PEKING DUCK

I have made this recipe and it is delicious. It can be served with plum sauce as well as a fruit sauce. This is actually a short-cut version but it is fantastic.

1 (4 pound) whole duck, dressed
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground white pepper
⅛ teaspoon ground cloves
3 tablespoons soy sauce
1 tablespoon honey
1 orange, sliced in rounds
1 tablespoon chopped fresh parsley, for garnish
5 green onions
½ cup plum jam
1 ½ teaspoons sugar
1 ½ teaspoons distilled white vinegar
¼ cup finely chopped chutney

Steps:

  • Rinse the duck inside and out, and pat dry. Cut off tail and discard. In a small bowl, mix together the cinnamon, ginger, nutmeg, white pepper and cloves. Sprinkle one teaspoon of the mixture into the cavity of the duck. Stir one tablespoon of the soy sauce into the remaining spice mixture and rub evenly over the entire outside of the bird. Cut one of the green onions in half and tuck inside the cavity. Cover and refrigerate the bird for at least 2 hours, or overnight.
  • Place duck breast side up on a rack in a big enough wok or pot and steam for an hour adding a little more water, if necessary, as it evaporates. Lift duck with two large spoons, and drain juices and green onion.
  • Preheat the oven to 375 degrees F (190 degrees C). Place duck breast side up in a roasting pan and prick skin all over using a fork.
  • Roast for 30 minutes in the preheated oven. While the duck is roasting, mix together the remaining 2 tablespoons of soy sauce and honey. After 30 minutes, brush the honey mixture onto the duck and return it to the oven. Turn the heat up to 500 degrees F (260 degrees C). Roast for 5 minutes, or until the skin is richly browned. Do not allow the skin to char.
  • Prepare the duck sauce by mixing the plum jam with the sugar, vinegar and chutney in a small serving bowl. Chop remaining green onions and place them into a separate bowl. Place whole duck onto a serving platter and garnish with orange slices and fresh parsley. Use plum sauce and onions for dipping.

A classic recipe for honeyed Peking duck, serve with Chinese pancakes, spring onions and hoisin sauce for a mouthwatering main course

1.6-1.8kg duck , fresh or thawed thoroughly if frozen
juice of 1 lemon
3 tbsp clear honey
3 tbsp dark soy sauce
150ml Shaohsing rice wine or dry Sherry
20 shop-bought Chinese pancakes
spring onions , sliced into matchsticks
hoisin sauce

Steps:

  • Place all the honey syrup ingredients in a large pan with 1.2 litres water and bring to the boil. Turn the heat to low and simmer for about 20 mins.
  • Meanwhile, rinse the duck well, blot it completely dry with kitchen paper, then put it on a rack in a roasting tin. Using a ladle, pour the syrup over the duck several times until the skin is completely coated on all sides. Leave the duck to dry out, uncovered, in the fridge overnight. When the duck has dried, the skin should feel like parchment paper.
  • Heat oven to 240C/220C fan/gas 9. Sit the duck breast-side up on the rack in the roasting tin. Add 150ml water to the tin to prevent the fat from spattering, then roast in the oven for 15 mins. Reduce the heat to 180C/160C fan/gas 4 and continue to roast for 1 hr 10 mins.
  • Remove the duck from the oven and let it sit for at least 10 mins before you carve it. Using a cleaver or a sharp knife, cut the skin and meat into pieces and arrange them on a warm serving platter. Or, if you prefer, shred the meat using two forks.
  • Serve at once with the pancakes, spring onions and a bowl of hoisin sauce.

It seems that there are several versions of this recipe floating around. I have the clipping from Heloise's column side by side with a hand written recipe card with some variations. I've had both recipes for many years. Here's the versions from the recipe card. I've always made it this way and it's delicious. This is a great way to prepare the less expensive cuts of beef. Mixing two different cuts of beef imparts a blend of flavors that is very tasty.

3 -5 lbs beef (use two different cuts such as chuck, boiling beef, brisket, etc.)
garlic, and
onion, slivers
1 cup vinegar
2 -3 tablespoons peanut oil
2 cups coffee, brewed strongly
1/2 cup gin (or whisky)
salt and pepper

Steps:

  • Take 2 cuts of beef and make deep slits in the meat.
  • Insert slivers of garlic and onions.
  • Marinate beef in 1 cup vinegar for 24 - 48 hours.
  • When ready to cook, discard the vinegar.
  • Brown in hot oil until nearly burned on both sides.
  • Pour 2 cups of coffee over the beef, add 2 cups of water and cover.
  • Cook slowly at a simmer for 6 hours.
  • Do not add any seasonings until the last 20 minutes , then add salt and pepper.
  • 1/2 cup of gin or whisky may be added to the boiling mixture.
  • Additional water may be needed while cooking.
  • (Although this was originally a stove top method of cooking, it certainly could be cooked in a crock pot after having been browned.).

Found this in a Heloise column. It was requested as a reprint from a recipe originally printed over 40 years ago. This roast beef is marinated and cooked in coffee! I love unusual sounding recipes. Might want to consider decaf!

5 lbs roast beef (3-5 lbs.)
garlic, slivers
onion, slivers
1 cup cider vinegar (or white vinegar)
2 cups strong brewed coffee
2 cups water
salt and pepper

Steps:

  • With a sharp knife, cut slits all the way through the roast and insert slivers of onions and garlic.
  • Put the meat into a bowl and slowly pour the vinegar over it so that it runs down the sides into the slits.
  • Cover with plastic wrap and refrigerate for 24-48 hours.
  • When ready to cook, pour the vinegar off.
  • Place the meat in a heavy dutch oven and brown in oil until very dark on all sides.
  • Pour the 2 cups of brewed coffee over the meat and then add 2 cups of water.
  • Cover and cook slowly for approximately 6 hours on top of the stove.
  • You may need to add more water at some point, so check it once in a while and add only a small amount of water at a time.
  • Season well, but do not add the salt and pepper until about 20 minutes before serving.

One 5 to 6-pound whole duck
Sea salt
Freshly ground white pepper
6 tablespoons honey
4 tablespoons Chinese five-spice powder
2 tablespoons dark soy sauce
2 tablespoons brown sugar
1 tablespoon cornstarch
6 tablespoons hoisin sauce
6 tablespoons superfine sugar
2 tablespoons sesame oil
1 tablespoon dark soy sauce
1 package Chinese/Mandarin-style pancakes, to serve
3 scallions, sliced into long thin strips, for garnish
1 cucumber, cored and sliced into long thin strips, for garnish

Steps:

  • For the duck: Prick the duck all over with a small knife or fork. Carefully pour hot water over the duck to rinse. Discard the hot water. Place the duck on a rack in a roasting pan and dry all over by patting it with paper towels. Sprinkle the duck with salt and pepper and leave it in the roasting pan until ready to cook.
  • In a small bowl, mix together the honey, 6 tablespoons water, five-spice, soy sauce and brown sugar. Brush the duck all over, inside and out. Let dry for about 10 minutes and then brush again. Repeat this process until you have used all but 4 to 5 tablespoons of the glaze (reserve this glaze). Ideally, let the glaze marinate on the duck overnight, leaving it uncovered in the fridge.
  • Preheat the oven to 350 degrees F. Place the duck in the oven and cook for 45 minutes. Flip the duck over, baste with the reserved glaze and cook until the skin is crisp and golden brown, another 45 minutes. Make sure you check halfway through that it is not getting too dark. If it is getting too dark before half the cook time is up, turn your heat down and lower the rack in the oven. When the duck is cooked, remove from the oven and let rest while you make your sauce.
  • For the sauce: In a small bowl, mix the cornstarch with 1 tablespoon cold water and set aside. Next, heat a pan or wok over medium heat and add the hoisin, sugar, sesame oil and soy sauce. When the sauce starts to bubble slightly, add the cornstarch mixture and stir well to thicken. Set aside and let cool. Carve and slice some duck. Place a teaspoon of the sauce in the center of each pancake, add a couple slices of duck, garnish with the scallions and cucumbers and serve immediately.

EASY PEKING PORK ROAST

1/2 cup hoisin sauce
3 teaspoons catsup
2 teaspoons brown sugar
2 teaspoons salt
1/2 teaspoon Chinese five spice powder
1 teaspoon garlic, minced
1 -2 lb boneless pork roast

Steps:

  • Add everything except the roast to a small mixing bowl.
  • Spread a generous layer of the sauce on all sides of the roast. Reserve the rest of the sauce for later.
  • Marinate for at least 1 hour.
  • Preheat oven to 350 degrees. Place the roast in a small casserole dish and loosely cover with foil.
  • With the remaining sauce baste the roast ever 20 - 30 minutes for 2 hours.

1 chicken (3 1/2 to 4 pounds), preferably free-range
1 1/2 teaspoons honey
1 tablespoon soy sauce
1/2 teaspoon Tabasco sauce

Steps:

  • Place a pot containing 3 quarts of water over high heat. When the water comes to a boil, lower the chicken into the water (it should be completely immersed). Cook the chicken for about a total of 10 minutes. (It will take about 5 minutes for the water to return to the boil, and the chicken should cook for an additional 4 or 5 minutes at a gentle boil.)
  • Drain the chicken, and place it on a rack, uncovered, in the refrigerator for 5 to 6 hours, or overnight. The skin should be somewhat dry at this point. (The drier the skin, the crisper it will be after cooking.)
  • At cooking time, combine the honey, soy sauce and Tabasco sauce in a small bowl, and brush the mixture on all sides of the chicken. Place the chicken, breast side up, on a wire rack in a shallow roasting pan, and roast it in a 425-degree oven for 20 minutes, or until nicely browned on top.
  • Turn the chicken over (breast side down), return it to the rack, and place the pan back in the oven for 30 minutes. Turn the chicken over again, and cook it, breast side up, for an additional 10 minutes, for a total cooking time of 1 hour.
  • Let the chicken stand at room temperature for 10 minutes before carving and serving

When creating this recipe, I was thinking about the crispy Peking ducks that hang in the windows of Chinese restaurants, and how hungry they make you feel. We're going to recreate that tasty skin on the outside of our turkey, as well as the flavors that go with it: a little sweet, a little salty, nice and crunchy. (Note: plan ahead to spend two days on the brining process.)

2 1/2 gallons water, plus more to cover the turkey
4 cloves garlic
1 4-inch piece of ginger
2 dried Thai chilies
1 stalk lemongrass
1 orange
2 cups salt
2 cups sugar
1 cup soy sauce
1 cup sweet/dark soy sauce
15 pounds fresh turkey, rinsed
1 bulb fennel, including stalks, fronds removed
2 Spanish onions
4 apples, Honey Crisp or Pink Lady
1 2-inch piece of ginger
1 pound unsalted butter, softened
2 tablespoons sweet/dark soy sauce

Steps:

  • For the brine-2 days in advance: Roughly cut up the orange, lemongrass, and ginger into pieces. Smash garlic. Bring water to a boil and add garlic, ginger, chilies, lemongrass, orange, salt, sugar, soy sauce, and sweet soy sauce. Let it simmer until sugar and salt dissolve, about 10 minutes. Then remove from heat and refrigerate overnight.
  • For brining the turkey-1 day in advance: Place turkey and turkey neck into the chilled brine. Add more water, enough to cover the turkey. Cover with lid and refrigerate, 24 hours.
  • For the turkey: Preheat oven to 325 degrees F. Remove turkey from the brine and place it on a sheet tray lined with paper towels; allow it to dry and come to room temperature, 1 hour. Meanwhile, prepare the aromatics to be cooked with the turkey. Roughly chop the fennel with stems, onions, apples and ginger. Place aromatics around the turkey and inside the cavity. Next, make a compound butter by combining butter and sweet soy sauce. Rub a quarter of the butter all over the turkey. Discard the thermometer probe that comes with the turkey and replace it with a kitchen thermometer in the same spot or in the deepest part of the turkey. Roast the turkey to 160 degrees F, about 3 hours. (Note: it will continue to cook after it comes out of the oven.)
  • As the turkey cooks, baste it with more compound butter every 20-30 minutes.
  • When the kitchen thermometer in the turkey reads 160 degrees F, remove it from the oven and let it rest. The temperature will continue to rise slowly as it rests outside the oven. Let the turkey rest for 30 minutes before slicing and serving.

  • Preheat oven to 450°. Place a half size baking pan into the oven for 20 minutes.
  • Place the roast duck onto a cutting broad and hand shredded into pieces.
  • Place the pizza crust onto a flat surface. Brush some plum hoisin sauce onto the crust and top with cheese, parsley leaves, and shredded duck meat, sliced onion and tomatoes and lightly with cheese.
  • Place onto the hot baking pan and into the oven. About 15 minutes or until the pizza is golden brown.
  • Slice and serve hot.
