoothly.
- When the meat mixture has come together, mix in the mushrooms.
- Transfer to a standard-sized, nonstick loaf pan.
- Bake for 45 minutes, until the meat is cooked through.
- Once out of the oven, drain off the excess fat and liquid.
- Turn the heat on the oven to 425 and then return the pan to the oven for another 5 minutes, just to create a yummy crunchy crust.
- Serve immediately or at room temperature.

- In a large bowl combine the eggs, milk, onion, garlic, tomato paste, balsamic vinegar, and Worcestershire sauce. Next, stir in the breadcrumbs, parmesan cheese, and Italian seasoning. Stir until just combined. Add the ground beef and, using your hands, combine everything together just until the breadcrumb mixture is well combined with the beef. Form the beef mixture into a loaf and press it into a 1.5-quart loaf pan. Bake it at 375 degrees for 45 minutes to 1 hour or until the internal temperature reads 165 degrees. Remove it from the oven and let it rest for at least five to ten minutes before slicing and serving.
- To make the sauce, melt four tablespoons of the butter in a large pan over medium heat. Add the quartered mushrooms and let them cook until they are golden brown, about ten minutes. Pour in 1/4 cup of the balsamic vinegar and let it boil until the liquid has evaporated. Remove the mushrooms from the pan and set aside.
- In that same pan, add 2 tablespoons of butter and let it melt. Ad the chopped mushrooms and let them cook in the butter for a few minutes. Add the beef stock and bring it all to a boil. Lower the heat and let it simmer for about 20-30 minutes until the beef stock is thick enough to lightly coat the back of a spoon. Turn off the heat and add the parsley and cream. Check for seasoning and add salt and pepper to taste (about 1/2 teaspoon of salt and 1/4 teaspoon of pepper to start).
